Marinated Beef Stir Fry With Cilantro image

half a pound beef sirloin, cut into long strips
2-3 long red chili pepper, sliced
4-5 garlic cloves, sliced
1 bunch cilantro, trimmed and washed, cut into half
For marinating the beef:
1 teaspoon potato starch
1 tablespoon cooking wine
1 tablespoon soy sauce
1 tablespoon oyster sauce
½ teaspoon black pepper
4 tablespoons oil
For seasoning:
¼ teaspoon salt
a pinch of sugar

Steps:

  • Marinate the beef with potato starch, cooking wine, soy sauce, oyster sauce, black pepper and oil for about 15 minutes.
  • Sauté the beef for a minute or until no longer pink, remove from pan and set aside.
  • Drizzle some oil into the pan, add in the garlic and red pepper, sauté 2 minutes or until fragrant.
  • Add the cilantro and beef into the pan, season with salt and sugar, cook for another 2 minutes and transfer to a plate and serve.

1 tablespoon sour cream
1 (7 ounce) can tomatillo salsa
1 teaspoon freshly ground black pepper
1 teaspoon celery salt

1 bunch fresh cilantro, chopped
1 tablespoon fresh lime juice

Steps:

  • Combine cream cheese, sour cream, salsa, pepper, celery salt, cumin, garlic powder, cilantro and lime juice in a blender or food processor. Blend until smooth and creamy. Place in a serving bowl.

2 cups fresh parsley leaves
2 cups fresh cilantro leaves
1 cup fresh mint leaves
8 garlic cloves, chopped
1-3/4 teaspoons kosher salt, divided
1/2 teaspoon plus 3/4 teaspoon freshly ground pepper, divided
2 cups olive oil
2/3 cup red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon crushed red pepper flakes
4 pounds beef flat iron steaks or top sirloin steaks (1 inch thick)

Steps:

  • Place herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a food processor; pulse until herbs are chopped. Gradually add oil, vinegar, lemon juice and pepper flakes, processing just until blended., Sprinkle steaks with remaining salt and pepper. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Cut steaks into 1/4-in. slices; serve with sauce.

1/2 cup olive oil
3 tablespoons fresh lime juice
1 tablespoon jalapeno, chopped
1 1/2 teaspoons oregano
1 clove garlic clove (large clove)
1/4 cup red onion, coarsely chopped
4 pounds beef tenderloin, cut into 1" cubes
2 large red bell pepper, cut in 1" squares
olive oil
toothpicks

Steps:

  • 1. Puree first 6 ingredients in food processor until almost smooth. Add onion and process until finely chopped, but not ground. Season with salt & pepper. (can be prepared 1 day ahead) 2. Preheat broiler. Place beef and peppers into separate bowls. Mix enough oil into beef and peppers to coat. Spread beef onto large baking sheet and Sprinkle with salt & pepper. Broil beef to desired doneness ( about 3 minutes per side for medium-rare) Broil peppers until tender and beginning to brown (about 3 minutes) Skewer 1 beef cube and 1 pepper square with a toothpick. 3. 4 (1 lb) steaks (ribeye, t-bone, sirloin, each steak approx. 1 lb)
salt and pepper
3/4 cup salted butter
1 bunch cilantro
4 garlic cloves
1/2 teaspoon paprika
1 teaspoon lemon juice

Steps:

  • Select steaks approx 1 inch thick. Allow steaks to come to room temperature so they cook quickly and evenly.
  • Place slightly softened butter, garlic, cilantro, paprika and lemon juice in food processor, and pulse until well blended. Refrigerate resulting herb butter.
  • Salt and pepper steaks.
  • Grill steaks uncovered on hot bbq for 5 minutes on one side. Don't worry if it flames a bit.
  • After 5 minutes, turn steaks, place lid on BBQ, close top vent half-way and cook about 8 minutes more. During this period, be sure to turn steaks every two minutes for even cooking. This should give you medium-rare to medium doneness.
  • Remove steaks from grill.
  • Place large dollops of herb butter on steaks, and allow steaks to rest 5 minutes on plate, covered, so juices get re-absorbed. This 5 minutes is a great time to use the BBQ to grill some veggies. I make grilled zucchini, yellow squash and portabella mushrooms. After grilling veggies, add some of the herb butter to them.
  • For best flavor, use a charcoal grill with mesquite natural charcoal, but you can use a gas grill.

1 1/2 teaspoons freshly ground black pepper
2 tablespoons mushroom soy sauce (available in Asian markets)
7 medium cloves garlic, crushed
1 1/2 pounds top round or sirloin, trimmed of all fat and cut into 1/2-inch cubes
2 tablespoons lime juice
1 teaspoon water
2 tablespoons canola oil
1 head green leaf lettuce

Steps:

  • Combine sugar, 1 teaspoon of the black pepper, soy sauce and garlic in bowl large enough to hold the beef. Stir well.
  • Add beef and stir to coat well; marinate for 20 minutes, or longer.
  • Combine remaining pepper with lime juice and water, and place in small serving bowl.
  • Saute beef in hot oil, three to four minutes, until medium rare. Arrange on platter lined with lettuce and serve with lime sauce and toothpicks, or serve as a main course over jasmine rice or fragrant rice, sauce on the side.
