Hunan Peppered Pork image

An authentic, mouth-burning but delicious Hunan recipe served by my grandmother, who was born and grew up in the heart of Hunan province.

3 tablespoons vegetable oil, or more as needed, divided
2 cloves garlic, crushed
1 ounce fresh ginger, minced
1 pound pork tenderloin, sliced into thin strips, or to taste
3 hot long green chile peppers, sliced into thin strips, or more to taste
salt to taste
2 teaspoons soy sauce, or to taste

Steps:

  • Heat 1 tablespoon oil in a wok or large skillet over medium-high heat until smoking; saute garlic and ginger until fragrant, 30 seconds to 1 minute. Add pork to wok; cook and stir until cooked through, 5 to 7 minutes. Transfer pork to a plate.
  • Pour remaining 2 tablespoons oil into the same wok over medium-high heat; saute chile peppers until well-coated with oil and fragrant, about 2 minutes. Add pork to chile peppers and generously season with salt. Cook and stir mixture until peppers are tender, 5 to 7 minutes more. Mix enough soy sauce into pork mixture to add color and taste for desired saltiness.

Hunan Beef With Cumin image

This fragrant beef stir-fry is an adaptation of one found in Fuchsia Dunlop's "Revolutionary Chinese Cookbook," whose subject is the food of Sichuan's less celebrated eastern neighbor, Hunan province. Cumin, a spice rarely used in Chinese cooking, chiles, chile flakes and garlic create a heated yet sophisticated flavor profile.

1 tablespoon Shaoxing wine or good medium-dry sherry
1/2 teaspoon salt
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon potato starch or flour
12 ounces boneless short rib or other beef steak
1 3/4 cups peanut oil
2 teaspoons minced ginger
1 tablespoon finely chopped garlic
2 fresh red chilies (tien tsin or Thai red chiles), seeded and finely chopped
2 to 4 teaspoons dried chili flakes
2 teaspoons ground cumin
Salt
2 scallions, green parts only, finely sliced
1 teaspoon sesame oil

Steps:

  • In a bowl, mix the wine, salt, soy sauces, potato starch or flour and one tablespoon water. Cut the beef across the grain into thin slices and add to marinade.
  • In a wok, heat peanut oil to about 275 degrees. Add beef and stir gently for two to three minutes, then remove from oil with a slotted spoon and drain well.
  • Pour off all but 3 tablespoons of oil in wok. Over a high flame, add the ginger, garlic, fresh chilies, chili flakes and cumin and stir-fry briefly, until they are fragrant. Return beef to the wok and stir well, seasoning with salt to taste.
  • When beef is sizzling and fragrant,add scallion greens and toss briefly. Remove from heat and stir in sesame oil.

Steps:

Cumin-Baked Pork Chops image

This fast, easy recipe for succulent pork chops came to The Times in 1997, part of a deep dive on cumin by the writer Molly O'Neill. It is simple to prepare and can be a delicious end to a long day. Using crushed cumin instead of ground will give the chops a bit of fresh texture, but if you don't have cumin seeds, feel free to substitute.

4 8-ounce pork chops
1 teaspoon kosher salt
4 teaspoons grainy Dijon mustard
2 tablespoons crushed cumin seeds
1 teaspoon cracked black pepper
1 teaspoon canola oil

Steps:

  • Preheat the oven to 450 degrees. Sprinkle the pork chops on both sides with salt, then brush each side with mustard. Rub the cumin and pepper into the mustard.
  • Heat the oil in a large cast-iron skillet over high heat. Add the pork chops and brown for 2 minutes on each side. Put the skillet in the oven and bake until the chops are just cooked through, about 12 minutes. Divide among 4 plates and serve.

CUMIN PORK CHOPS WITH HONEY CARROTS



Cumin pork chops with honey carrots image

Flavour your meat with earthy cumin and serve with sweet Chantenay or baby carrots and natural yogurt

2 tbsp olive or vegetable oil
2 tbsp clear honey
zest and juice 1 lemon
1 tsp cumin seed , lightly crushed
2 pork chops (about 450g)
140g Chantenay or baby carrot
½ tsp ground cinnamon
natural yogurt , to serve

Steps:

  • In a large bowl, whisk together half the oil, half the honey, the lemon zest and juice, and the cumin seeds. Add the pork chops and ensure they are well coated. Heat a large frying pan and add the chops along with the glaze. Cook for 5-7 mins on each side, basting with the glaze every so often. Remove from the pan, wrap in foil and leave to rest.
  • Meanwhile, boil the carrots until just tender, about 10 mins. Mix together the remaining oil and honey, the cinnamon and some seasoning. Add this to the pan you've just cooked the pork in, along with the carrots. Toss to coat, heat through, then serve the carrots alongside the chops with a dollop of natural yogurt.

Cook, uncovered, over medium-low, stirring with a flat wooden spoon and scraping bottom of Dutch oven often, until liquid is completely reduced and pork is tender and coated in a coarse paste, 50 minutes to 1 hour. Stir in lime juice; season with salt. Transfer mixture to a serving platter; sprinkle with cilantro.
