EASY AND TENDER CROCKPOT BEEF TIPS AND GRAVY



Easy and Tender Crockpot Beef Tips and Gravy image

Perfectly fork-tender beef is coated in a simple and rich gravy sauce and combined with pearl onions and sliced mushrooms. This dish hits high on comfort, nutrition, and cozy satisfaction.

1 tablespoon avocado oil, divided (for Instant Pot version only)
2 lbs. beef tips (cubed sirloin) or cubed beef stew meat (1- to 2-inch pieces)
1 (12-ounce) bag frozen pearl onions (unthawed)
¼ cup tomato paste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon coarse sea salt
½ teaspoon black pepper
8 ounces fresh mushrooms, sliced or coarsely diced
1 ½ cups low-sodium beef broth
2 to 4 tablespoons cornstarch
For serving: Cooked mashed potatoes, mashed parsnips or cauliflower, or noodles
Snipped fresh parsley for garnish (optional)

Steps:

  • In a 6- to 7-quart slow cooker, place the beef tips, frozen pearl onions, tomato paste, garlic powder, onion powder, dried thyme, salt, and pepper; stir until beef and onions are coated in the tomato paste and seasonings.
  • Add the mushrooms and pour the beef broth over all. Place the lid on the slow cooker and cook on high for 4 hours or on low for 6 to 8 hours.
  • When the beef is tender, thicken the liquid with a cornstarch slurry.* To do so, place 2 tablespoons cornstarch in a small bowl and ladle ¼ cup of the hot liquid from the slow cooker into the bowl. Use a small whisk or fork to mix the cornstarch into the liquid until dissolved (should look like a muddy liquid). Pour the cornstarch slurry into the mixture in the slow cooker and mix until incorporated. Set slow cooker to high setting, cover, and cook for 30 minutes or until liquid is thickened. If you prefer even thicker gravy, repeat the cornstarch slurry step with 2 more tablespoons of cornstarch. The gravy will thicken even more over time and as the recipe cools.
  • Serve over mashed potatoes, other mashed veggies, or cooked noodles.
  • Store leftovers in a covered container in the refrigerator for up to 5 days.

1 1/2 lbs beef sirloin, cut in pieces
1/2 cup onion, chopped
1 (10 ounce) cream of mushroom soup
1 tablespoon Worcestershire sauce
1/4 cup water
1/4 cup sour cream
salt and pepper

Steps:

  • Brown beef tips in vegetable oil and place in crock pot. In same saucepan, sautee onions and place on top of beef tips.
  • Add mushroom soup, worcestershire sauce and water to same saucepan. Heat and stir to mix. Add to crock pot.
  • Turn crock pot to high for 1 hour and turn to low for 4 to 5 hours. Add sour cream during last 15 minutes and stir.
  • Note: Cream of mushroom soup will add some salty flavor. At end of cook time do a taste test and if too salty, add about 3-4 tablespoons of water which will dilute saltiness.

3 1/2 lbs sirloin tip roast, fat trimmed and cut into cubes
1 small onion, finely chopped
2 (1 ounce) packages brown gravy mix
3 1/2 cups water
1 (8 ounce) can mushrooms (optional)
1 beef bouillon cube
2 cups long grain brown rice
1/2 teaspoon salt

Steps:

  • Place the cubed beef and chopped onion in the bottom of the slow cooker.
  • Mix both packets of brown gravy mix with 1 cup of water, and pour over the beef tips.
  • Add the mushrooms and liquid from the can, if using.
  • Add bouillon cube and set the slow cooker to high for 3-4 hours (or low for 6-8 hours).
  • Place the brown rice, salt and remaining 2 1/2 cups of water in a wide, shallow pan. Bring it to a boil. Reduce the heat to simmer, cover the pan and cook for 30 minutes.
  • Fluff the rice with a fork and place a serving on each plate. Ladle the beef and gravy over the rice for serving.
