WIENER SCHNITZEL (VEAL)

I know you'll find other recipes for this dish, but you owe it to yourself to try this GREAT recipe. IT'S THE GREATEST! It's also easy & very authentic!

2 (6 ounce) veal cutlets
wax paper
1/2 cup flour
salt & pepper
1 egg (beaten)
extra virgin olive oil (a drizzle)
1 cup cracker meal or 1 cup crushed corn flakes
butter (for frying)
1/8 teaspoon nutmeg
1 lemon (cut into 4 wedges)

Steps:

  • Cover work surface with a sheet of waxed paper.
  • Arrange cutlets with a few inches between them on paper.
  • Over the cutlets, top with a second sheet of waxed paper.
  • Pound cutlets out to 1/4-inch thickness using the bottom of a small heavy skillet or a rubber mallet.
  • If they are already 1/4 inch, then you don't have to pound them.
  • Heat a large skillet over medium heat. Set veal aside and set up 3 disposable pie tins or wide bowls and a plate in a row.
  • Place flour in 1 tin and season with salt and pepper.
  • In the 2nd tin place the beaten egg with a drizzle of oil and season with salt and pepper.
  • In the 3rd tin pour out about 1 cup of cracker meal or crushed corn flakes.
  • I use crushed corn flakes that are sold in a box in the supermarket already crushed.
  • Dredge the veal completely in flour.
  • Then coat the veal evenly with egg on both sides.
  • Gently press veal into the cracker meal or crushed corn flakes and rest the coated cutlets on the plate.
  • Add a drizzle of oil and 1 1/2 tablespoons of butter to the skillet.
  • When the butter foams, add veal and cook 3 to 4 minutes on each side until golden brown all over.
  • Remove to a warm plate and sprinkle a little nutmeg over the hot schnitzels.
  • Garnish with the lemon wedges, as the lemon wedges are to be squeezed over the schnitzels before eating.

4 large (6 to 7 ounce) veal cutlets
Waxed paper
1 cup flour
Salt and pepper
2 eggs
A drizzle extra-virgin olive oil
1 cup cracker meal, found near bread crumbs or at fish counter in market
Butter, for frying
Whole nutmeg
Chopped fresh parsley, for garnish
1 lemon, cut into wedges

Steps:

  • Cover work surface with a sheet of waxed paper. Arrange cutlets with a few inches between them on paper. Top work surface with a second sheet of waxed paper. Pound cutlets out to 1/4-inch thick using the bottom of small heavy skillet or a rubber mallet.
  • Heat a large skillet over moderate heat.
  • Set veal aside and set up 3 disposable pie tins and a plate in a row. Place flour in 1 disposable tin and season with salt and pepper. In the second disposable tin, beat eggs with a drizzle of oil and season with salt. In the third disposable tin, pour out about 1 cup of cracker meal.
  • Bread veal in flour. Coat the veal evenly with egg on both sides. Gently press veal into cracker meal and rest coated cutlets on a plate. Add a drizzle of oil and 1 1/2 tablespoons butter to the skillet.
  • When butter foams, add 2 pieces of veal and cook 3 to 4 minutes on each side until golden brown all over. Remove to a warm plate and grate a little nutmeg over hot schnitzel. Repeat with remaining 2 veal cutlets. Garnish veal with parsley and serve with lemon wedges.

2 tablespoons olive oil, plus more, for sauteing
6 ounces chicken livers, coarsely chopped
1 clove minced garlic
6 (6-ounce) veal cutlets, pounded out to 1/8-inch thick pieces
Salt and pepper
Flour, for coating
4 ounces diced bacon
1 minced onion
2 cups sliced wild mushrooms
1 cup white wine
1/2 cup sour cream
2 bunches baby arugula, washed

Steps:

