LEMON-BUTTER SNOW PEAS
A handful of ingredients and a microwave are all our home economists needed to create this terrific treatment for fresh snow peas. A bit of lemon juice, some mince garlic and a dash of Italian seasoning make it a perfect addition to any meal.

- In a microwave-safe dish, combine the snow peas, water and garlic. Cover and microwave on high for 3-4 minutes or until crisp-tender; drain. Combine the butter, lemon juice and Italian seasoning. Drizzle over peas; toss to coat.

MICROWAVE GINGER-SOY FLOUNDER WITH SNOW PEAS
Fish and vegetables cook beautifully in the microwave, making it the perfect appliance for healthy dishes like this one. Here, delicate flounder filets cook gently and evenly on a bed of earthy shiitake mushrooms. While the fish rests outside the oven to finish cooking, you have time to cook the snow peas quickly, so they stay crisp and bright green.

- Mix together the soy sauce, mirin, sesame oil, ginger and Sriracha.
- Toss the shiitakes and radishes in a microwave-safe 8-by-8-by-2-inch baking dish. Place the fillets on top in a single layer. Pour the soy sauce mixture over the fillets. Cover tightly with plastic wrap; make a small slit in the center with the tip of a paring knife to vent excess steam. Microwave on high (at 100 percent power) until the fillets are opaque white, 4 minutes in an 1,100-watt oven or 6 minutes in a 700-watt oven. Let stand, covered, for 2 minutes to steam and finish cooking gently.
- Meanwhile, place the snow peas in a microwave-safe medium bowl. Cover tightly with plastic wrap; make a small slit in the center. Microwave on high (at 100 percent power) until the snow peas have turned bright green but are still crisp, 1 1/2 minutes in an 1,100-watt oven or 2 1/2 minutes in a 700-watt oven. (When removing the plastic wrap, be careful to avoid the hot steam.)
- Divide the snow peas between two plates. Top with the shiitakes, radishes and fillets. Drizzle any sauce left in the baking dish over the fish. Squeeze fresh lemon juice over the fillets, and garnish with scallions. Serve with brown rice.

- Place snow peas in covered casserole, or other microwave-safe dish.
- Add soy sauce and sesame oil and toss to cover.
- Microwave covered for 3-4 minutes (or until snow peas are tender crisp). If cooking fewer servings, start with 2 minutes.

- In a microwave-safe bowl combine the oil, the butter, the onion, the scallions, and the gingerroot and microwave the mixture at high power (100%) for 2 minutes, or until the onion is softened. Stir in the rice, stirring until it is coated with the oil mixture, add the broth, and microwave the mixture, covered with microwave-safe plastic wrap, at high power (100%) for 5 minutes. Microwave the mixture at medium power (50%) for 12 to 15 minutes, or until all the liquid is absorbed and the rice is tender. Uncover the pilaf carefully and stir in the snow peas. Let the pilaf stand, covered, for 5 minutes and stir in the toasted sesame seeds.
