SUNNY'S EASY BEEFY TEXAS CHILI

Steps:
- In a small bowl, mix the cumin, chile powder, oregano, pumpkin pie spice, 2 teaspoons salt and a few grinds of black pepper.
- In a large pot over medium heat, add the olive oil, beef cubes and half of the seasoning blend. Cook until the beef is browned on all sides but not cooked through, 5 to 7 minutes; remove with a slotted spoon to a plate. Add the onion, bell pepper, tomato paste, hot sauce, garlic and a pinch of salt to the pot. Cook, stirring, until everything turns a dark reddish brown, about 8 minutes.
- Add the ground beef and sprinkle over the remaining seasoning blend. Cook, stirring, until the beef is no longer pink, 5 to 7 minutes. Add the reserved beef chunks back to the pot along with the stock, wine or beer and cornmeal. Bring to a boil, then lower to a simmer and cook, partially covered and stirring occasionally, until the chili is thick and the liquid is reduced, 40 to 45 minutes.
- Spoon the chili into bowls and serve with sliced scallions, shredded cheese and tortilla chips.
BEEFY MANICOTTI
Steps:
- Crumble ground beef in skillet and brown gradually over medium heat. Drain and add to 1 jar of spaghetti sauce and set aside.
- Place manicotti noodles in large stockpot of boiling water. Boil until tender and remove from hot water and gently place into cold water until firm. Dry noodles on paper towel. Combine ricotta, 4 cups of mozzarella and basil in large bowl.
- Add 2 cups of spaghetti sauce to the bottom of 9x12 baking dish. To make filling shells easier, just split up the side, fill with cheese mixture, close and lay split side on bottom of pan. Continue until all shells are filled. Top with spaghetti sauce with ground beef until all shells are thoroughly covered. Sprinkle with parmesan cheese.
- Place in preheated 350 degrees F oven for approximately 10 minutes. Remove from oven and cover with 2 cups Kraft Shredded Mozzarella Cheese and return to oven. Bake for 15 minutes more, or until mozzarella is nicely golden brown.

BEEF AND CHEESE MANICOTTI

- Heat a heavy medium skillet over medium heat. Add 1 teaspoon of the olive oil, onion and ground beef. Season with salt and pepper. Saute until the meat browns and the onion is translucent, about 5 minutes. Remove from the heat, and cool.
- Brush 1 teaspoon of oil over a large baking sheet. Cook the manicotti in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 4 to 6 minutes. Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and cool.
- Meanwhile, combine the ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup Parmesan, and parsley. Add the garlic, salt, and pepper to taste, and mix. Stir the cooled meat mixture into the cheese mixture.
- Preheat the oven to 350 degrees F.
- Brush the remaining 2 teaspoons of oil over a 13 by 9 by 2-inch glass baking dish. Spoon 1 1/2 cups of the marinara sauce over the bottom of the prepared dish. Fill the manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over.
- Sprinkle the remaining 1 1/2 cups of mozzarella cheese, then the remaining 1/2 cup of Parmesan over the stuffed pasta. Dot entire dish with the butter pieces. Bake the manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30 to 35 minutes. Let the manicotti stand 5 minutes and serve.
BEEF-STUFFED MANICOTTI
Most manicotti recipes are made with cheese. My family has always enjoyed this one, because it's stuffed with meat.

Steps:
- Brown ground beef & drain.
- Cook manicotti using package directions.
- Do not drain. Run cold water over it until water in pan is cold; leave manicotti in water until needed.
- Meanwhile, combine ground beef, egg, mozzarella, bread, milk, salt & pepper. Stuff each manicotti shell. Place in greased 13x9x2" baking pan. Pour spaghetti sauce over top, cover with foil & bake in 350 degree oven for 50 minutes. (1 hour if made ahead & chilled.).

- Cook and drain manicotti as directed on package using minimum cooking time (cooking for the minimum time helps prevent the shells from tearing while filling).
- Meanwhile, in 10-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in pasta sauce.
- Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray.
- Squeeze thawed spinach to drain; spread on paper towels and pat dry. In medium bowl, mix spinach, cottage cheese, mushrooms, 1/3 cup Parmesan cheese, the nutmeg and pepper.

MANICOTTI ALLA ROMANA
This rich meat, spinach and cheese filled manicotti dish is covered with white and red sauces. I offer this on the catering menu at my catering company and it is the most popular for casual dinner parties. It's a bit of work but well worth the effort.

