1 lb asparagus spear
2 tablespoons water
1/4 cup seasoned rice vinegar
2 tablespoons soy sauce (I use lite)
2 teaspoons gingerroot, chopped
1 teaspoon sesame oil

Steps:

  • Snap off tough ends of asparagus.
  • Place asparagus spears and water in a shallow microwave dish.
  • Cover and microwave at HIGH 2 to 4 minutes (I just steam mine) or until asparagus is crisp-tender; drain.
  • Return to dish.
  • Combine vinegar and next 3 ingredients in a small bowl; stir with a whisk until mixture is blended.
  • Pour vinegar mixture over asparagus, turning asparagus to coat.
  • Cover and marinate in refrigerator at least 2 hours, tuning asparagus occasionally.

1 lb fresh asparagus, trimmed
2 tablespoons rice vinegar
2 tablespoons soy sauce (feel free to use low-sodium)
2 teaspoons peanut oil or 2 teaspoons other vegetable oil
1 teaspoon sugar
3 -4 drops sesame oil
salt and pepper
1/4 cup almonds, lightly toasted and chopped (may use walnuts/pecans)
1 tablespoon scallion, chopped

Steps:

  • Cook the asparagus in salted boiling water until tender but crisp.
  • Drain, and rinse with cold running water, set aside.
  • In a large ziplock bag, mix the rice vinegar, soy sauce, oils, sugar, salt, and pepper.
  • Seal the asparagus in the bag and marinate overnight in the refrigerator.
  • Sprinkle the marinated asparagus with almonds and scallions before serving.

2 bunches asparagus (thin)
4 tablespoons hoisin sauce
1 tablespoon sweet chili sauce

Steps:

  • After breaking the asparagus at its weak point and tossing the woody part out, I wrap the group of stalks with a rubberband to make them easier to cut.
  • Then I cut the asparagus cross wise into 3/8" pieces. (Does not have to be precise).
  • On medium heat, melt butter in a skillet and then add the asparagus pieces.
  • Saute on medium heat for 3-4 minutes stirring frequently.
  • Reduce temperature to low.
  • Add Hoisin and Sweet Chili sauce to asparagus and stirring to mix thoroughly.
  • Cook for an additional 1-2 minutes on low stirring frequently.
  • Enjoy!

1/8-1/3 cup sesame oil
1/3 cup soy sauce
1/3 cup rice wine vinegar
3 garlic cloves, crushed and minced finely
1/4 inch fresh ginger, grated
black pepper
chili pepper flakes

Steps:

  • Put all marinade ingredients into a zip-lock bag shake and add asparagus and marinate for 1 hour to overnight.
  • Remove from marinade, cook on a hot grill about 5 minutes just till lightly browned.
  • Turning often.
  • Optional: Heat the marinade and pour over the grilled asparagus.

1 pound asparagus
2 tablespoons dark sesame oil
1 tablespoon soy sauce
1 clove garlic, minced
2 tablespoons sesame seeds

Steps:

  • In a shallow pan, soak skewers in cold water for 1 hour, then drain and set aside.
  • Preheat grill to high. Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using the toothpicks or 2 bamboo skewers, forming a raft shape.
  • In a small bowl, combine the sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • When ready to cook, place the asparagus rafts on the hot grate and grill until nicely browned on both sides, 2 to 4 minutes. Sprinkle with the sesame seeds as they grill. You can serve the asparagus as rafts or unskewered.

2 tablespoons Dijon mustard
3 tablespoons good soy sauce

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

6 ginger slices
1 tablespoon sesame oil
1 teaspoon fresh cracked black pepper
1/4 cup Canola oil
1/4 cup thin soy sauce
1/2 cup shaoshing wine or red wine
1 pound flank steak, thinly sliced against the grain
1 tablespoon Canola oil
4 bunch leeks, julienne (white part only)
1 tablespoon minced garlic
2 tablespoons minced ginger
1 bunch asparagus, cut in 2-inch pieces and blanched
Salt and black pepper to taste

Steps:

  • To make marinade, mix first 6 ingredients and thoroughly mix with the beef. Let stand for at least 1 hour, preferably overnight, refrigerated. In a hot pan or wok, coat with Canola oil and add leeks, garlic and ginger. Stir for 3 minutes to caramelize. Add drained beef and stir for 2 minutes. Add asparagus and heat thoroughly. Check for seasoning. Serve immediately with starch of choice. For me, that means rice.

ASPARAGUS SPEARS WITH SESAME

2 tablespoons white wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
Kosher salt
1 pound fairly thin pencil asparagus, ends trimmed, cut into 2-inch pieces
4 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
  • Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
  • Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

1 1/2 to 2 pounds salmon fillets

Steps:

  • Place the sugar, soy sauce, hoisin sauce, ginger, dash of red pepper flakes, garlic, and lime juice in a medium nonreactive saucepan.
  • Bring the mixture to a boil, reduce the heat to medium, and cook for 15 to 20 minutes, or until the sauce forms a glaze. Set aside.
  • Preheat the broiler.
  • Place the salmon fillets on a broiler pan and baste with the sauce. Let sit for 15 minutes. Broil them until cooked through, about 8 minutes, basting again with the glaze.
  • Remove the salmon from the heat and baste once more with the glaze before serving.

