3 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
3 tablespoons coarse sea salt
1 (5 to 7 pound) pork roast, preferably shoulder or Boston butt
1 1/2 cups cider vinegar
1 cup yellow or brown mustard
1/2 cup ketchup
1/3 cup packed brown sugar
2 garlic cloves, smashed
1 teaspoon kosher salt
1 teaspoon cayenne
1/2 teaspoon freshly ground black pepper
Pan drippings from the pork
12 hamburger buns
1 recipe Cole Slaw, recipe follows
Pickle spears, for serving
1 head green cabbage, shredded
2 carrots, grated
1 red onion, thinly sliced
2 green onions (white and green parts), chopped
1 fresh red chile, sliced
1 1/2 cups mayonnaise
1/4 cup Dijon mustard
1 tablespoon cider vinegar
1 lemon, juiced
Pinch sugar
1/2 teaspoon celery seed
Several dashes hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. Rub the spice blend all over the pork. Cover and refrigerate for at least 1 hour, or up to overnight.
  • Preheat the oven to 300 degrees F. Put the pork in a roasting pan and roast it for about 6 hours. An instant-read thermometer stuck into the thickest part of the pork should register 170 degrees F, but basically, what you want to do is to roast it until it's falling apart.
  • While the pork is roasting, make the barbecue sauce. Combine the vinegar, mustard, ketchup, brown sugar, garlic, salt, cayenne, and black pepper in a saucepan over medium heat. Simmer gently, stirring, for 10 minutes until the sugar dissolves. Take it off the heat and let it sit until you're ready for it.
  • When the pork is done, take it out of the oven and put it on a large platter. Allow the meat to rest for about 10 minutes. While it's resting, deglaze the pan over medium heat with 3/4 cup water, scraping with a wooden spoon to pick up all of the browned bits. Reduce by about half. Pour that into the saucepan with the sauce and cook 5 minutes.
  • While the pork is still warm, you want to "pull" the meat: Grab 2 forks. Using 1 to steady the meat, use the other to "pull" shreds of meat off the roast. Put the shredded pork in a bowl and pour half of the sauce over. Stir it all up well so that the pork is coated with the sauce.
  • To serve, spoon the pulled pork mixture onto the bottom half of each hamburger bun, and top with some slaw. Serve with pickle spears and the remaining sauce on the side.
  • Combine the cabbage, carrots, red onion, green onions, and chile in a large bowl. In another bowl, stir together the mayonnaise, mustard, vinegar, lemon juice, and sugar. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with the celery seed, hot sauce, salt, and black pepper. Chill for 2 hours in the refrigerator before serving.

2 ½kg boneless pork shoulder, skin removed
3 tbsp olive oil
2 tsp Spanish paprika (pimentón)
2 tsp mustard powder
1 tsp garlic salt
1 tsp onion salt
1 tbsp liquid smoke (optional, see tip, below)
16 brioche buns (see 'goes well with')
Tangy cabbage slaw, homemade chipotle molasses BBQ sauce (see recipes in 'goes well with') and sweet-and-sour pickled cucumbers from a jar, sliced

Steps:

  • Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
  • Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper with the liquid smoke, if using. Brush all over the meat.
  • Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
  • Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.
  • Skim off the fat from the juices. Mix 125ml of the juices with 4 tbsp BBQ sauce (see recipe in 'goes well with') and pour over the meat. Keep warm until serving, or reheat.
  • To assemble, pile the meat into the halved brioche buns, spoon over the BBQ sauce, top with coleslaw and pickles, and sandwich together.

my niece requested pulled pork for her Sweet 16 Party, so of course I made it for her. Not a complicated recipe, but it does take time and patience. It helps if you have an electric roaster that has a temperature setting, plus a regular crock pot would not fit all of the meat in it at one time.

10 pound(s) pork loin, boneless
1/4 cup(s) adobo powder
1 - onion
- water to cover
- bbq sauce

Steps:

  • Remove as much fat as you can from the back of the loin using a large knife. I find that it is almost like peeling it off. Cut pork loin into 2 inch thick pieces that resemble a pork chop. Place in medium size electric roaster.
  • sprinkle Adobo Seasoning over meat. Peel onion, cut in half and place in roaster. Cover with water. The amount will be different depending on how much meat you have and how big of a roaster you have.
  • cook on 150 to 200 degrees for 15 hours, making sure that it stays covered with water. This is a long time to cook but cooking it on this low of a temperature makes it moist and tender.
  • remove and discard onion. Remove meat from roaster, place in large bowl with a lid and refrigerate several hours or overnight. Discard all liquid.
  • Turn roaster back on to 150 degrees. Use hands or fork to shred pork, removing as much fat as you can again at this point to keep the grease level down in our finished product.
  • Cover with BBQ Sauce, personally I like Sweet Baby Ray's sauce that you can find in the institution size at Walmart, Meijer, or Sam's Club. I think I used about half of the bottle in this dish. Make sure to stir well to get everything covered.
  • cook for 5 to 10 hours longer to cook the flavor through the meat. You can add more BBQ Sauce at any time if you feel it is necessary. Make sure you stir regularly and keep an eye on it so the sauce doesn't burn on the sides of the pan.
  • Get ready for your party, turn roaster down to the lowest setting which will not be much lower than what you have been cooking it on. Serve with Hamburger Buns or other delicious breads. This is also very good by itself for those that do not eat breads.