  • Heat olive oil in pan over medium heat and saute chicken livers and garlic. Let livers cool and chop up into medium pieces.
  • Divide evenly among veal and place in the center of each piece. Roll veal around livers and tie. Season with salt and pepper and lightly dredge in flour. Heat up 1 tablespoon of olive oil and brown schnitzel on all sides and set aside.
  • Brown bacon in same pan and add onions cooking until translucent. Add mushrooms and cook over low heat. Pour off any excess fat and add wine. Simmer for 2 minutes and whisk in sour cream. Season with salt and pepper and place schnitzel in sauce. Simmer for 1 to 2 minutes and serve on a bed of baby arugula

1 1/2 lbs veal scallops
1 1/2 tablespoons brandy
1 1/2 cups beef stock
1 1/2 cups chicken stock
1 1/2 cups whipping cream
1 3/4 cups blue cheese, crumbled
fresh parsley, chopped

Steps:

  • Melt butter in heavy large skillet over high heat.
  • Season veal with salt and pepper.
  • Working in batches, add veal to skillet and saute until just golden brown, about 2 minutes per side.
  • Transfer veal to platter.
  • Tent with foil to keep warm.
  • Add brandy to skillet.
  • Bring to boil, scraping up any browned bits.
  • Add both stocks.
  • Boil until liquid is reduced to generous 1 cup, about 10 minutes.
  • Add cream; boil until sauce is slightly thickened, about 12 minutes.
  • Reduce heat to medium-low.
  • Add cheese and whisk until melted.
  • Simmer until thickened to sauce consistency, about 8 minutes.
  • Season sauce with salt and pepper.
  • Spoon sauce over veal.
  • Sprinkle with parsley and serve.

I have read the other schnitzel recipes listed but none of them are made exactly the same as the way I was taught by a German GuestHouse (like a inn in Germany)Owner when we lived there 1975-1978. All the tradition schnitzels I ate while there were made with either veal or pork. Many Americans make it with Chicken Breasts. I make it most often that way as well since it is cheaper and tastes just as good. If using pork or veal cutlets use one in place of each chicken breast mentioned below.

1 boneless skinless chicken breast
1 well beaten egg
1/4 cup cold water
1 teaspoon black pepper
1 teaspoon salt
1/2 cup flour
1/2 cup plain breadcrumbs
1/4 cup cooking oil

Steps:

  • also requires: 2 large pieces of wax paper for each breast used 1 large baking pan or cooky sheet in a 200-250 degree oven for keeping meat hot while cooking successive pieces.
  • 1 piece of paper towel to put between layers of meat in the low hot oven to keep pieces from sticking together.
  • Place a piece of breast in between 2 large pieces of wax paper.
  • Using the smooth side of a meat tenderizer, pound until very thin.
  • (Turn over so that you can pound on both sides of the meat.) The breast will become very large and you will actually be able to get at least 2 large servings from each breast.
  • After pounding each piece of meat, place on a large serving plate without removing the wax paper and chill well in the refrigerator.
  • When ready to cook do the following-- Place the eggs in a glass pie pan with the water, salt, and pepper and mix well.
  • Place the flour in another container next to the seasoned eggs.
  • Place the bread crumbs in another container on the other side of the seasoned eggs.
  • Start heating up the cooking oil in a large frying pan on medium high heat.
  • DO NOT get oil too hot-- but hot enough so that it will cook the meat quickly without burning either the meat or the oil.
  • After removing the wax paper from each side of the meat, dip each piece of meat in the eggs, then the flour, then the eggs again, then the breadcrumbs.
  • Fry until golden brown on each side.
  • Place each piece of cooked meat in the oven using paper towel pieces to separate the pieces from each other.
  • When finished cooking serve with slices or wedges of fresh lemon.
  • NOTE** This meat dish is traditionally served with either pomme frits (french fries) or home fried potatoes and salad.
  • I find it is good with most side dishes.
  • It is such a favorite in our home that family members fight over the leftover pieces eating them cold right from the refrigerator.

  • Sprinkle veal with salt and pepper. Place the flour, eggs and bread crumbs in separate shallow bowls. Coat veal with flour, then dip in eggs and coat with crumbs., In a large skillet over medium heat, cook veal in butter for 2-3 minutes on each side or until no longer pink. Serve with lemon.
