2 tablespoons canola oil, divided
4 cups uncooked elbow macaroni
2 pounds ground turkey
1 medium onion, chopped
4 cans (8 ounces each) tomato sauce
1 cup water
1 cup salsa
1 envelope taco seasoning
2 cups shredded cheddar cheese

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add pasta; cook and stir 2-3 minutes or until pasta is toasted. Transfer to a 5-qt. slow cooker. In same skillet, heat remaining oil over medium-high heat. Add turkey and onion; cook 6-8 minutes or until meat is no longer pink, breaking into crumbles., Transfer to slow cooker. Stir in tomato sauce, water, salsa and taco seasoning. Cook, covered, 3-4 hours or until pasta is tender., Remove insert; top with cheese. Let stand, covered, 15 minutes.

Picadillo, a Latin American classic, is typically made with beef, but juicy turkey stands in well here. Scented with cumin and chili powder, the filling for these crunchy tacos is sweet and savory.

2 tablespoons corn oil
1 medium onion, chopped (1 cup)
2 cloves garlic, chopped
1/2 to 1 jalapeno pepper, stemmed, seeded and minced
1 1/2 tablespoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
3/4 cup chopped canned tomatoes
3/4 pound ground turkey
1/3 cup chicken broth
1/4 cup fresh cilantro leaves, roughly chopped
Oil, for frying
12 (5-inch) corn tortillas, preferably white, or prepared taco shells
1/4 head romaine or iceberg, thinly sliced
3 ripe medium tomatoes, cored and diced
1 to 2 Hass avocados, diced
1 1/2 cups shredded Cheddar or Monterey Jack cheese
Sour cream, for garnish

Steps:

  • Put the oil, onions, garlic, jalapeno, and spices in a medium skillet, season with salt and cook over medium to medium-low heat, stirring occasionally until tender, about 10 minutes. Increase the heat to medium-high, add the tomatoes and boil to thicken, about 2 minutes. Stir in the turkey and chicken broth, adjust the heat so the mixture simmers and cook until the turkey is cooked through and the mixture thickens but is not dry, about 12 minutes. Stir in cilantro and season with salt and pepper, to taste. Transfer to a serving bowl and cover.
  • To make the taco shells: Pour enough frying oil into a small skillet so it's about 3/4 of an inch deep; heat over medium to medium-high. Holding 1 edge of a tortilla with tongs, lay the other half in the oil, keeping it flat with a spatula. Cook until crisp, about 30 seconds to 1 minute. Flip the tortilla over and repeat with the other half, holding the first side of the tortilla at an angle to make an open shell, cook for about 1 minute more. Transfer to a paper towel-lined plate to drain.
  • Put the fixings and meat in individual bowls and the taco shells on a platter. Serve, encouraging your diners to build their own tacos, with meat in the shell and the fixings on top.

1 tablespoon olive, canola or vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 pound lean ground turkey
1 red bell pepper, seeded and diced
2 tablespoons taco seasoning
1 teaspoon kosher salt
1/4 cup chopped cilantro
1 lime, juiced
1 small head butter or iceberg lettuce, chopped
One 16-ounce can black beans, drained and rinsed
2 small tomatoes, diced
1 cup shredded Mexican blend cheese
One 12-ounce bag corn tortilla chips
Sour cream, salsa, guacamole and your favorite hot sauce, for serving, optional

Steps:

  • Heat a large skillet over medium-high heat. Add the oil and cook the onions and garlic, stirring, for 3 minutes. Add the ground turkey and cook, breaking it up into pieces with a wooden spoon, for 3 minutes.
  • Add the bell pepper, taco seasoning and salt and cook, stirring, until the turkey is cooked through, 2 to 3 minutes. Stir in the cilantro and lime juice and set aside.
  • To serve, divide the lettuce among individual bowls, then top each with the turkey mixture, black beans, cheese, tomatoes and chips. Top the taco bowls with sour cream, salsa, guacamole and hot sauce. Alternatively, place all of the toppings in separate bowls for a fun DIY meal!

One Pot Cheesy Turkey Taco Chili Mac recipe is so easy and protein packed! Made with taco seasoning, beans, and pasta shells topped with cheese is a favorite in my home! Bonus points for dirtying only one pot!

1 1/2 tsp garlic powder
1 1/2 tsp cumin
1 tsp kosher salt
1 1/2 tsp chili powder
1 1/2 tsp paprika
1/2 tsp oregano
1.3 lb 93% lean ground turkey
1 medium onion (chopped)
3 cloves minced garlic
1 red bell pepper (chopped)
10 oz can rotel tomatoes with green chilies
14.5 oz can pink or red beans (drained)
8 oz tomato sauce
1/2 can (8 oz fat-free refried beans)
1 15 oz can reduced sodium chicken broth*
1 3/4 cups water
8 oz DeLallo Gluten Free shells
3/4 cup part-skim shredded sharp cheddar cheese*
2 tbsp fresh cilantro (chopped)
2 tbsp chopped scallions
*Check labels for gluten-free

Steps:

  • Heat a large Dutch oven or pot with a fitted lid over medium-high heat and spray with oil, brown the turkey breaking it up with a wooden spoon as it cooks.
  • When cooked through, add the onions, garlic, pepper and taco seasoning; cook 2-3 minutes.
  • Add the canned tomatoes, beans, tomato sauce, refried beans, chicken broth and water.
  • Bring to a boil, cover and simmer about 15 minutes. Adjust salt to taste.
  • Stir in the uncooked pasta and simmer uncovered over medium heat until al dente, about 6 minutes or according to package directions.
  • Remove the pot from heat and top with the cheese, cover and let sit for about 2-3 minutes, until the cheese melts.
  • Serve immediately garnished with fresh cilantro and scallions.

Turkey Tacos image

Thinly sliced turkey, well-seasoned and pan-seared, makes an excellent quick taco filling. These actually bear more resemblance to authentic Mexican food than all those crisp ground beef-filled tacos. This recipe can be assembled quickly from things that are easy to keep in the house, but can be adapted to include leftovers in your refrigerator. If you have only pink beans, use them instead; add tomato slices, if you have them, or other pickled vegetables instead of the shallots.

1 pound turkey scallops
2 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
4 corn tortillas
1 cup refried black beans
1/4 cup red salsa
1/4 cup pickled shallots
1 avocado, sliced

Steps:

  • Combine turkey scallops in a mixing bowl with oil, salt and pepper. Heat the grill or dry cast-iron pan over high heat until smoking. Sear the turkey slices about 1 minute per side. Transfer to a cutting board. Chop into 1/2 inch strips and reserve in a bowl with the juices from the board.
  • To make tacos, toast the tortillas. For each serving, stack 2 tortillas and spread with a layer of black beans. Top with seared turkey strips, a tablespoon each of salsa and pickled shallots, and avocado slices. Roll and serve hot.
