BORSCHT RECIPE (BEET SOUP)

2 tablespoons olive oil
4 red beets (½ inch diced (approx 1 ½ pounds))
2 carrots (½ inch diced)
1 large russet potato (peeled and ½ inch diced)
½ small green cabbage (shaved)
2 cloves garlic (minced)
4 cups vegetable broth
4 cups beef broth
2 tablespoons dill (fresh, minced)
2 tablespoons lemon juice (fresh)
1 teaspoon lemon zest
1 bay leaf
kosher salt (to taste)
black pepper (to taste)
sour cream (optional, for serving)

Steps:

  • Add olive oil to a soup pot and set over medium-high heat. When the oil is hot add in the beets, carrots, potatoes, and cabbage. Stir to combine.
  • Cook for 10 minutes to slightly soften the vegetables.
  • Add in the garlic and saute for 30 seconds or until fragrant.
  • Pour in the beef and the vegetable broth and add the bay leaf. Simmer for 20-25 minutes or until the beets and carrots are tender.
  • Discard bay leaf. Stir in the fresh dill, lemon juice, and lemon zest. Taste and season with the desired amount of kosher salt and black pepper.
  • Serve with a dollop of sour cream on top.

3 medium beets
2 tablespoons olive oil, plus more for drizzling
6 unpeeled garlic cloves
1 large leek, thinly sliced
1 teaspoon fresh thyme leaves
1 bay leaf
Coarse salt and pepper
2 tablespoons lemon juice

Steps:

  • Heat oven to 400 degrees. Drizzle beets with olive oil and roast in parchment-lined foil until tender, about 1 hour. Meanwhile, drizzle garlic cloves with oil and roast in separate foil packet, about 30 minutes. Unwrap beets, let cool, peel, and quarter. Squeeze garlic from skin. Set aside.
  • Heat 2 tablespoons olive oil in a pot over medium heat. Add leek and cook, stirring, until tender, 6 to 8 minutes. Add beets and garlic, thyme, bay leaf, and 3 cups water. Season with salt and pepper.
  • Bring to a boil, then reduce heat and simmer, 5 minutes. Discard bay leaf. Let cool slightly, then puree in a blender until smooth. Stir in lemon juice and adjust seasoning to taste.

1 ¼ pounds beets with greens attached
6 cups low-sodium chicken broth
2 leeks, white and light green parts only, chopped and washed
½ pound celery root, peeled and cut into 1/2-inch cubes
1 cup 1/2-inch cubed carrots
¼ pound parsnips, peeled and cut into 1/2-inch cubes
3 cups 1/2-inch cubed boiling potatoes
1 tablespoon white sugar
1 tablespoon lemon juice
1 ½ teaspoons salt
⅓ cup sour cream
¼ cup all-purpose flour
2 tablespoons chopped fresh dill, or to taste
6 hard-boiled eggs, quartered lengthwise

Steps:

  • Trim greens and stems from beets. Thoroughly wash and chop greens and stems. Peel and cut beets into 1/2-inch cubes.
  • Bring beets, chicken broth, leeks, celery root, carrots, and parsnips to a boil in a large pot. Add potatoes, reduce heat to medium-low, and simmer until vegetables are tender, 10 to 12 minutes. Stir beet greens and stems into soup and simmer until greens and stems are tender, about 5 minutes. Mix sugar, lemon juice, and salt into soup.
  • Stir sour cream and flour together in a bowl until smooth and thickened. Whisk 1 cup soup into sour cream mixture until smooth; pour sour cream mixture into soup and stir. Simmer soup until thickened slightly, about 1 minute. Add dill and remove pot from heat. Ladle soup into serving bowls and arrange 4 egg quarters in each bowl.

