MUSHROOM-KALE-QUINOA ENCHILADAS
Ease into spring with this recipe for veggie-heavy enchiladas, made with kale, quinoa and mushrooms.

- In 2-quart saucepan, heat 1 1/2 cups water to boiling. Add quinoa; cover and cook over low heat 25 to 30 minutes or until quinoa is fluffy.
- Meanwhile, heat 10-inch skillet over medium heat. Add olive oil, and once hot, add onion and garlic. Cook about 10 minutes, stirring occasionally, until onion is soft and translucent. Add mushrooms, kale and 1 cup water. Cover; cook 5 to 10 minutes or until kale is wilted. Stir in green chiles and refried beans; cook 5 minutes. Stir in cooked quinoa. Stir in 1/2 cup of the cheese until melted. Remove from heat.
- Preheat oven to 350°F and grease 13x9-inch (3-quart) baking dish with shortening or cooking spray.
- Pour half the enchilada sauce in bottom of baking dish. Heat tortillas in microwave a few seconds. Working with 1 tortilla at a time, spread a little of the quinoa mixture on one-third of each tortilla. Roll up, and place seam sides down in baking dish. Pour remaining enchilada sauce over enchiladas; cover with remaining cheese.
- Bake 25 to 30 minutes or until cheese is melted and bubbly. Serve with remaining ingredients.

QUINOA WITH MUSHROOMS
Quinoa is a healthy grain that can be substituted in most recipes for rice or couscous. I recently experimented with quinoa and made this dish which my husband and I both love. This easy-to-make and tasty side dish is similar to a pilaf.

- Heat the oil in a skillet over medium heat. Cook and stir the mushrooms, onion, and garlic in the hot oil until browned, about 5 minutes; set aside.
- Melt the butter in a pot over medium-high heat. Add the quinoa to the melted butter and let it brown, about 3 minutes. Pour the chicken broth over the quinoa; bring to a boil. Cover and reduce heat to low; simmer 10 minutes. Stir in the sauteed mushroom mixture and cook another 2 minutes. Sprinkle with Parmesan cheese to serve.

MUSHROOM ENCHILADAS
Steps:
- Preheat oven to 350 degrees F. Heat 1/4 cup oil in a skillet add mushrooms and saute them until they start to shrink, about 3 to 5 minutes. Add onion, garlic, oregano, coriander and saute for another 2 minutes. Pour mixture into a bowl and stir in cheese, mix well. Heat remaining oil in a cleaned skillet. When oil is hot dip each tortilla in turn and fry for 10 to 15 seconds on each side or until softened. Remove to paper towels to drain. Divide the stuffing evenly among the tortillas, roll them up and place in a lightly oiled baking pan. Pour the roasted vegetable sauce over all and bake for 10 minutes or until the sauce bubbles. Remove from oven, top with chopped cilantro and serve.
CREAMY MUSHROOM ENCHILADAS
This is a perfect dish for a meatless meal! The sauce can be made ahead of time and then refrigerated before completing the recipe.

- Enchilada Sauce: Heat oil in a wide frying pan over medium heat; add onion and cook, stirring, until soft; stir in remaining sauce ingredients; bring to a boil, cover, reduce heat and simmer for 10 minutes.
- Set aside.
- Enchiladas: In a wide frying pan over medium heat, melt butter; add mushrooms and cook, stirring, until mushrooms are golden and liquid has evaporated.
- Reduce heat to low and add chiles, onions, yogurt, cream cheese and flour; cook, stirring, until mixture boils and thickens; remove from heat.
- Bring enchilada sauce to a boil over medium-high heat; then remove from heat; using tongs, dip a tortilla into bubbling sauce for a few seconds to soften, then place in a greased 9x13-inch baking dish; spoon about 1/2 cup of the mushroom mixture down the center of each tortilla and roll to enclose; arrange seam side down; repeat until all tortillas are dipped and rolled; if sauce becomes too thick, thin it with water or wine.
- Pour remaining sauce evenly over enchiladas; bake, covered, in a 375°oven for 20 minutes; uncover and sprinkle with cheese; continue baking, uncovered, for 5 more minutes or until cheese is melted.
