TOM'S SCRAMBLED EGG SANDWICH
My dad came up with this recipe years ago. Over the years, everyone I have shared this with always reacts the same way. First, they tell me 'that sounds awful!' After they eat it their story changes to 'that was amazing!' I know the idea of mayo and mustard on a scrambled egg disk sounds odd, but trust me; you'll love it. I know the cooking method for the eggs may be sacrilege for some folks; I just ask that you try it before changing it up.

- Beat eggs, milk, and salt together in a bowl.
- Heat a small nonstick skillet over medium heat. Cook eggs in hot skillet without stirring until set on the bottom, about 1 1/2 minutes. Flip eggs and cook without stirring until set on the other side, about 1 minute more. Remove from heat.

This is a wonderful, slightly creamy egg dish. The chopped parsley gives it tons of great color! If you can't find creme fraiche in your grocery store, just combine 1 tablespoon of buttermilk with 1 cup heavy whipping cream. Stir together and pour into a jar. Very lightly screw the lid on and let sit for 5 to 8 hours. This it can be refrigerated for 10 to 14 days.

CONFETTI EGGS (CASCARONES)
A Mexican/American Tradition around Easter and carnival. These pretty confetti eggs really make any party fun for kids and adults alike! You will need a large bowl for catching the raw eggs; you can save these and use them for cooking, and a clean, sharp knife. Prep time depends on your technique.

- Over the bowl, use the knife to cut a small to medium sized hole in the tip of the egg.
- Turn the egg over and make a small hole in the opposite side.
- Shake egg over the bowl, or blow through the small hole until all of the raw egg yolk and white has emptied out into the bowl.
- Repeat with all eggs.
- It is okay if the eggs crack or chip a little but try to keep them mostly intact.
- Once all eggs have been emptied, rinse with water. Be sure they are clean without any remaining egg white or yolk.
- Decorate the shells with paint, egg dye recipe #160383, glitter, etc. The more colorful and outrageous, the better!
- Once eggs are dry, cut small squares of tissue paper and glue them over the small holes to seal them.
- Using a funnel, or small spoon, fill the eggs with confetti or shredded paper through the larger hole.
- Once an egg is full, pack a small tissue paper "puff" to plug the larger hole and seal it with glue.
- Allow cascarones to dry and store in the egg carton to protect them.
- Have fun hunting for and throwing cascarones, or sneaking up behind someone and cracking the cascarone over their head!

- Melt butter in large nonstick skillet over low heat. Add onions and sauté until very tender, about 8 minutes. Add pepperoni, bell peppers and marjoram. Adding a small amount of a starchy slurry to scrambled eggs - a technique learned from Mandy Lee of the food blog Lady & Pups - prevents them from setting up too firmly, resulting in eggs that stay tender and moist, whether you like them soft-, medium- or hard-scrambled. Potato or tapioca starch is active at slightly lower temperatures than cornstarch and will produce a slightly more tender scramble, but cornstarch works just fine if it's what you've got on hand. Make sure your skillet is at just the right temperature by heating a tablespoon of water in the skillet and waiting for it to evaporate. For creamier eggs, you can replace the water with milk or half-and-half.

- In a medium bowl, whisk together starch with 1 1/2 tablespoons water until no lumps remain. Add half the butter cubes to starch mixture. Add eggs and salt, and whisk, breaking up any cubes of butter that have stuck together, until the eggs are frothy and homogenous. (There will still be solid chunks of butter in the eggs.)
- Set your serving plate near the stovetop. Heat 1 tablespoon water in a 10-inch nonstick skillet over medium-high, swirling gently until the water evaporates, leaving behind only a few small droplets. Immediately add the remaining 2 tablespoons butter and swirl vigorously until the butter is mostly melted and foamy but not brown, about 10 seconds.
- Immediately add the egg mixture and cook, pushing and folding the eggs with a spatula, until they are slightly less cooked than you'd like them, about 1 to 2 minutes, depending on doneness. More vigorous stirring will result in finer, softer curds, while more leisurely stirring will result in larger, fluffier curds. Immediately transfer to the serving plate, and serve.
BUFFET-STYLE FLUFFY OVEN SCRAMBLED EGGS FOR A CROWD
This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

- Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
