Many people consider this type of strawberry ice cream recipe a 'hack' or a 'cheat' because we're skipping the more time-consuming and sometimes temperamental egg-custard step; but even if I didn't want to save time I'd still prefer this method. To be clear, I'm only speaking about this specific flavor of ice cream. For deep, dark chocolate, or butter pecan, I'll take the classic French-style every time. But, for sweet, juicy strawberries, I'm not a big fan of the egginess you get with the traditional method.

12 ounces fresh strawberries, hulled
¾ cup white sugar
2 cups heavy whipping cream
1 cup milk
1 teaspoon vanilla extract
1 tiny pinch salt
2 drops red food coloring

Steps:

  • Place strawberries and sugar in a blender and pulse until pureed; steep for 10 minutes.
  • Pour cream, milk, vanilla extract, and salt into strawberry mixture; blend until smooth and slightly thickened, 10 to 15 seconds. Whisk red food color into cream mixture.
  • Pour strawberry mixture into the container of an ice cream maker and freeze according to the manufacturer's instructions. Transfer ice cream to a sealable container, cover the ice cream with plastic wrap, seal the container, and freeze, 2 hours to overnight.
  • Process in an ice cream maker until thick. Immediately transfer to a sealable container, cover with plastic wrap, cover the bowl with a lid and freeze for 2 hours to overnight.

My husband used to think he didn't like strawberry ice cream, and come to find out it's because he'd never had "real" strawberry ice cream before ... only the bright pink stuff out of a box. But once I made him the real deal his mind was forever changed, and I promise you'll be "won over" by this simple recipe as well.

3/4 cup heavy cream (organic recommended)
3/4 cup milk (organic recommended)
2 - 2 ½ tablespoons pure maple syrup (depending on how sweet you like it...start with 2 and only add more if necessary)
14 strawberries (plus more for garnish)

Steps:

  • Combine the cream, milk and maple syrup in a large glass measuring cup (with a pour spout).
  • Remove the stems/leaves from the strawberries and crush them. I used our mini-chopper to mash them up and it worked great. A simple potato masher might do the trick as well.
  • If you have a Cuisinart ice cream maker like us just turn on the machine and pour in both the cream/syrup mixture and the crushed strawberries. After about 15 - 20 minutes the ice cream will look really "thick" and ready when it's done. If you are using a different machine be sure to follow manufacturer directions for making your ice cream.

8 ounces cream cheese
1/2 cup sugar (if using sugar or syrup packed frozen berries, omit the sugar in the recipe)
1 tablespoon lemon juice
1/2 teaspoon vanilla
3/4 cup fresh pureed strawberry (if using sugar or syrup packed frozen berries, omit the sugar in the recipe)
1 cup half-and-half

Steps:

  • Blend all ingredients until smooth. Chill ingredients for about 1 hour, or until cold.
  • Turn on ice cream machine and set it to chill the freezing/mixing bowl for 5 minutes.
  • Spoon the cooled mixture into the freezing/mixing bowl of machine. Set the freezing timer to the 30 minute maximum setting. Push start button.
  • When timer rings, spoon ice cream into dishes and enjoy.

1 1/2 cups strawberries, hulled and diced
2 Tbsp honey
1/2 cup granulated sugar
1 tsp lemon juice
1 cup heavy whipping cream
1/2 cup half and half
1 tsp vanilla extract

Steps:

  • In a large bowl, mix strawberries, honey, sugar, and lemon juice. Allow to sit 15-20 minutes, or until the strawberries have released their juices.
  • Mash the mixture with a potato masher, fork, or pastry cutter until there are no longer any large strawberry pieces (if you prefer a smooth ice cream, use a blender or food processor instead*).
  • To the strawberries, mix heavy cream, half and half, and vanilla extract. Stir just until combined.
  • Pour the mixture into your ice cream maker, and follow your manufacturer's instructions (mine took about 15-20 minutes to churn). You can eat the ice cream soft-serve, or freeze it in an airtight container for 3-4 hours to thicken it up slightly. For best results, allow the ice cream to sit at room temperature for about 5-10 minutes to soften before serving.

2 cups chopped strawberries
1 cup sugar ((divided))
2 cups heavy cream
1 cup whole milk
1/2 tsp vanilla extract
1 dash salt

Steps:

  • Freeze ice cream bowl of a 2QT ice cream maker overnight.
  • Mix chopped strawberries with 1/2 cup sugar in a medium sized bowl. Allow to set for about 15 minutes so strawberries release their juices.
  • Blend strawberries up in a blender or food processor.
  • In a large bowl combine strawberry mixture with heavy cream, whole milk, vanilla extract, salt and remaining sugar. Set aside.
  • Pour strawberry cream mixture into prepared ice cream maker. Allow to run according to manufactures instructions (Mine is about 30 minutes.)
  • Serve now for soft serve ice cream.
  • For scoopable ice cream, scoop ice cream into a bread loaf pan and cover with plastic wrap. Place in the freezer for 6 hours up to overnight.

I really wanted some ice cream, but trying to loose weight. So I came up with this and it's very good. Ice "cream" without all the fat and guilt but plenty of taste! You could use any frozen fruit you have on hand and I think it would work just as good. Check out the nutritional values on this treat. Makes one large treat or two smaller ones.

1 1/4 cups frozen strawberries (must be frozen)
1/3 cup nonfat dry milk powder
1/8-1/4 cup water
2 teaspoons sugar, to taste (I use splenda)
1/2 teaspoon vanilla (optional)

Steps:

  • Place frozen strawberries in food chopper (I use the ultimate chopper, even chops the berry seeds) and chop until the strawberries are frozen crystals.
  • Add powdered milk, 2-3 tablespoons of water, sugar and vanilla.
  • Pulse chopper until mixture is consistency of ice cream.
  • You may have to add little more of the water and pulse more to get the consistency you like.
  • This is more the consistency of "soft serve" ice cream rather than the hard kind in the freezer section.