3 medium beets (peeled and grated)
4 Tbsp olive oil (divided)
8 cups chicken broth (+ 2 cups water)
3 medium yukon potatoes (peeled and sliced into bite-sized pieces)
2 carrots (peeled and thinly sliced)
2 celery ribs (trimmed and finely chopped)
1 small red bell pepper (finely chopped, optional)
1 medium onion (finely chopped)
4 Tbsp ketchup or 3 Tbsp tomato sauce
1 can white cannelini beans with their juice
2 bay leaves
2-3 Tbsp white vinegar (or to taste)
1 tsp sea salt (or to taste)
1/4 tsp black pepper (freshly ground)
1 large garlic clove (pressed)
3 Tbsp chopped dill

Steps:

  • Peel, grate and/or slice all vegetables (keeping sliced potatoes in cold water to prevent browning until ready to use then drain).
  • Heat a large soup pot (5 1/2 Qt or larger) over medium/high heat and add 2 Tbsp olive oil. Add grated beets and sauté 10 minutes, stirring occasionally until beets are softened.
  • Add 8 cups broth and 2 cups water. Add sliced potatoes and sliced carrots then cook for 10-15 minutes or until easily pierced with a fork.
  • While potatoes are cooking, place a large skillet over medium/high heat and add 2 Tbsp oil. Add chopped onion, celery and bell pepper. Saute stirring occasionally until softened and lightly golden (7-8 minutes). Add 4 Tbsp Ketchup and stir fry 30 seconds then transfer to the soup pot to continue cooking with the potatoes.
  • When potatoes and carrots reach desired softness, add 1 can of beans with their juice, 2 bay leaves, 2-3 Tbsp white vinegar, 1 tsp salt, 1/4 tsp black pepper, 1 pressed garlic clove, and 3 Tbsp chopped dill. Simmer for an additional 2-3 minutes and add more salt and vinegar to taste.

6 tablespoons (3/4 stick) pareve margarine
9 2 1/2-inch-diameter golden beets, peeled, cut into 1/2-inch cubes (8 to 9 cups), green tops reserved
4 1/2 cups chopped onions
4 teaspoons minced peeled fresh ginger
1 tablespoon finely grated lemon peel
6 cups (or more) low-salt chicken broth
2 to 3 tablespoons fresh lemon juice

Steps:

  • Melt margarine in large pot over medium heat. Add beets, onions, ginger, and lemon peel. Cover; cook 15 minutes, stirring occasionally. Add 6 cups broth and bring to boil. Cover; reduce heat and simmer until beets are very tender, 1 hour. Remove from heat; let stand 20 minutes.
  • Puree soup in blender in batches until smooth. Return puree to pot. Add 2 tablespoons lemon juice to soup and thin with more broth, if desired. Season with salt, pepper, and more lemon juice.
  • Slice enough beet greens to measure 3/4 cup. Microwave greens 1 minute to wilt; place in blender. Add 3/4 cup soup; puree greens until smooth. DO AHEAD: Can be made 1 day ahead. Cover soup and puree separately; chill. Rewarm both separately before using.
  • Ladle soup into bowls. Drizzle some of greens puree over soup and serve.

Borscht recipe for hearty and flavorful Russian soup that gets it's gorgeous color from fresh roasted beets. A classic beet soup recipe.

3 - 4 large beets
3 tablespoon olive oil
Kosher salt and pepper
1 medium onion (, chopped)
2 carrots (, chopped)
1 stalk celery (, chopped)
3 cups gold potatoes (, peeled and diced (about 2 1/2 ))
2 cloves garlic (, chopped)
6 cups chicken broth
1/2 teaspoon dried thyme
1/8 teaspoon allspice
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon sour cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the beets and put each beet on a separate square of aluminum foil; Use 1 tablespoon of the olive oil and drizzle a little bit over each beet. Season with a pinch of salt and pepper. Wrap the beets loosely with the foil.
  • Transfer the wrapped beets to a baking sheet and roast for 50-60 minutes.
  • Remove from the oven and let the beets cool so they're easier to handle.
  • When the beets have cooled, the skins peel off easily. Use a knife and slice off the tip of the beet and carefully pull the skins off.
  • Chop up the beets into 1/2-inch pieces and set aside.
  • In a large pot over medium heat, add the remaining 2 tablespoons of the olive oil. Put in the onions, carrots, celery and potatoes and cook, stirring until softened, about 10 minutes.
  • Add the garlic and cook for a minute more.
  • Add the chicken broth and the beets and simmer until beets are completely tender, about 10 minutes.
  • Add the thyme and the allspice and continue simmering for another 10 minutes.
  • Use an immersion blender to puree the soup. If you don't have an immersion blender, a regular blender will work just fine and puree in batches.
  • Blend until smooth, adding more broth if the puree is too thick.
  • Stir in the vinegar and honey and season with salt and pepper to taste.
  • Top with sour cream and serve.