- Heat oil in a large skillet over medium heat. Saute onions until translucent. Saute garlic for 1 minute and stir in ground beef. Cook until well browned and crumbled. Season with salt and set aside to cool.
- Cook spinach according to package directions. Meanwhile, bring a large pot of lightly salted water to a boil. Add manicotti shells and parboil for half of the time recommended on the package. Drain and cover with cool water to stop the cooking process and prevent the shells from cracking.
- To the ground beef mixture add the cooked spinach and ricotta cheese. When the mixture is cool, add the beaten eggs. Spread 1/4 cup spaghetti sauce in the bottom of a 9x13 inch baking dish. Gently drain the manicotti shells and carefully stuff each one with the meat and cheese mixture; place shells in prepared dish. Lightly cover the dish with plastic wrap or a clean, damp towel to prevent shells from cracking.
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare the white sauce by melting the butter in a small saucepan over medium heat. Stir in flour and chicken bouillon. Increase heat to medium-high and cook, stirring constantly, until it begins to bubble. Stir in half and half and bring to a boil, stirring frequently. Cook for 1 minute, stirring constantly. Remove from heat and stir in parsley. Pour or ladle the sauce evenly over the stuffed shells.
- Stir the basil into the remaining spaghetti sauce. Carefully pour or ladle spaghetti sauce over the white sauce, trying to layer the sauces without mixing.
- Cover and bake for 40 minutes. Remove from oven, uncover and sprinkle with Parmesan cheese. Bake, uncovered, for 10 minutes more.

- Heat oil over medium heat and add celery and carrot. Cook, stirring occasionally, until softened, about 5 minutes. Add ground beef and salt and cook until no longer pink, about 10 minutes. Add tomatoes and marinara sauce and bring to a boil. Reduce to medium low and cook until thickened, about 45 minutes.
- Preheat oven to 350. Combine ricotta, 1 1/2 cups cheese, egg, parsley and rosemary. Divide filling among crepes, using 1/3 cup for each, covering 1/4 of crepe about 1 inch from end. Roll up from filling end.
- Spread 1/3 of sauce in a 12" x 9" baking dish. Top with 4 crepes, seam-side down. Top with 1/3 of sauce, then remaining crepes, sauce and 1/2 cup cheese. Cover with foil and bake until hot and bubbly, about 30 minutes.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package. Rinse with cold water; drain well.
- In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in tomato paste, taco seasoning mix and water. Cook over medium heat 5 to 10 minutes until hot and bubbly.
- In medium bowl, mix cream cheese, egg, sour cream, 1 1/2 cups of the cheese, the chiles and 2 tablespoons of the cilantro. Spoon about 3 tablespoons cheese mixture into each pasta shell. Spoon about 1 cup beef mixture into baking dish; top with filled shells and remaining beef mixture.
- Cover; bake 40 to 45 minutes or until hot. Uncover; sprinkle remaining 1 cup cheese over shells. Bake 5 minutes longer or until cheese is melted. Sprinkle with remaining 2 tablespoons cilantro.

- Preheat oven to 350 degrees. Cook manicotti shells as directed on package; drain.
- Meanwhile, add oil to a large skillet and saute onion and garlic until tender. Stir in chili and water. Bring to a boil; reduce heat and simmer 2 minutes.
- In a small bowl combine egg, cottage cheese and cheddar cheese. Stuff into manicotti shells.

- Prepare ground beef mixture. Heat skillet over medium heat with a drizzle of olive oil. Add onion, garlic and ground beef and season with a little salt and pepper. Cook, breaking up ground beef, until onion is translucent and beef is crumbled and browned and cooked through, about 7-8 minutes. Set aside to cool.
- Cook manicotti. Drizzle a little olive oil all over a large baking sheet to prevent sticking. Bring a large pot of salted water to boil and cook pasta tubes until softened but still firm, about 6 minutes. Remove to oiled baking sheet to cool.
- Prepare filling. Combine ricotta, 2 cups of shredded mozzarella cheese, ½ cup grated Parmesan and parsley. Add salt and pepper to taste and mix well. Stir the cooled meat mixture into the cheese mixture and combine well.
- Preheat oven to 350ºDrizzle a couple more teaspoons of olive oil into bottom of 9" by 13" glass baking dish. Spread 1½ cups marinara over bottom of prepared dish. Fill the manicotti tubes with the cheese-meat mixture and arrange the stuffed pasta in one layer in the prepared dish. Spoon the remaining 1½ cups marinara over the top.
