- Cook pasta according to the package directions. Drain; transfer to a large bowl., Add beans, vegetables, cheese, olives and basil to pasta. Drizzle with dressing and sprinkle with salt; toss to coat. Sprinkle with walnuts.

ONE-POT WHITE BEAN PASTA
This quick white bean pasta makes a wonderful One-pot family meal ready in less than 15 minutes. It's everything you want in a pasta dish: it's comforting, packed with fresh ingredients, BIG flavor, protein, veggies, and it's no fuss.

Steps:
- Warm the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant and smells good, about 45 seconds.
- Add paprika, chili flakes, beans, black pepper, and give a good stir.
- Add hot water or low sodium vegetable broth, salt, turn to high heat and bring to the boil.
- Stir in pasta, reduce the heat to medium-low, cover with a lid and cook stirring frequently. The amount of liquid is enough to partially cover the pasta (but keep an eye on it to make sure the pasta doesn't stick to the bottom of the pot, and add a touch of water if needed).
- In the last 2 minutes of the pasta's cooking time, add fresh spinach, a handful at a time, and cherry tomatoes. Stir until the spinach is wilted, it takes a couple of minutes.
- Turn off the heat, finish the dish with freshly grated parmesan, and give a good stir until the cheese melts and the pasta looks well combined (taste and adjust the season according to your taste if needed).
- Serve immediately with a drizzle of extra virgin olive oil, more freshly ground black pepper and parmesan cheese if you like. Enjoy!

- Cook & stir until tomatoes are slightly soft, about 2 minutes.

- In a large saucepan, heat oil over medium heat. Add garlic; cook and stir until tender, 30-45 seconds. Stir in 2 cans of beans, pepper and broth., Puree mixture using an immersion blender. Or puree in a blender and return to pan. Stir in remaining can of beans; bring to a boil. Reduce heat; simmer, covered, 15 minutes, stirring occasionally., Stir in spinach and basil; cook, uncovered, until spinach is wilted, 2-4 minutes. If desired, serve with cheese.

- Coarsely chop the spinach.
- Melt the butter over medium heat & when bubbly add onion& garlic.
- Saute for 2 minutes.
- Add spinach, salt & pepper.
- Cover & reduce heat to low steam for 3-4 minutes.
- Put half of the cheese into an 8" greased casserole dish.
- Add spinach, & nutmeg.
- Cover with remaining cheese.
- Bake in 350F for apprx 20 minutes or until cheese is browned.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a baking sheet with cooking spray.
- Heat tortillas, 1 at a time, in a small skillet over medium heat until warm and soft, about 30 seconds per side.
- Spray both sides of a tortilla with cooking spray. Spread about 1 tablespoon black beans down the middle, then top with spinach, about 1 teaspoon cilantro, 1 tablespoon salsa, and sprinkle with Monterey Jack cheese and cumin.
