"I've had this recipe for years and usually made it with chicken breasts. Just recently, I started using rotisserie chicken from the store cut into strips. Very quick!" notes Barbara Hunt of Nipomo, California.

4 whole pita breads
2 tablespoons olive oil
1 medium ripe avocado, peeled and pitted
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon hot pepper sauce
3/4 pound rotisserie chicken, cut into strips
1 medium tomato, chopped
2 cups shredded Monterey Jack cheese

Steps:

  • Brush one side of each pita bread with oil. Place on an ungreased baking sheet. Bake at 350° for 12-15 minutes or until browned and crisp. , Meanwhile, in a small bowl, mash avocado with the lemon juice, salt, garlic powder and hot pepper sauce. Spread over pitas. Layer with chicken, tomato and cheese. , Bake for 5-6 minutes or until cheese is melted.

2 tablespoons olive oil
1 avocado, peeled and pitted
1 tablespoon lime juice
1 teaspoon cilantro, minced
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon hot sauce
3/4 lb rotisserie-cooked chicken, skin removed cut into strips
1 medium tomatoes, chopped
2 cups monterey jack cheese, shredded

Steps:

  • Brush one side of each pita with olive oil. Bake on cookie sheet 350 degrees 7 minutes until golden and crisp.
  • Combine mashed avocado, lime juice, cilantro, salt, garlic powder and hot sauce until well blended. Spread even layer over each of the 4 pitas.
  • Top each pita with chicken, tomato and cheese. Bake for 5 minutes or until cheese is melted and enjoy.

1 pound shredded, cooked chicken breast meat
¼ cup mayonnaise
¼ cup plain Greek yogurt
1 medium avocado, chopped
1 stalk celery, diced
2 tablespoons freshly squeezed lime juice
2 tablespoons chopped green onions
1 tablespoon garlic powder
1 teaspoon chopped fresh cilantro
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Mix chicken, mayonnaise, Greek yogurt, avocado, celery, lime juice, green onions, garlic powder, cilantro, salt, and pepper together in a large bowl until well combined. Cover and refrigerate for at least 30 minutes to let the flavors blend together.

Steps:

  • Toss peppers and onions together in bowl. Set aside.
  • Spray small frying pan with non-stick cooking spray, cook garlic and chicken strips until thoroughly heated.
  • For each pita half, fill with layer of chicken, 2 slices of cheese and 1/4 cup pepper mixture. Cover loosely.