1 cup sake (found in Asian grocery stores)
1 cup mirin (found in Asian grocery stores)
1 cup miso (found in Asian grocery stores)
1 cup sugar
1/2 cup chopped ginger
1/2 cup chopped garlic
Satay
2 pieces Chilean sea bass (2 ounces each)
4 jumbo stalks peeled asparagus (4 inches)
1 tbsp olive oil
1 tbsp minced chives

Steps:

  • Combine marinade ingredients. Reserve 2 tbsp and marinate bass in the rest (covered, in the refrigerator) for 24 hours. Spear each piece of fish on a wooden skewer. Place on foil-lined pan and broil until sauce caramelizes, 3 or 4 minutes. Toss asparagus with oil, salt, and pepper. Heat a sauté pan (no oil) over high heat, 7 minutes. Add asparagus; sauté all sides. Arrange asparagus on a plate. Top with bass, drizzle with reserved marinade, garnish with chives. (To evaporate alcohol, increase sake and mirin to 1 1/4 cups each. Simmer until mixture is reduced by half and is syrupy.)

From A Slice of Paradise. This has been a regular at our house for years. It can be made well in advance. It's quick and easy to assemble for an everyday dinner and pretty enough for a dinner party. I often substitute verjuice for the vinegar. Serve cold.

2 tablespoons fresh basil, chopped
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon sugar

1 lb fresh asparagus
1/3 cup chopped tomato

Steps:

  • Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.
  • Cut ends off asparagus.
  • Cook asparagus in a large pot of simmering water for 4 minutes.
  • Drain and put in an ice bath.
  • Remove asparagus to a platter and top with chopped tomato.
  • Pour vinaigrette on asparagus.

3 tablespoons balsamic vinegar
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon soy sauce
1/8 teaspoon pepper
1 pound fresh asparagus, trimmed

Steps:

  • In a large resealable plastic bag, combine the first five ingredients. Add the asparagus; seal bag and turn to coat. Refrigerate for up to 1 hour., Drain asparagus, reserving marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack., Grill asparagus, covered, over medium heat for 6-8 minutes or until crisp-tender, turning and basting occasionally with reserved marinade.

2 pounds fresh asparagus, trimmed
⅓ cup soy sauce
⅓ cup rice vinegar
2 tablespoons vegetable oil
2 tablespoons agave nectar
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon sesame oil
1 pinch cayenne pepper, or to taste
1 tablespoon toasted sesame seeds

Steps:

  • Fill a large bowl with with cold water; add ice.
  • Bring a pot of water to a boil; cook asparagus in boiling water until bright green, 1 to 2 minutes. Drain asparagus and plunge into ice water to stop cooking. Drain and transfer asparagus to a baking dish.
  • Whisk soy sauce, rice vinegar, vegetable oil, agave nectar, garlic, ginger, sesame oil, and cayenne pepper in a large bowl; pour marinade over asparagus, adding water if necessary to submerge asparagus. Cover baking dish and refrigerate for 2 hours or overnight.
  • Drain marinade and sprinkle sesame seeds over asparagus before serving.

The Asian-style marinade adds lots of extra flavor and uses both orange & lime juices. Prep time does not include 1-hour marinating time. This was published in our local newspaper and made for lunch today! You might enjoy boiling and thickening the marinade to use as a dipping sauce. I'm also publishing the sides that were suggested - Golden Jeweled Rice and (steamed asparagus with) Citrus Sauce.

1/2 cup reduced sodium soy sauce
1/2 tablespoon fresh orange juice or 1/2 tablespoon prepared orange juice
1/2 tablespoon fresh lime juice
1/2 tablespoon prepared Chinese mustard
1/2 tablespoon Chinese five spice powder
16 ounces salmon fillets
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • With a spoon mix together soy sauce, juices, mustard and spice powder in a shallow dish or pan.
  • Add salmon and turn to coat all sides; cover and refrigerate for 1 hour.
  • Bring salmon back to room temperature and preheat broiler.
  • Remove salmon from the marinade and pat dry with paper towels.
  • Brush sides and tops of fillets with sesame oil and place on broiler pan; broiler 4 inches from heat until fish is cooked through, about 5 minutes (you might want to spray your broiler pan w/cooking spray).
  • While fish is broiling heat a small skillet over medium-high heat until hot; Add sesame seeds and, stirring constantly, toast just until golden -be careful, seeds can go from golden to burnt in a flash.
  • Remove skin from salmon, transfer to serving plates and garnish each with toasted sesame seeds.
