- Make the Mashed Potatoes: Cook the potatoes until tender. While the potatoes are cooking, heat up the cream. Add the butter and stir until melted. Add the cream and butter to the hot potatoes and mash. Season to taste. Make the Dressing: Brown bacon in a frying pan. Remove bacon and pat dry. When cooled slightly, crumble the bacon into small pieces. Add vinegar, sugar, and water to the pan with the bacon fat. Stir to dissolve the sugar. Make the Salad: Combine the lettuce, bacon, hard-boiled eggs, and scallions. Top with the hot dressing and stir until the lettuce wilts. Serve immediately with the wilted lettuce over mashed potatoes.

When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it. - Fry bacon until crisp; drain off the drippings, saving 1 tablespoon of the drippings.
- Crumble bacon.
- Add vinegar to reserved drippings, along with the flour and the water. Let simmer a few minutes.
- Sprinkle on the brown sugar.
- Now pour this over the lettuce, cut up eggs, and bacon.

- In a large saucepan, bring greens and 2 cups water to a boil. Reduce heat; cover and simmer for 4-8 minutes or until tender. Drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, discarding drippings. , In a small bowl, combine flour and sugar; stir in the milk, salt and remaining water until smooth. - drain beets and mash thoroughly and add to the potatoes.
- dice the meat
- dice 6 of the hard boiled eggs
- dice about 1/2 of the sweet gherkins, cocktail onions, and dill pickles
