CHERRY-DATE SKILLET COOKIES
This has been handed down through three generations in my family. It's an easy no-bake cookie that adds color to a Christmas plate.

Steps:
- Melt butter in a 10-inch skillet over medium heat. Add sugar and dates to the melted butter; stir until the sugar dissolves, 1 to 2 minutes.
- Remove skillet from heat, add egg, and stir quickly to prevent the egg from cooking.
- Return skillet to medium heat and cook, stirring constantly, until the mixture comes to a full boil, 4 to 6 minutes; cook at a boil, stirring constantly, for 1 minute more.
- Remove skillet from heat. Stir rice cereal, chopped coconut, chopped cherries, and vanilla extract with the dates. Let mixture cool until beginning to firm, about 10 minutes.
- Shape mixture by rounded teaspoonful into 1-inch balls. Spread flaked coconut into a wide, shallow dish and roll balls in the coconut to coat.

SKILLET DATE COOKIES
I got this recipe from my younger sister. She calls them Angel Cookies. The filling will be very hot so use caution when rolling. I love them because they are sweet, chewy and crispy.

- 1. Melt butter in large heavy skillet. Add chopped dates and sugar. Cook over low heat, stirring frequently for about 4-5 minutes, until thick and bubbly.
- 2. Remove from heat; add vanilla, rice cereal and pecans.
- 3. When just cool enough to handle, form into small balls and roll in coconut.
FRYING PAN COOKIES
Peculiar looking flourless cookies. For rum-packed flavor try using 2 teaspoons rum extract in place of the vanilla.

- Melt butter or margarine in heavy skillet. Add slightly beaten eggs. Stir in dates, sugar, salt and vanilla. Cook over low heat stirring constantly until thick and well blended.
- Have ready crisp rice cereal and chopped nuts in large bowl. Stir cooked mixture into them until coated.
- Chill. Put by teaspoonful on cookie sheet. Chill again. When cold roll in crisp rice crumb and coconut mixture or powdered sugar.

This is a recipe Mom made usually at Christmas, adding a variety to her cookie tray. This is an unbaked cookies, that is cooked in a skillet and formed into a roll and cut into slices. Rice puffs is used in this recipe which is different from the other recipes posted here.

Steps:
- Melt butter in a heavy frypan, add dates, sugar, salt and unbeaten eggs.
- Cook over very low heat, stirring constantly until mixture becomes quite thick and starts to cling to the spoon.
- Remove from heat, add vanilla, then cool slightly.
- Add rice puffs and nuts, mixing well.
- Sprinkle waxed paper lightly with icing sugar or toasted coconut. Shape mixture into two rolls about 2 inches in diameter.
- Wrap in wax paper and chill.
- To serve, cut int 1/2 inch slices.

GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

When mixture is cool enough to handle, roll into walnut size balls and roll in coconut. Keep in an air-tight container.
