Originally the Mexican Martini was just a large margarita in Austin, Tex. But the presentation calls for the margarita to be served in a martini glass, with olives on a spear. Because it is about twice as large as a regular drink, customers are usually given the cocktail shaker and invited to pour it themselves.

Steps:

  • Wet half the lip of a martini glass and dip it in salt. Chill the glass. Pour the liquid ingredients into a cocktail shaker and fill with ice. Shake vigorously for 10 seconds. Strain into the glass. Garnish with olives on a spear.

This is a sweet, creamy martini style sipper. Patron XO Cafe is a coffee flavored liquor made with tequila. Really quite tasty. I got a bottle as a gift from a wonderful friend and have been trying out some different drinks. The original recipe called for half and half but I find that too heavy most of the time and I enjoyed it better with milk. Don't leave off the cinnamon sugar, it really adds to the flavor of the drink. (***** Zaar wouldn't let me just call it Patron XO Cafe so I had to call it coffee flavored tequila.) Cheers!!!

4 limes, juiced
coarse salt
2 jalapeno-stuffed green olives
2 (1.5 fluid ounce) jiggers premium tequila
1 (1.5 fluid ounce) jigger orange liqueur
1 (1.5 fluid ounce) jigger sweetened lime juice
½ teaspoon superfine sugar
crushed ice

Steps:

  • Moisten the edges of two martini glasses with a little lime juice, and then dip moistened edges into coarse salt. Place an olive in each glass.
  • Pour remaining lime juice into a cocktail shaker, and then add tequila, orange liqueur, sweetened lime juice, and sugar. Fill shaker with ice, shake vigorously, and strain into prepared glasses.

Chocolate Chipotle Powder, recipe follows
1 1/2 ounces dark chocolate liqueur
1 1/2 ounces chocolate vodka
1 1/2 ounces tequila (preferable 100 percent agave reposado)
1 1/2 coffee flavor liqueur (recommended: Kahlua)
2 tablespoons high quality cocoa powder
1 tablespoon ground chipotle (dried, smoked jalapenos)
1 tablespoon ground pepitas (toasted pumpkin seeds)

Steps:

  • Spread the Chocolate Chipotle Powder out on a large plate. Rim 2 (8-ounce) martini glasses by rolling the edge of each glass on a clean wet sponge, then rolling the edge over the powder. Tap the glass gently to knock off the extra powder. Pour the rest of the ingredients into a cocktail shaker filled with ice and shake vigorously until the outside of the shaker is frosty. Strain immediately into the glasses and serve.
  • Fold the ingredients together slowly and carefully so as not to knock the powder into the air as the chipotle powder can burn your nose and eyes.

1/4 cup water
1/4 cup granulated sugar
1/2 lime, cut into wedges
Chile-lime powder (recommended: Tajin), or salt
2 cucumbers, peeled, thinly sliced
4 cups water
3 tablespoons fresh lime juice
1/4 cup vodka
Ice

Steps:

  • In small saucepan, bring the water and sugar to a boil over medium high-heat. Simmer until the sugar has dissolved completely. Set aside to cool.
  • Put the chile-lime powder on a small plate. Using the lime wedge, moisten the rims of the martini glasses. Invert the martini glasses into the chile-lime powder, to coat the rims.
  • In a blender, combine the simple syrup, cucumber, water, and lime juice until smooth. Strain the mixture into a pitcher. Add the vodka and mix well. Fill a martini shaker with ice and add about 1 cup of the prepared cucumber mixture. Shake well and serve.
