Many beans are grown here in Georgia, so we find lots of ways to serve them. This is one of my favorite side dishes for holiday meals. To make it even more special, substitute hazelnuts for the almonds.

1-1/2 pounds fresh green beans, trimmed
3 tablespoons butter, softened
2 teaspoons lemon juice
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
1/8 teaspoon garlic powder
Dash pepper
1/4 cup slivered almonds, toasted and finely chopped

Steps:

  • Place the beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender., Meanwhile, in a small bowl, combine the butter, lemon juice and zest, salt, garlic powder and pepper. Stir in the almonds. Drain the beans and return to the pan. Add almond butter and toss to coat.

3 lbs raw green beans (fresh or frozen)
1 1/2 sticks salted butter
or use unsalted butter and add 3/4 tsp salt when you begin to melt the butter in the skillet
1 1/2 cups sliced almonds
Grated Parmesan to taste - optional

Steps:

  • Rinse green beans. Snip the bases off on all the green beans.
  • Fill a large soup pot 2/3 with water and bring to a rapid boil. Add 2 Tbsp salt. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, then place them in your serving dish.
  • In a large skillet, over medium heat, melt 1 stick of butter. Add shaved almonds to the skillet and stir them until they are golden. Watch them closely once they start to golden because they can burn quickly beyond this point.
  • Melt in the rest of the butter (1/2 stick), stir and pour the buttery almonds evenly over the green beans.
  • Use tongs to lightly toss the beans with the buttery almonds, but not too much because the almonds tend to escape to the bottom of the dish.

water
1 tablespoon butter
1 ½ tablespoons extra-virgin olive oil
½ cup raw slivered almonds
salt to taste

Steps:

  • Place green beans in a saucepan. Cover with water and bring to a boil. Cook until beans are al dente, about 5 minutes. Drain and set aside.
  • Melt butter in a large skillet over low heat. Add olive oil and mix thoroughly. Add almond slivers, mix until coated, and spread out evenly in the bottom of the skillet. Stir continuously, until almonds just begin to turn golden brown. Remove almonds to a small bowl and continue stirring for 1 minute until cool enough to taste. Add salt.

BSD is a chef acronym you should know. It stands for blanch, shock and drain, and it applies to many vegetables that need precooking at restaurants. Blanching helps take the raw bite out of vegetables but keeps their texture. Once blanched, shocking in ice water stops the cooking process. Then draining removes any excess moisture and gets them ready for seasoning or sauce. This is a great technique for parcooking and holding all vegetables. It cooks the vegetable about 90 percent. Then all you need to do is finish cooking and season as you wish!

Kosher salt, for blanching water
1 pound (454 g) green beans, trimmed
3 tablespoons (42 g) unsalted butter
3 ounces (84 g) slivered almonds
2 medium cloves garlic, thinly sliced
1 medium shallot, thinly sliced
1 1/2 tablespoons (23 ml) freshly squeezed lemon juice
1 teaspoon Maldon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1 lemon, zested

Steps:

  • Bring a large pot of salted water to a boil and prepare an ice bath. For the ice bath, use a lot of ice, add 1 teaspoon or so of kosher salt (which will make it a bit colder) and put a colander inside the bowl so that the ice stays separate from the beans and it's easy to drain the beans as soon as they are well chilled.
  • Add the green beans to the boiling water and cook until tender-crisp, about 3 minutes. Ladle out 2 tablespoons (30 ml) of the water, then transfer the green beans to the ice bath using a wire mesh spider or tongs. Allow to chill completely, then lift the colander out of the ice bath, and dry the green beans thoroughly with kitchen towels or paper towels. This can be done ahead of time.
  • In a medium skillet, heat the butter and almonds over medium heat and cook, stirring frequently, until the almonds are deeply browned and nutty, 2 to 4 minutes. Add the garlic and shallot and cook, stirring often, until lightly browned, about 2 minutes longer. Add the lemon juice, along with 1 to 2 tablespoons (15 to 30 ml) of the cooking water. Increase the heat to high and stir and shake the pan rapidly to emulsify, about 30 seconds. The sauce should have a glossy sheen and not appear watery or greasy. If it's still watery, continue to simmer and shake. If it looks greasy, add another 1 tablespoon (15 ml) of water. When the sauce is ready, remove from the heat.
  • Add the green beans to the pan with the sauce and toss to coat and combine. Return to medium heat and cook, tossing, until heated through, about 1 minute. Season to taste with Maldon salt and pepper. Garnish with the lemon zest and serve immediately.
