ULTIMATE GREEK BURGERS

Ultimate Greek Burgers image

The amount of flavor these Greek Burgers pack is simply out of this world! Juicy, succulent and mega flavorful, these burgers are a total showstopper!

Provided by Kimberly Killebrew

Categories     Main Course

Time 20m

Number Of Ingredients 16

1 pound ground meat (your choice: beef, pork, lamb, chicken or turkey)
1/4 cup finely chopped red onion
1/4 cup chopped fresh parsley
3 tablespoons pine nuts
1/4 cup sun-dried tomatoes in oil (drained and chopped)
3 cloves garlic (minced)
1/4 cup crumbled feta cheese
2 1/2 tablespoons Homemade Greek Seasoning
1/2 teaspoon salt
2 cups arugula leaves
1/2 cup Homemade Tzatziki Sauce
Sliced tomatoes
Sliced red onions
Extra crumbled feta cheese
4 hamburger buns (lightly toasted)
homemade hamburger buns ((click link for recipe))

Steps:

  • Combine the meat, red onion, parsley, pine nuts, sun-dried tomatoes, garlic, feta cheese, salt and Greek seasoning in a mixing bowl. Work with your fingers until the mixture is thoroughly combined. Form into 4 patties. Grill or pan fry over medium-high heat for 2-3 minutes on each side or according to desired doneness (is using poultry or pork, make sure it's thoroughly cooked through). If you're cooking them on the stovetop, I like to use the Lodge Cast Iron Grill Pan to get those pretty grill marks.
  • Arrange some arugula leaves on the bottoms of each hamburger bun and place the patties on top. Top with tomatoes, red onions, tzatziki sauce, and crumbled feta cheese. Place the top bun on each burger and serve immediately with extra tzatziki sauce.

Provided by Joanna Cismaru

Categories     Dinner     Lunch     Main Course

Time 25m

Number Of Ingredients 16

1 1/2 pound ground lamb
1/4 cup fresh mint (chopped)
1/4 cup fresh dill (chopped)
1/2 cup Kalamata olives (chopped)
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground corriander
1/2 teaspoon salt
1/2 teaspoon pepper
4 burger buns
1 cup baby arugula
1/2 cup tzatziki sauce
1/4 cup feta cheese (crumbled)
2 medium tomatoes (sliced)
1/2 English cucumber (sliced)
1 small red onion (sliced)

Steps:

  • Prepare your grill for cooking over high direct heat.
  • In a medium bowl combine all the lamb burger patties ingredients together and mix everything together until everything is well incorporated. Divide the meat in 4 and form into burger patties.
  • Place the patties on the grill and cook for about 5 minutes per side. DO NOT press on the patties while cooking. 2 Minutes before the patties are done cooking, add the burger buns to the grill and grill them for about 30 seconds.
  • Remove everything from the grill and assemble the burgers. Start with adding some baby arugula to the bottom of the bun, then the burger patty, followed by a couple tbsp of tzatziki sauce, some crumbled feta cheese, tomato slices, cucumber slices and red onion slices. If you prefer you could add more tzatziki sauce to the top bun.
  • Serve immediately.

GREEK LAMB BURGERS

Greek Lamb Burgers image

Do something different on burger night...go Greek! These Greek lamb burgers are juicy, flavorful and super easy to make. The secret is in the meat mixture, combining aromatics with spices like oregano, earthy cumin, and paprika, plus a generous does of fresh mint and parsley. Unexpected, yet super homey and familiar! Looking for sides and salads to serve along? Check the post above.

Provided by Suzy Karadsheh

Categories     Entree

Time 30m

Number Of Ingredients 19

2 lb ground lamb Or a combination of lamb and beef (see cook's tip #1)
1 small red onion, grated
2 garlic cloves, minced
1 cup chopped fresh parsley
10 mint leaves, chopped
2 ½ tsp dry oregano
2 tsp ground cumin
½ tsp paprika
½ tsp cayenne pepper, optional
Kosher salt and black pepper
Extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
Warm Greek pita bread or buns
Homemade Tztaziki sauce
Sliced tomatoes
Sliced Green bell pepper
Sliced cucumbers
Sliced red onions
Pitted Kalamata olives, sliced
Crumbled feta

Steps:

