DUMPLINGS (GLUTEN-FREE)
I've been meaning to try chicken and dumplings sometime but have been unable to find a good gluten-free recipe. It looks like this one might do the trick, but I haven't tried it yet. Posting here so I don't forget about it, found this recipe on a forum. We shall see.... The servings is a guess

Steps:
- Mix up the dumplings in the meantime in the following order: all dry ingredients in to your work bowl (this is easier with a mixer), stir to combine and work in some air.
- Add melted butter, stir. Next add milk, water, egg (previously beaten, please). Stir until dough comes together.
- Add pepper and sage and poppy seeds (or whatever seasonings float your boat).
- Once the pot of chicken bits and water has come to a boil, drop by rounded teaspoons (one from your kitchen drawer is fine) into the boiling liquid, making sure to keep newly dropped dumplings separated from older ones to prevent sticking and fusion. This gets a bit tricky as the pot gets full.
- When the pot fills, walk away for 15 minutes and come back and drop dumplings again until you run out of room (I had to do this three times). Simmer for 45 minutes or until the dumplings are done all the way through. The stock should be opaque now instead of clear.

- Make a batch of this dumpling dough and place it wrapped in cling film into the fridge to chill for 30 minutes. (Alternatively, you can use store-bought dumpling wrappers).
- Meanwhile, heat 1/2 tbsp of oil in a pan over medium heat, then add minced garlic, and ginger. Fry for about a minute, stirring frequently, then add in red pepper, zucchini, carrot, and shredded cabbage.
- Make the wrappers as described in the wrapper recipe, then add 2 teaspoons of the filling to the middle of a wrapper. Use a finger dipped in water to run along the edges of the wrapper.

- Filling: In a heated pan with 2 teaspoons oil, sauté carrot & ginger until fragrant, then add in mushrooms, bok choy & sauce. Season accordingly. Drain out as much liquid as you can.
- Dough: Mix all dry ingredients in a heatproof bowl until well combined. Pour in the hot water & quickly stir to combine (I used a pair of chopsticks). Once the mixture cools off a little but still warm, knead it into a soft dough. If the dough is too sticky, add more rice flour. Pinch out a 1inch ball & dust surface with rice flour. Flatten each ball with your palm & roll it to a round disc. Be gentle when rolling as the gluten-free wrapper is very fragile. Place 1 tablespoon of filling in the middle of wrapper & pleat to seal.
- To cook dumplings, potsticker style: Heat a non-stick pan with 3 teaspoons oil, then place dumplings in, slightly apart in one layer. Cook until the bottom is slightly browned, gluten-free wrapper takes longer to brown. Add about 1/2 cup [125g] hot water, be sure water covers at least 1/3rd of the height of the dumplings. Place a lid over, turn heat to low-medium, and cook until all water has been absorbed. Serve warm with chili oil dipping sauce.
