CHICKEN MARINADE

Chicken Marinade image

The absolute BEST chicken marinade. Quick, healthy and perfect for grilling or baking chicken. Juicy, flavorful chicken every time!

Provided by Erin Clarke / Well Plated

Categories     Dinner

Time 30m

Number Of Ingredients 10

1 ¾ pounds boneless skinless chicken breasts, thighs, or tenders*
6 garlic cloves (minced or grated (about 2 tablespoons))
Juice and zest of 1 medium lemon (about 1 teaspoon zest and 1/4 cup juice)
2 tablespoons extra virgin olive oil
2 tablespoons low sodium soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • If making chicken breasts, place them on a cutting board, cover with plastic wrap, and with a meat mallet or rolling pin, pound into an even thickness. (If using tenders or thighs, you can skip the pounding).
  • With a fork, poke holes all over the chicken (this will allow the marinade to absorb).
  • In a large ziptop bag, combine the garlic, lemon zest and juice, olive oil, soy sauce, Worcestershire sauce, thyme, oregano, salt, and pepper.
  • Add the chicken. Seal the bag, removing as much excess air as possible.
  • "Squish" the bag to coat the chicken, then place the bag on a plate or inside a shallow baking dish to guard against leaks.
  • Marinate the chicken at room temperature for 15 to 30 minutes (the longer the better), or refrigerate for up to 12 hours (I find about 5 to 6 hours is ideal-since this is a small amount of lemon juice, you can push to 24 hours if absolutely necessary). Do not let marinade for longer, or the meat will start to break down. Let the chicken stand at room temperature for 15 minutes prior to cooking.
  • When ready to cook: Preheat your grill to medium high (425 to 450 degrees F) or preheat your oven to 425 degrees F. Remove the chicken from the marinade, shaking off any excess.
  • To grill: cook chicken over high heat until charred in spots and the internal temperature reaches 160 to 165 degrees F on an instant read thermometer, flipping halfway through, about 8 to 12 minutes total for breasts or thighs or 4 to 8 minutes for tenders. Do not overcook!
  • To bake: Arrange the chicken in a single layer in a foil- or parchment-lined baking dish large enough to hold it comfortably without the chicken touching. Bake the chicken until it reaches 160 F to 165 degrees F on an instant read thermometer inserted at the thickest part. Don't overcook! For breasts you will need about 14 to 16 minutes (for small/medium breasts that are about 6 to 7 ounces), 16 to 20 minutes (for medium/large breasts that are 8 to 10 ounces), or 20 to 25 minutes (for larger breasts). Bake thighs or tenders for 15 to 20 minutes.
  • Remove the chicken to a plate and cover. Let rest for at least 5 minutes. Serve!

So prep time is shorter and meal low in carbs and keto diet friendly. If you are watching diet then this is The chicken dinner for you. If you don't have air fryer, don't worry. Simply marinate chicken as descried in Recipe Card and then bake in the oven. Announcement I have decided to share all my air fryer recipes on the blog. Check back every Wednesday for a new recipe. Today's recipe is first into Air Fryer Recipe Wednesday series. This will become your go-to air fryer chicken dinner. You will love the flavors! So let's make moist and juicy, air fryer chicken breast today! Air Fryer Chicken BreastCooking moist and juicy chicken breast in air fryer, in matter of minutes, is one of the Top reason why I use my air fryer every day. For this recipe, I marinate chicken breast (boneless and skinless) in Greek style marinate of lemon, herbs and garlic. That's it. Once marinated, cook chicken in air fryer. Read on to know more tips and details. What Do You Need to Make Moist Chicken Breast in Air Fryer?Ingredients to make moist chicken breast in air fryer are easy to find pantry staples. Here is what you need to make marinate for chicken: Olive oilLemon JuiceGarlicHerbs - Oregano & CuminPaprikaSalt and PepperMarinade helps to tenderize chicken and infuse with delicious herb, garlic and lemon flavor. To make chicken in air fryer, I start with marinating the chicken. Either leave chicken in marinade to marinate for at-least 20-30 minutes or refrigerate until ready to use (up-to overnight)Cooking Moist Chicken Breast in Air FryerMy experience with air fryer has taught me three important things to note while cooking perfectly moist chicken breast in air fryer. i.e. Preheat Air Fryer - This ensures even cooking from the start. Chicken cook golden browns from outside and juicy inside.Adjust the timings as per the side/make and model of air fryer. (more on this ahead)Flip Chicken Breast half way through cooking. This ensure that chicken cooks evenly. Also gives good idea of how long it will take to chicken to be fully done. (very important to avoid dry chicken breast)I used Ninja Foodi Max XL Air Fryer (5.5 quart) and cooked boneless skinless chicken breast for this recipe. As shown in pictures above, process of cooking is very simple:Marinate Chicken Breast for at-least 30 minutes.Preheat air fryer and place marinated breast on air fryer rack. Cook 5 minutes.Flip after 5 minutes and add seasoned beans.Cook additional five minutes or until chicken is cooked through. If cooking beans, make sure to stir twice (every 2 mins) for even cooking. Air Fryer Timings for Cooking Chicken BreastTime to cook chicken breast in air fryer vary based on two things:Size of Chicken Breast. For example, when air fried at 375 degrees Fahrenheit, smaller chicken breasts will be ready in 10 minutes where as large chicken breasts will take 12-14 minutes.Size of Air Fryer. For example, if an air fryer is bigger in size (i.e. more space to circulate hot air), it will cook faster than smaller. So to ensure proper cooking, always preheat air fryer for 3 minutes. After first 5 minutes of cooking, flip chicken and then cook 5 minutes, then on keep an eye and check every 2 minutes for doneness. Air fryer makes cooking fun and fast! I've been using it more than my pressure cooker. (which says a lot) If you are still thinking to buy an air fryer, I can tell you that it's a worth investment. The time I've saved by cooking dinner in air fryer has already paid off my investment (plus few folds). If you have an air fryer recipe in mind that I should share on the blog? Leave a message below and let me know.Happy Air Frying!

  • Italian chicken marinade. While a generic bottle of Italian dressing would probably be the easiest way to marinate chicken (yes, really), making an Italian marinade is much easier than you think!
  • Teriyaki marinade. No need to use a teriyaki sauce saturated with sodium! This homemade teriyaki marinade is a great way to get that delicious flavor without all the salt.
  • Honey mustard marinade. Compared to these other marinades, this honey mustard marinade will probably be the thickest one to make. However, the mustard and honey create a delicious coating around the chicken that tastes absolutely delectable after you cook it.
  • Cilantro lime marinade. If you're not the kind of person who hates cilantro, you're in luck! This cilantro lime marinade will give your chicken that extra cilantro flavor you know and love.
  • Fajita marinade. Looking to give your chicken fajitas an extra kick of flavor? Have the chicken sit in this fajita marinade for a bit before cooking up those fajitas.
  • Asian honey marinade. There's just something about mixing salty soy sauce and sweet honey that tastes so good! This Asian honey marinade is great for making chicken to go with a vegetable fried rice—even better than ordering takeout!
  • Jalapeño garlic marinade. Who loves spicy food? Because this marinade is for you! While this chicken marinade does have jalapeños in it, the spicy flavor actually isn't overpowering after cooking the chicken.
  • Nashville hot marinade. Was the jalapeño garlic not spicy enough for you? Well, this chicken marinade will give you a swift kick in the pants. Named after famous spicy Nashville Hot fried chicken sandwiches, this marinade will leave even those who love spicy food with steam coming out of their ears.
