Pan con tomate, also known as pa amb tomàquet (in Catalan) is a Spanish garlic tomato toast that Spaniards eat for breakfast. You can enjoy it as is or top it with some dry-cured ham!

2 slices Artisan Bread (, see note 1)
1 Large Tomato (, ripe)
1 Garlic Clove
Salt (to Taste)
A Drizzle of Extra Virgin Olive Oil

Steps:

  • Toast the bread (you can use oven, skillet or toaster).
  • Cut the tomato into quarters and remove any hard parts. Peel the garlic and cut it in half.
  • When the toast is ready, rub the garlic over it (you can do both sides, if you like). Then, rub with the tomato, flesh side down. Finally, season with salt and drizzle with olive oil.
  • Best served right away!

6 oil-packed anchovy fillets, finely chopped
1/3 cup extra-virgin olive oil
1 pound very ripe tomatoes (about 3 medium)
2 garlic cloves, halved
6 thick slices crusty white bread (such as country bread), well toasted
Smoked sea salt

Steps:

  • Whisk anchovies and oil in a small bowl. Using the coarse grater disk on a food processor or the largest holes on a box grater, coarsely grate tomatoes (you should have about 1 1/2 cups tomato pulp). Rub halved garlic cloves on one side of hot toasts, then drizzle evenly with anchovy oil. Top with tomato pulp and sprinkle with sea salt. Serve warm.

2 tablespoons olive oil
4 -5 large garlic cloves, minced
4 cups chicken broth or 4 cups chicken stock
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup stale bread cubes
1 egg, beaten

Steps:

  • In a soup pot, heat the olive oil over medium-high heat; saute the garlic until golden (but do not burn). Remove the pot from the heat and cool slightly. Then return the pot to low heat and slowly add the broth, salt, pepper, and bread cubes; simmer for 2 to 3 minutes.
  • Remove 2 tablespoons of the soup to a small bowl and mix with the beaten egg. Add the egg mixture back to the soup and stir. Continue cooking until the soup starts to thicken, about 2 minutes. Serve immediately.

I learnt to make this back in the 80's whilst living in Barcelona. Its a real "Rustic" take on garlic bread and always a winner with a Spanish themed evening.

Steps:

  • Toast Bread on both sides
  • Rub Raw garlic over freshly toasted bread (1 clove per slice)
  • Cut tomatoes in half, rub and squeeze all over bread. Sprinkle with sea salt to taste. Drizzle good quality olive oil over and ENJOY ! Note: It really is worth using vine tomatoes as they really enhance the flavour.

1 red chilli , deseeded and chopped
1 lemon , zest and juice
2 x 120g cans sardines in sunflower oil, drained
4 slices brown bread
half small bunch parsley , chopped

Steps:

  • Heat the olive oil in a frying pan, then sizzle the garlic clove and red chilli. Add the lemon zest.
  • Add the sardines and heat through for a few mins until warm.
  • Toast the brown bread. Stir the parsley into the sardines, add a squeeze of lemon juice, then divide between the toast and serve.