My gf gave me this recipe - it's delicious!! I translated from French... hope it makes sense!! ;) The recipe asked for 1 potato but she replaces it with 3 carrots!! You can serve it cold (which she prefers) or hot (which I prefer). She also suggests to serve it with a piece of goat cheese (mmmm!). I used recipe #72861 to bake my beets - so easy that way!! :) I wouldn't add sugar next time - I guess it depends how sweet the beets are!!

10 cooked beets, diced
1 tablespoon butter or 1 tablespoon margarine
1 onion
1 celery rib
3 carrots
1 tablespoon sugar

  • Cut the vegetables in small pieces.
  • Melt butter in large saucepan. Add onion, celery and carrots (or potato) and sauté a few minutes.
  • Add sugar and vinegar. Mix and cook for about 1 minute.
  • Add the diced beets.
  • Add water or chicken bouillon until the liquid reaches over the vegetables (if you want a thicker soup, don't add too much liquid - if you want a lighter soup, add more!).
  • Add salt and pepper.

  • Process the soup in a blender or food processor.

2 small beets, peeled and diced

2 quarts vegetable stock
28 ounces diced tomatoes with juice
1 orange, juice and zest of, finely grated
salt & pepper

Steps:

  • Saute onions and garlic in oil until soft but not brown , over low heat.
  • Increase heat to medium high and add beets, carrots, celery, celery root and half the dill.
  • Saute until vegetables have released their liquid, dried and start to turn golden.
  • This takes about 20 minutes.
  • Add stock and tomatoes with their juice and bring to a boil.
  • Reduce heat and cook until vegetables are soft, which takes about 30 minutes.
  • Add orange zest and juice and remaining dill.
  • Season to taste.

4 large red beets, peeled and diced (roughly 1.5 lbs)
1 medium white potato, peeled and diced
4 cups chicken or vegetable broth

Sour cream or crème fraîche
Dill, fresh

Steps:

  • In a large pot on medium heat, warm the olive oil. Add onion and garlic and cook for 3-4 minutes until onions are soft and translucent.
  • Add beets and potatoes, stir to coat with the onion mixture.
  • Add broth, just enough to cover the beets and stir until well combined. (Only add enough broth to cover the vegetables, you may need more or less depending on the size of your beets, as you don't want a runny soup and you can always add more at the end if needed.)
  • Bring mixture to a boil, then reduce to a simmer and cook for 30 minutes until the beets are tender and can easily be pierced with a fork.
  • Once cooked, using an immersion blender or in batches using a bar blender, purée until smooth.
  • Once blended, season generously with additional salt and pepper to taste and serve immediately with a dollop of sour cream and a sprig of dill.
  • Any leftover soup can be cooled completely and stored in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.

1 onion, coarsely chopped
Coarse salt and freshly ground pepper
2 pounds beets, peeled and cut into 1-inch chunks
1 can (14 1/2 ounces) reduced-sodium chicken broth
1 to 3 teaspoons fresh lemon juice

Steps:

  • In a large Dutch oven or pot, heat oil over medium heat. Add onion. Season with salt; cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Add beets, broth, and enough water (4 to 5 cups) to cover. Bring to a boil; reduce heat to medium, and simmer until beets are tender, about 20 minutes.
  • Using a blender or an immersion blender, puree broth and vegetables until smooth. If using a blender, work in batches and fill only halfway, allowing heat to escape: Remove cap from hole in lid, cover lid firmly with a dish towel, and blend. Transfer to a clean pot as you work. Adjust soup's consistency with a little water if necessary. Season with salt, pepper, and lemon juice.

CREAMY ROASTED BEET SOUP

1 pound (about 3) beets, roasted, peeled and sliced
1 cup minced onion
3 tablespoons butter
4 cups chicken broth
1 fresh thyme or 1/2 teaspoon dried

2 to 3 tablespoons red wine vinegar
Lightly whipped cream and dill sprigs for garnish (optional)

Steps:

  • In a large saucepan set over moderate heat cook beets and onion in butter, stirring occasionally, for 5 minutes.   • In a large pot, heat oil over medium heat. Sauté onion, 5 minutes. Add garlic and ginger; cook, stirring often, 5 minutes. Add beets and 4 cups stock; bring to a boil, then reduce heat and simmer until beets are fork-tender, 20 minutes. With an immersion or regular blender, puree soup, adding remaining 1 cup stock as needed to reach desired consistency. Stir in milk, salt and pepper. This is how to make a Traditional Borscht Recipe. My mom's Ukrainian borscht can be made vegetarian or with beef and I share all the tips and variations to this beet soup! Borscht soup is made of red beets, onions, carrots, potatoes, dill, sour cream, and beef bones (or pork ribs.) Sometimes my mom will add kidney beans or cabbage, but I like it simple and it's still as delicious!

