Stir-fried Bean Sprouts with Tofu (Ginisang Togue) image

A simple stir-fried mung bean sprouts recipe with fried tofu, Filipino-style. This is a healthy and flavorful vegetable dish that packs a flavor with the addition of fish sauce and oyster sauce.

1 block firm tofu (cut into cubes)
4 teaspoons cooking oil (divided)
3 cloves garlic (finely chopped)
1 small onion (sliced)
1 med-size carrot (sliced thin, lengthwise)
10 pcs green beans (sliced into thin strips, diagonally)
2 tablespoons water
1 tablespoon oyster sauce
300 grams mung bean sprouts
2 teaspoons fish sauce
2 tablespoons dried shrimp
1/2 teaspoon ground black pepper
salt (to taste)

Steps:

  • Heat 2 teaspoons of oil in a pan or wok. Add sliced tofu and stir-fry until all sides are brown. Do this in batches if needed. Transfer to a plate and set aside.
  • Add remaining oil. Stir-fry garlic and onions until fragrant and translucent. Add carrots and stir-fry for 2 minutes. Add green beans and water. Continue cooking until vegetables are crisp-tender.
  • Stir in bean sprouts, fried tofu, oyster sauce, fish sauce and dried shrimp. Keep stir-frying for another 2 to 3 minutes until cooked through. Season with salt and pepper. Serve warm. Enjoy on its own or as a side dish.

This bean sprout stir-fry with tofu is a quick vegetarian dish that you can make for any weeknight dinner. It's also an inexpensive meal that will satisfy your craving. It's so light and healthy. It's low carb and keto-friendly.

1 pound fresh bean sprouts ((remove hair, rinse under cold water, and drain well))
8 oz firm or extra firm tofu ((cut into small cubes))
3½ tbsp vegetable, canola, or peanut oil ((divided))
1 tbsp low sodium soy sauce
1 tbsp minced ginger
2 garlic cloves ((peeled and sliced))
¼ cup chopped scallions
salt and black pepper ((to taste))

Steps:

  • Soak a block of tofu in salted water (1½ cups of water + 2 tsp of salt) for about 10-15 minutes. Drain the water. Put the tofu on a layer of paper towels. Place a weight on the tofu to remove excess moisture for about 15 minutes then slice into small cubes.
  • In a skillet, heat 3 tbsp of oil over medium-high heat. Cook the tofu until lightly browned on all sides (about 3-5 minutes). Set aside.
  • In the same skillet, heat ½ tbsp of oil on high heat. Cook the ginger, garlic, and scallions for 10-15 seconds or until fragrant.
  • Add tofu, bean sprouts, and soy sauce. Cook and keep stirring until the bean sprouts are tender-crisp (about 3 minutes). Adjust the seasoning with salt and black pepper.

A very easy stir-fried vegetarian-friendly dish that has only 7 ingredients. A light dish, low calories, and high plant-based protein. You can serve this dish with or without rice. Skip the rice if you like to have a low-carb meal or serve it with rice if you desire.

2 lbs Bean sprouts
16 oz Tofu (Fried or fresh )
10 Green onions (cut 2 inches long)
4 cloves Garlic (finely chopped)
2 tbsp Canola oil
2 tbsp Soy sauce
3-4 Peppers (Thai Peppers, Jalapenos or Bell Peppers)

Steps:

  • Turn the stove on high heat, add oil into a wok
  • Once the oil is hot, add chopped garlic. When the garlic turns to yellow-golden color, add tofu and stirfry the tofu until they are crispy but not burn.
  • Then add bean sprouts, green onion, and soy sauce, stirfry everything together until the bean sprouts are cooked. (It can be about 4-6 minutes, the bean sprouts are quick to be cooked)
  • Add the Thai chili or jalapeno, stirfry them with the other ingredients. Turn off the stove.

1 lb (450 g) bean sprouts
2 tablespoons peanut oil
4 cloves garlic (, finely chopped)
2 green onions (, sliced)
1/2 teaspoon salt
1 teaspoon brown sugar ((or sugar))
1/4 teaspoon white pepper
2 teaspoons soy sauce
1/2 teaspoon dark soy sauce ((Optional))
1 teaspoon toasted sesame oil

Steps:

  • Clean the bean sprouts of their stringy roots and any residual beans. Rinse with cold water thoroughly and squeeze out any excess water, then set them aside to let them dry. If the bean sprouts are still very wet at the time you're about to cook, gently pat them dry with paper towels.
  • Combine all the sauce ingredients in a bowl and set it aside.
  • Heat the oil over medium-high heat until hot. Add the garlic. Fry until the garlic begins to brown.
  • Add the green onions. Stir a few times to release the fragrance.
  • Add the bean sprouts and bring the heat up to high. Cook, tossing occasionally, for 1 minute.
  • Add the sauce and continue to cook until the bean sprouts are cooked through but still crunchy, another 2-3 minutes. Taste the bean sprouts and adjust taste by sprinkle more salt, if needed.
  • Transfer everything to a big plate. Serve hot as a side dish.

280 grams bean sprouts
1 cup tofu puffs (cut into bite-sized pieces)
3 tablespoons water
½ tablespoon soy sauce
3 green onions (cut into 3-cm pieces)

Steps:

  • Fry the garlic in oil over medium heat. There's no need to wait for the oil to be hot or the garlic will burn.
  • Add mung bean sprouts, tofu and water.
  • Season with soy sauce and stir. Turn off the heat.
  • Add green onions and stir a few times. Serve immediately with rice or plain rice soup.
