- In a large bowl, combine butter and sugar. Combine flour and baking powder; add to butter mixture. Add egg; mix until well blended and crumbly. Add milk and blend until dough forms a soft ball., Pat dough onto bottom and 1-1/2 in. up sides of a greased 13-in. x 9-in. baking dish. Place pineapple in a sieve over a 4-cup glass measure; press with the back of a spoon to squeeze dry. Spread pineapple evenly over bottom crust, reserving juice in glass measure; set aside., In a large bowl, beat the cream cheese, sugar and flour. Add the egg yolks, lemon juice and vanilla; mix well. Add enough milk to reserved pineapple juice to measure 2-1/2 cups. Stir milk mixture into cream cheese mixture until well combined., In a large bowl, beat egg whites on high until stiff. Fold filling mixture into egg whites. Gently pour into crust. Sprinkle with cinnamon. , Bake at 325° for 55 minutes or until filling is set. Cool completely on wire rack. Chill until serving.

- 1. In a large bowl, dissolve gelatin in boiling water. Add cold water, reserved pineapple juice. and orange peel. mix well. Chill 15 to 20 minutes, or until slightly thickened. Stir in pineapple and carrot. Pour into a 9x13 inch baking dish. Chill 1 hour.
- 2. In a large bowl. beat cream cheese and sugar until smooth. Fold in whipped topping and spread evenly over pineapple gelatin mixture.
- 3. Cover and chill at least 4 hours, or until firm.

- Mix melted butter and crushed graham wafer crumbs together in 8x8-inch baking pan; reserve 2 tablespoons for top of dessert.
- Spread remaining crumb mixture evenly in pan. Bake at 350F 10-15 minutes; cool.
- Mix softened butter, icing sugar and egg yolks together in bowl; mix until smooth and creamy. Spread evenly over cooled crumb base.
- Mix together pineapple and whipped cream. Spread over above layer. Sprinkle reserved crumbs on top of dessert.

- Preheat oven to 350°F.
- Mix together graham wafer crumbs and melted butter until well blended. Remove 1/2 cup for the topping. Pack remaining crumbs in 8-inch square baking pan.
- Bake in oven for 10 minutes, remove pan and allow base to cool completely.
- Prepare Dream Whip as directed on package. Set aside.
- In separate bowl, beat cream cheese until light and fluffy. Fold in Dream Whip, crushed pineapple, and vanilla. Pour over cooled base. Sprinkle with remaining crumbs.

This is a rich cheesecake with a pineapple sour cream topping. It is made in a 2 qt. oblong baking pan (about 7"x11"). I have even made it in a 9"x13" If using as part of a dessert tray they can be cut in small squares and served in muffin pan liners

- Mix graham cracker crumbs with melted butter and set aside 1/4 of the mixture.
- Put the rest in 2 quart oblong pan and press down on bottom and sides.
- Blend together cream cheese and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add lemon juice and vanilla.
- Pour over crumb crust.
- Bake at 350°F degrees for 30 minute.
- Meanwhile, mix the drained pineapple with the 1/2 teas. vanilla and the sour cream.
- When cake comes out of oven cover cake with the pineapple sour cream mixture.
- Sprinkle top with reserved crumb mixture.
- Bake another 5-10 minute.
- Refrigerate when cool.
EASY REFRIGERATOR PINEAPPLE GRAHAM DESSERT SQUARES
This dessert is easy to prepare and really good! You can use Cool Whip topping in place of the whipping cream if desired. I like to top each slice with a spoonful of crushed pineapple before serving.

PINEAPPLE CREAM SQUARES (NO BAKE)
I have had this recipe for years, it is still requested by my family to make, and still a favorite. No baking makes this a perfect dessert for hot summer days. I most always top it with Cool Whip topping, but that is optional. Make certain to chill this for a minimum of 3 hours (more time is even better) I most always prepare this in the morning to serve later in the day. I always prepare two (8-inch) pans of this dessert as one pan goes way too fast LOL! This is the most delicious dessert!

- Butter an 8-inch square baking dish.
- In a bowl, mix together cracker crumbs, 3 tablespoons sugar pinch of cinnamon and melted butter; press mixture into bottom of the pan.
- Refrigerate for half an hour, or freeze for 10 minutes.
- In a mixing bowl, beat together sour cream, cream cheese, 1/2 cup sugar and 2 tablespoons marmalade until blended; set aside.
- Drain the pineapple (I push through a small strainer to drain well) and reserve juice.
- In a small saucepan, sprinkle the gelatin over reserved juice, let stand for 1 minute.
- Cook, stirring over low heat until gelatin dissolves.
- Beat in gelatin mixture into sour cream mixture until well blended.
- Spoon over graham cracker crust in the pan.
- Stir together the pineapple and remaining 3 tablespoons of marmalade in a small bowl until blended.
- Evenly spread over the sour cream mixture.
- Cover and chill for a minimum of 3 hours, or until firm.