6 quarts water ((24 cups))
5 large potatoes ((2 lbs, peeled and cubed))

2 tbsp Vegeta seasoning
1 tbsp salt
1 tsp black pepper
4 cloves garlic
2 carrots
1 onion
15 oz tomato sauce
6 tbsp ketchup

Steps:

  • In a large pot, bring the water and meat to a boil. Skim off any dark foam and simmer for 1 1/2 hours over medium-low heat. (See notes for vegetarian borscht below.)
  • Meanwhile, sauté the onion and carrots until tender. Add the tomato sauce and ketchup and add this to the soup.
  • Add the potatoes, salt, pepper, bay leaves, and Vegeta seasoning to the soup. Simmer for 25 minutes. Stir in the beets* and garlic, then turn off the stove. (For raw beets see notes below.)

  • Heat a large soup pot (6 Qt) over medium high heat and add 2 Tbsp olive oil.
  • Add grated beets and sauté 10 minutes, stirring occasionally until beets are softened.
  • Add 8 cups broth and 2 cups water and bring to a boil. Add potatoes and carrots, simmering for 10-15 minutes until vegetables are tender.
  • While vegetables are simmering, put a large skillet over medium high heat and add 2 Tbsp oil.
  • Add chopped onion, celery and bell pepper. Sauté stirring occasionally until softened and lightly golden (7-8 minutes). Add 4 Tbsp Ketchup and stir fry for 30 seconds, then transfer contents of skillet to the soup pot.
  • When vegetables are adequately cooked, add the cannellini beans with their juice, bay leaves, vinegar, teaspoon salt, pepper, garlic, and chopped dill. Simmer for an additional 2-3 minutes.
  • Add more salt and vinegar to taste.

1 cup dried cannellini beans (or other small white beans)
6 large beets (about 2 pounds)
2 tablespoons olive oil (vegetable oil, or butter)
2 medium onions (halved and thinly sliced)
1 teaspoon salt (plus more to taste)
Optional: 3 cloves garlic (minced)
1 head green, Savoy, or Napa cabbage (cored and thinly sliced or shredded)
2 teaspoons caraway seeds
8 cups chicken broth (or beef or vegetable broth)
Optional: lemon juice (to taste)
Garnish: plain yogurt , sour cream, or crème fraîche
Garnish: fresh dill (chopped)

Steps:

  • Gather the ingredients.
  • Put beans in a large pot and add cold water to cover generously. Bring to a boil, cover, turn off heat, and let sit 1 hour.
  • Drain and return beans to pot. Cover again with cold water, bring to a boil, reduce heat to keep a simmer, and cook until beans are tender to the bite, about 20 minutes. Drain beans and set aside.
  • Meanwhile, preheat oven to 350 F. Wrap beets in a large sheet of aluminum foil, place on a baking sheet, and cook until tender when pierced with a fork, about 45 minutes. Let beets sit until cool enough to handle.
  • Peel beets (their skins should slip off easily after being roasted) and grate them on the large-hole side of a box grater. NOTE: Your fingers may get a little red, so wear gloves if you want to avoid stained hands. Set aside.
  • In a large pot over medium-high heat add oil, onions, and salt. Cook, stirring occasionally, until onions are soft, about 3 minutes.
  • Add garlic, if using, and cook until fragrant, about 1 minute.
  • Add cabbage, stir to combine, and cook, stirring occasionally, until cabbage wilts, 3 to 5 minutes.
  • Add caraway seeds and grated beets. Stir to combine.
  • Add broth and bring to a boil; reduce heat to maintain a steady simmer, add beans, and cook until vegetables are tender and flavors blend, 15 to 20 minutes. Add salt and lemon juice, if using, to taste. Serve hot, with a dollop of yogurt or sour cream and a sprinkle of dill, if you like.
