GREEN BEANS WITH PECANS, CRANBERRIES, & PARMESAN

Steps:
- 1. Preheat oven to 325 degrees F. Wash and drain green beans and snap off ends. Lay green beans in a pile on a large baking sheet.
- 2. In a small bowl, whisk together garlic, balsamic vinegar, olive oil, and black pepper with a fork. Drizzle vinaigrette over green beans and toss to coat them well. Season green beans with salt. Roast green beans in oven for 20-22 minutes, being sure to toss them around halfway through cooking.
- 3. While green beans are cooking, lightly toast pecan pieces in a small skillet over low heat for 5 minutes, shaking the skillet occasionally.
- 4. Remove baking sheet from oven and place green beans in a serving bowl. Top with chopped cranberries, toasted pecan pieces, and Parmesan cheese. Serve immediately.
MIXED GREENS WITH DRIED CRANBERRIES AND TOASTED PECANS
Steps:
- Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
- Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
- Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.

- Heat oven to 350°F with rack in middle.
- Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
- Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. Using a large slotted spoon and/or tongs, transfer beans to colander in ice water to stop cooking, then drain well and dry on towels.
- Heat butter in a 12- to 14-inch deep heavy skillet (preferably straight-sided) over moderately high heat until foam subsides, then add shallot and cook, stirring until pale golden, 2 to 3 minutes.
- Reduce heat to medium and stir in sugar until almost dissolved, then cook pecans, stirring, 1 minute.
- Add green beans, kosher salt, and pepper, and sauté beans, turning them with tongs, until heated through, 2 to 4 minutes. Transfer to a platter and serve.

- Cook beans in boiling water 4 minutes.
- Drain and plunge into ice water.
- Drain again and pat dry.
- In separate bowl, combine next six ingredients.
- Whisk to emulsify.
- Place beans in a shallow serving bowl.
- Sprinkle with pecans, onion, and feta.
- Just before serving, pour dressing over all and toss.

- Blanch green beans in a large stock pot of boiling water for 2 minutes. Drain and transfer beans to a large bowl of ice water. Set aside.
- Add pecans to food processor and process until finely ground (or crush in a plastic bag). Add remaining Pecan Honey Butter ingredients and pulse until well combined.
- Heat 1 tablespoon olive oil over medium heat in a large skillet. Add shallots and garlic and saute for 1 minute. Add beans and Pecan Honey Butter and continue to saute until beans are evenly coated in the butter and beans are cooked to desired crisp-tenderness.
- Stir in dried cranberries. Taste and season with plenty of additional freshly cracked salt and pepper to taste. Garnish with Feta if desired.
