ONE-POT WHITE BEAN PASTA



One-Pot White Bean Pasta image

This quick white bean pasta makes a wonderful One-pot family meal ready in less than 15 minutes. It's everything you want in a pasta dish: it's comforting, packed with fresh ingredients, BIG flavor, protein, veggies, and it's no fuss.

Number Of Ingredients 12

1 Tbsp olive oil or extra virgin olive oil, plus more to drizzle
3 garlic cloves, minced
½ tsp paprika
¼ or ⅛ tsp chili flakes*
1 can (15 oz) cannellini beans, or Great Northern beans
⅛ tsp freshly ground black pepper
2 ½ cups (600 ml) water or low sodium vegetable broth*
½ tsp fine salt, or according to taste
8 oz (220 grams) short pasta shapes (fusilli, penne, bow ties...)
4 oz (120 grams) baby spinach, washed
4 oz (120 grams) cherry tomatoes, cut into halves
2 oz (60 grams) freshly grated parmesan, plus more to serve

Steps:

  • Warm the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant and smells good, about 45 seconds.
  • Add paprika, chili flakes, beans, black pepper, and give a good stir.
  • Add hot water or low sodium vegetable broth, salt, turn to high heat and bring to the boil.
  • Stir in pasta, reduce the heat to medium-low, cover with a lid and cook stirring frequently. The amount of liquid is enough to partially cover the pasta (but keep an eye on it to make sure the pasta doesn't stick to the bottom of the pot, and add a touch of water if needed).
  • In the last 2 minutes of the pasta's cooking time, add fresh spinach, a handful at a time, and cherry tomatoes. Stir until the spinach is wilted, it takes a couple of minutes.
  • Turn off the heat, finish the dish with freshly grated parmesan, and give a good stir until the cheese melts and the pasta looks well combined (taste and adjust the season according to your taste if needed).
  • Serve immediately with a drizzle of extra virgin olive oil, more freshly ground black pepper and parmesan cheese if you like. Enjoy!

Spinach & mushroom bowtie pasta is your next super easy, flavorful, and delicious dinner! Took about 15-20 minutes tops to throw together. Easy to make, minimal ingredients, and good for a crowd. It's light, yet satisfying and has the most wonderful flavor from the buttered mushrooms. Everyone was very happy about this dinner, so that is a WIN!

16 oz package bowtie pasta
16 oz white mushrooms (sliced)
2 tbsp butter
2 tsp fresh garlic (minced)
6-8 cups fresh spinach
2 tbsp olive oil
½ cup grated parmesan
1-1½ tsp sea salt (more or less to taste)
½ tsp black pepper
red pepper flakes (for garnish)

Steps:

  • To start, boil water for your pasta. Cook pasta according to package.
  • Meanwhile, heat a large skillet on medium heat with about 2 tbsp butter. Once it starts to bubble, add in your sliced mushrooms. Cook your mushrooms down for about 5-10 minutes until they are soft and browned.
  • Halfway through, add your fresh garlic and maybe about 1/4 tsp of sea salt. Stir continually.
  • Once the mushrooms are cooked through, add in the fresh spinach. If you want lots of spinach, add the 8 cups. If you like a little less, add 6! It wilts down a ton. Season with another sprinkle of sea salt (about 1/8 tsp). Stir until the spinach is wilted and cooked down.
  • Meanwhile, once your pasta is done. Drain and reserve about 1/3 cup pasta water. Pour the pasta in the skillet with the veggies followed by the pasta water.
  • Next, drizzle on the olive oil. Sprinkle on the parmesan. Season with about 1/4 sea salt and 1/4 tsp pepper. Taste and add more salt if needed. Might need another 1/4 tsp. Mix until everything is incorporated.

CREAMY BOW TIE PASTA



Creamy Bow Tie Pasta image

Farfalle noodles are served with a creamy sauce, spinach, and sun-dried tomatoes.

16 ounces bow tie pasta ((farfalle) save ½ cup pasta water )
2 ¼ cups light cream
1 ½ cups chicken broth (not reduced sodium)
1 ½ tablespoons cornstarch
1 ½ tablespoons butter
3 cloves garlic (minced)
1 ½ teaspoons Italian seasoning
½ cup oil-packed sundried tomatoes (drained and diced)
1 ½ cups fresh spinach leaves (slightly chopped, or baby spinach)
¾ cup Parmesan cheese (freshly grated, plus extra for garnish)
¼ teaspoon kosher salt and pepper (to taste )

Steps:

  • Combine cream, broth, and cornstarch in a bowl. Set aside.
  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente (firm). Reserve ½ cup pasta water and drain pasta well. Do not rinse.
  • While pasta is cooking, melt butter in a large saucepan over medium-high heat. Add garlic and Italian seasoning and cook just until fragrant, about 1 minute.
  • Stir the broth mixture and add to the saucepan with sundried tomatoes. Simmer for 3 minutes or until slightly thickened.
  • Reduce heat to medium-low and add bow ties, 3 tablespoons of pasta water, spinach, and parmesan cheese. Cook 2-3 minutes or until sauce has thickened and is heated through, adding more pasta water if needed.
  • Season with additional salt and pepper to taste. Garnish with fresh basil and parmesan if desired.

2 cups uncooked multigrain bow tie pasta
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 plum tomatoes, chopped
1 medium sweet red pepper, chopped
1/2 cup cubed part-skim mozzarella cheese
1/2 cup pitted Greek olives, halved
1/4 cup minced fresh basil
1/3 cup reduced-fat sun-dried tomato salad dressing
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

Steps:

Sounds odd, but this recipe is so good. I'm not cooking for a while due to the heat. So no picture right now! But as soon as it cools down, I'm making this again and will post what it looks like. Years ago I found it in a magazine while waiting in the Dr's office and made a copy and brought it home and tried it.

12 oz bow-tie posta
2 bags (10 ounce) prewashed spinach
1 Tbsp olive oil
1 large onion, thinly sliced
3/4 c chicken or vegetable broth
1 tsp cornstartch
1/2 tsp salt
1/4 tsp crushed red pepper (optional)
1 can(s) white kidney beans (cannellini), rinsed and drained
2 Tbsp grated parmesan or romano cheese

Steps:

  • 1. In large saucepan, cook pasta as directed on package.
  • 2. Just before draining pasta, stir the spinach into the cooking pasta; leave in only until it wilts.
  • 3. Drain pasta and spinach and return to saucepan and keep warm.
  • 4. Meanwhile,add oil and heat over medim-high heat in a skillet
  • 5. Add onion and cook until golden brown, 10 to 12 minutes.
  • 6. In a bowl or large measuring cup, mix broth, cornstarch, salt and crushed red pepper and stir to mix.
  • 7. Add to skillet along with beans and cook over med heat until sauce boils and thickens slightly, about one minute.
  • 8. Add sauce to pasta and spinach in saucepan and toss to mix well.
  • 9. Sprinkle with Romano cheese and serve. May use Parmesan if prefered.

1/4 lb butter
1 large onion, diced
3 cloves garlic, minced
salt and pepper
2 cups mozzarella cheese, grated (or your choice)
1/8 teaspoon nutmeg

Steps:

  • Coarsely chop the spinach.
  • Melt the butter over medium heat & when bubbly add onion& garlic.
  • Saute for 2 minutes.
  • Add spinach, salt & pepper.
  • Cover & reduce heat to low steam for 3-4 minutes.
  • Put half of the cheese into an 8" greased casserole dish.
  • Add spinach, & nutmeg.
  • Cover with remaining cheese.
  • Bake in 350F for apprx 20 minutes or until cheese is browned.