1/4 cup packed dark brown sugar
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon mustard powder
1/2 teaspoon ground allspice
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
4 pounds boneless pork shoulder, trimmed and cut into 4-inch pieces
1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, chopped
1 tablespoon tomato paste
2 cups low-sodium chicken broth
1/2 cup ketchup
1/4 cup apple cider vinegar
7 hamburger buns or potato rolls
Coleslaw and pickle slices, for serving

Steps:

  • Mix the brown sugar, chili powder, cumin, mustard powder, allspice, cayenne, 1 teaspoon salt and 1/2 teaspoon black pepper in a bowl. Rub half of the mixture all over the pork; transfer to a large resealable plastic bag and refrigerate 1 to 4 hours.
  • Preheat the oven to 350 degrees F. Heat the vegetable oil in a large Dutch oven over medium heat. Add the pork and cook, turning occasionally, until browned on all sides, about 8 minutes; remove to a plate.
  • Add the onion, garlic, 1 teaspoon salt and a few grinds of black pepper to the pot; cook, stirring, until the onion is softened, 5 minutes. Add the tomato paste and the remaining spice mixture; cook, stirring, 2 more minutes. Stir in the chicken broth, ketchup, vinegar and 2 cups water. Tear 1 bun into pieces and add to the pot. Return the pork to the pot and bring to a simmer.
  • Cover the pot and transfer to the oven. Cook until the pork is very tender, about 2 hours. Uncover and continue cooking until the sauce thickens slightly, about 20 more minutes. Shred the pork with 2 forks, tossing to coat in the sauce. Serve on buns with coleslaw and pickles.

The easiest pulled pork recipe you'll ever make. No tricky measurements involved, minimal ingredients and a mouth-watering smoky barbecue result

2 tsp smoked paprika
2 tsp ground cumin
2 tsp pepper
2 tsp brown sugar
1 tsp salt
2 medium mugfuls of cider
boneless shoulder of pork (about 2.5kg)
a mugful of a good smoky barbecue sauce
soft white rolls
coleslaw (see 'Goes well with...' below)

Steps:

  • Mix together 2 tsp each smoked paprika, ground cumin, pepper, and brown sugar, plus 1 tsp salt. Rub over the 2.5kg boneless shoulder of pork.
  • Put the pork in a big casserole dish, skin-side up, and pour in 2 medium mugfuls of cider.
  • Cover with a lid and cook in the oven at 150C/130C fan/gas 2 for anywhere between 4 and 8 hrs until falling apart. Check every few hours in case it gets dry - if it does, add another mugful of cider.
  • Take it out of the oven and put the meat in a big dish, leaving the liquid in the casserole.
  • Cut the skin off, then shred the meat using two forks. Ditch any fatty bits, and skim any excess fat off the surface of the sauce.
  • Add a mugful of a good smoky BBQ sauce to the casserole, mix it in, then ladle some into a bowl for dipping.
  • Put the pulled pork back in the casserole with the juices so it stays moist. Season to taste. Can be made one day ahead.
  • Serve in soft white rolls with coleslaw and the bowl of juices on the side for 'French dipping' the sandwich while you're eating.

My brother created this recipe a few years ago. It's great for family gatherings, games days, or make-ahead meals. Many of the ingredients (garlic, chili powder, worcestershire) are easily adjustible, so feel free to modify to your particular taste. NOTE: This recipe does not resemble - nor was it intended to resemble - the style of pulled pork made in North Carolina.

1 (3 lb) pork roast, trimmed of all fat
2 cups onions, chopped
1/2 cup brown sugar, packed
1/4 cup white vinegar
6 ounces tomato paste (small can)
1 1/2 tablespoons chili powder (the hot stuff. Chipotle works well, too)
1 teaspoon dry mustard
2 teaspoons Worcestershire sauce
1/4 cup water
2 teaspoons salt
3 garlic cloves (add or subtract to your heart's content)
pepper
8 -12 kaiser rolls
horseradish
1 cup shredded cheddar cheese

Steps:

  • Add all ingredients EXCEPT PORK to the slow cooker.
  • Divide pork into quarters.
  • In a heavy-bottomed pan over medium-high heat, sear pork on all sides.
  • Add the pork to the slow cooker and mix with the sauce.
  • Cook for 8 hours on low.
  • After cooking time has completed, use two forks to pull the pork apart. If you are unable to shred the pork, it isn't fully cooked yet.
  • Stir mixture to ensure all pork is evenly coated.
  • Spread horseradish on bottom half of bun, add portion of pork, and top with shredded cheddar.
  • EAT!

3 -4 lbs boneless pork roast (shoulder or butt)
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon paprika
1 medium green bell pepper, sliced (optional)
1 (18 ounce) jar barbecue sauce
1/2 cup packed brown sugar
1 medium onion, sliced
sandwich buns or cooked rice

Steps:

  • Combine all spices in a bowl and rub onto roast. I sometimes let my roast marinade in the rub over night.
  • Place pepper & onion into slow cooker, add roast. I don't use the green pepper.
  • Combine sauce & brown sugar and pour over meat. Cover and cook on LOW 8-10 hours. Or until you can shred the meat easily with two forks. I normally cook mine 15-20 hrs in crockpot but it should be done much sooner than that.
  • Serve on Buns or over rice.

1 large onion
3 -4 garlic cloves
1 cup white vinegar
1 cup cider vinegar
1 tablespoon mustard powder

1 tablespoon Worcestershire sauce

  • Saute chopped onion and garlic in butter until soft.
  • Add all seasoning ingredients to large pot and boil gently for 30 minutes.
  • Add large cubes of pork meat (remove as much fat as possible) and simmer for 3 hours or until meat is tender.
  • Remove meat from sauce and cool.
  • Shred pork with your fingers or two forks.
  • Strain remaining liquid and add 1/2 cup or so of your favorite BBQ Sauce, if desired.
  • Add shredded pork back to sauce and re-heat.
