9 cups shredded cabbage
1 can (20 ounces) pineapple tidbits, drained
1-1/2 cups mayonnaise
3/4 cup white vinegar
1/2 cup sugar
3/4 teaspoon salt
3/4 teaspoon celery seed
3 cups miniature marshmallows
1-1/2 cups dried cranberries

Steps:

  • In a large bowl, combine cabbage and pineapple. In a small bowl, combine the mayonnaise, vinegar, sugar, salt and celery seed. Pour into cabbage mixture; toss to coat. Cover and refrigerate for 2 hours. , Fold in the marshmallows and cranberries 30 minutes before serving.

8 ounce can crushed pineapple, (drained)
14 ounce bag classic coleslaw
½ cup red onion (diced)
½ cup mayonnaise
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Add slaw mix, pineapple, and onion. Mix well and set aside.
  • In a separate bowl, mix mayo, brown sugar, vinegar, salt, and pepper.
  • Add mixture to coleslaw mix. Mix well.
  • Refrigerate for at least 2 hours and mix well before serving.

1 tablespoon ranch salad dressing fat free
1/4 teaspoon salt
1/4 teaspoon dry mustard
dash black pepper
1/4 head cabbage green, shredded (about 2 cups)
1 (20-ounce) can pineapple chunk drained
1/2 cup miniature marshmallow
1 1/2 teaspoons lemon juice
paprika

Steps:

  • Mix sour cream, mayonnaise, salad dressing, salt, mustard, and pepper. Toss with cabbage. Then blend in pineapple, marshmallows, and lemon juice. Top with paprika. This delicious coleslaw may serve as both a fruit and a vegetable choice at a meal. A sandwich with whole-grain bread and lean meat (protein), along with a cool glass of water would complete this quick, delicious meal. *Shredding Note: Place chopped cabbage in blender. Cover with water. Then cover with lid and blend on high drain completely. Or purchase cabbage that is already shredded as a time saver. **If you are diabetic, hypoglycemic, or highly resistant to fat loss, you may choose to leave out the marshmallows.

4 green onions, chopped

Steps:

This is a light refreshing dessert we always had growing up on the 3 holidays. (Thanksgiving, Christmas and Easter) My mom & my aunts would always stay up late cutting up the marshmallows, laughing & talking. I make mine more simply and use the mini marshmallows. :)mmmmmmm Its pretty simple too.

1 (16 ounce) can crushed pineapple in juice
1 (16 ounce) bag mini marshmallows
1 (8 ounce) container Cool Whip

Steps:

  • In a large serving bowl empty bag of marshmallows.
  • Open pineapple and pour over marshmallows, and stir well.
  • Let soak, stirring every couple of hours, to let pineapple juice soak into marshmallows.
  • About an hour before serving, add cool whip, stir well, and place back in refrigerator for flavors to blend.

3 cups shredded cabbage
1 cup chopped canned pineapple, drained
1 cup diced apple
1 cup miniature marshmallow
1/2 cup chopped celery

1 apple, sliced as garnish
1 teaspoon lemon juice, to coat apple

Steps:

  • Line a salad bowl with whole leaves of lettuce. Combine cabbage, pineapple, diced apples, marshmallows, celery and mayonnaise in a mixing bowl until mayonnaise coats all ingredients. Transfer salad to lettuce-lined bowl.
  • Toss apple slices in lemon juice and garnish the slaw with the apple slices.