  • Heat an outdoor gas grill or an indoor griddle to medium (if working with an indoor griddle or skillet, you can just heat it once you prepare the meat mixture).
  • Add the ground lamb (or mix of lamb and beef) to a mixing bowl. Add grated onions, garlic, fresh herbs, oregano, cumin, paprika and cayenne. Season with kosher salt and pepper. Add a generous drizzle of extra virgin olive oil, and mix until everything is well combined.
  • Divide the meat mixture into 8 equal balls. Using both hands, work meat into smooth spheres, then lightly press to form into patties. Arrange the patties on a large tray or dish, and with the tip of your thumb, press lightly to form a shallow, somewhat wide, depression into the center of each patty. (see cook's tip #2 below) Cover and refrigerate, if you have the time.
  • Lightly oil the grill grates (or indoor griddle) and arrange the burger patties on top. Grill over medium heat, covered, for 3 to 5 minutes on each side, turning once midway through cooking (internal temperature for a medium burger should register 160 degrees F. Adjust cooking time according to your desired doneness.)
  • Allow the lamb burgers to rest for 5 to 10 minutes before serving. Serve in pita pockets (or buns), with tztaziki sauce, tomatoes, cucumbers, peppers, onions. If you like add kalamata olives and a sprinkle of feta.

GREEK TURKEY BURGERS

Greek Turkey Burgers image

These Greek Turkey Burgers, mixed with Kalamata olives, feta, and spinach, combine all my favorite Greek flavors and can be served with or without the bun.

Provided by Gina

Categories     Dinner     Lunch

Time 30m

Number Of Ingredients 9

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
  • Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.
  • Cook for an additional minute, then place the entire skillet in the oven to cook until the internal temperature is 165°F, 9 to 11 minutes.
  • You can also bake them on a baking sheet lined with parchment paper or aluminum foil for 8 to 10 minutes.
  • Enjoy these as a burger with a toasted whole wheat bun, butter lettuce, cucumber slices, thin red onion slices (optional), sliced tomato, and a little Greek yogurt instead of mayo. Or pair a patty with salad, rice, quinoa, or even roasted vegetables!

Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
  • Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
  • To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

  • To make the burgers: combine the beef, feta, oregano, half of the grated garlic, and black pepper in a large mixing bowl. Use your hands to gently combine the ingredients. Form into four patties that are the same diameter as your rolls — the patties should be slightly thicker at the edges with a slight indentation in the middle. Let the burgers rest while you prepare the tzatziki.
  • To prepare the tzatziki: Peel your cucumber and grate it using the coarse side of a box grater (alternately, you can shred it using a vegetable peeler). In a small dish, combine the yogurt, cucumber, 1 remaining garlic, and dill. Season to taste with salt. Cover and refrigerate until ready to serve.
  • Grill the burgers over a medium flame for approximately 5 minutes on each side (you can also cook them on the stovetop in a pan set over medium heat) or until they are cooked to your desired level of doneness.

  • To prepare this Greek bifteki recipe, add in a large bowl the minced beef along with the rest of the ingredients and mix thoroughly with your hands. If the mixture is too sticky add some more breadcrumbs (or some water if it is to dry), till the mix is solid. If you have the time, it is better to knead the mixture for about 10 minutes, until all the ingredients combine. Alternatively, you can mix it using an electric mixer, with the dough hook at low speed.
  • When done, put the mixture for the burgers (bifteki) in the fridge to rest for about 10 minutes, whilst preheating the oven to 200C.
  • Knead the mixture in flat round burgers. Place the biftekia on a large baking tray and cook in the oven for 18 minutes, flipping the burgers, mid-through cooking time. Top each bifteki with a slice of tomato and a small block of feta cheese and bake further for 7 minutes.
  • Serve the biftekia, while still hot with a drizzle of extra virgin olive oil and sprinkle a pinch of dried oregano. Enjoy!

  • Combine the bread pieces and milk in a medium bowl. Mash with a fork until a paste forms. Add the shallots, garlic, mint, oregano, salt, and pepper; mix well. Add the lamb, then use your hands to mix until well combined. Form the meat mixture into 6 oval-shaped patties about ½-inch thick.
  • Oil the grilling grates. Grill the patties, covered, until nicely browned on the first side, 2 to 4 minutes. Flip the burgers and cook for a few minutes more until desired doneness is reached. Place burgers on a tray and cover with foil while you warm pita rounds on the grill. Assemble the burgers and pass toppings and tzatziki sauce alongside.
  • Note: There are two types of pita bread: pita pockets and pocketless pitas. You can use either for this recipe. For pita pockets, be sure they are at least 6 inches wide. Trim off the top ¼ of each round and stuff the burgers and toppings inside. For pocketless pitas, serve burgers open-faced or, if pitas are large enough, wrap them around burgers.
