BARBECUE PORK BURGERS

Barbecue Pork Burgers image

These burgers take their inspiration from barbecued pulled pork, so it's no surprised that the patties themselves are made with chopped red onion and barbecue sauce.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes     Ground Pork Recipes

Time 35m

Number Of Ingredients 6

1 1/2 pounds ground pork
1 small red onion, minced, plus slices for serving
3/4 cup store-bought or homemade barbecue sauce
Coarse salt and ground pepper
Vegetable oil, for grates
4 soft onion rolls, split horizontally

Steps:

  • Heat grill to medium-high. In a medium bowl, place pork, minced onion, 1/4 cup barbecue sauce, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat (which would make burgers dense).
  • Gently form meat into 4 equal-size patties, 4 inches in diameter and 1 inch thick. With thumb, make a 1/2-inch-deep indentation in the center of each (this helps keep burgers flat during grilling).
  • Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper; grill until cooked throughout, 5 to 8 minutes per side.
  • Serve on onion rolls (toasted on grill, if you like), with sliced onion and remaining barbecue sauce.

CHEF JOHN'S PULLED PORK BBQ

Chef John's Pulled Pork BBQ image

Use your favorite dry rub and barbeque sauce to make this succulent pork. A little trick I like is to put 2 ramekins with liquid smoke flavoring in with the meat and roast it slowly. Do your patriotic American duty and serve this on the cheapest, lightest white hamburger buns you can find.

Provided by Chef John

Categories     Main Dish Recipes     Pork     100+ Pulled Pork Recipes

Time 12h15m

Yield 12

Number Of Ingredients 8

3 tablespoons dry barbeque rub, or more as needed
1 (3 1/2) pound bone-in pork shoulder blade roast
½ teaspoon liquid smoke flavoring, divided
1 cup water, divided
¾ cup barbeque sauce, or as needed
salt and freshly ground black pepper to taste
12 soft white hamburger buns
¾ cup barbeque sauce, divided

Steps:

  • Preheat oven to 210 degrees F (100 degrees C).
  • Sprinkle dry rub generously on all sides of pork roast and place meat into a heavy pan or Dutch oven.
  • Pour 1/4 teaspoon of liquid smoke flavoring into each of two 6-ounce ramekins; fill ramekins with 1/2 cup water each. Place ramekins into the Dutch oven on either side of the roast. Place lid onto Dutch oven.
  • Roast pork in the preheated oven until very tender, 12 hours. Remove roast from Dutch oven, place onto a work surface (such as a cutting board), and separate the meat from the bone using your fingers. Discard any large pieces of fat.
  • Roughly chop pork with a large knife or cleaver; drizzle with 3/4 cup barbeque sauce. Season with salt and black pepper.
  • Spread about 1 tablespoon barbeque sauce onto each bun and pile pork on buns to serve.

Yield Makes 4 servings

Number Of Ingredients 11

  • Stir together barbecue sauce, cayenne, 1/4 teaspoon salt, and remaining tablespoon vinegar until combined well.

  • Oil grill rack, then grill patties, covered only if using a gas grill, turning over occasionally, until just cooked through, about 6 minutes total. Brush top of each patty with 1 tablespoon barbecue sauce mixture, then turn over and grill 30 seconds. Brush top of each patty with 1 tablespoon barbecue sauce, then turn over and grill 30 seconds more.
  • Brush cut sides of rolls with remaining 1/4 cup barbecue sauce, then sandwich patties and coleslaw between rolls.

BBQ PORK BURGER

BBQ Pork Burger image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 3h45m

Yield 4 burgers

Number Of Ingredients 24

1 cup BBQ Pulled Pork, recipe follows
1/4 cup BBQ Sauce, recipe follows
2 pounds ground beef, 80/20 blend
Kosher salt and ground pepper
1 tablespoon bacon fat
4 slices Wisconsin Cheddar
2 tablespoons butter, softened
4 kaiser buns
1 cup coleslaw
1 large tomato, sliced
1 red onion, cut into rings
1 pound Boston butt
2 tablespoons Cajun spice
3 cups pork or chicken stock
1/4 cup red wine vinegar
1/2 cup medium-diced carrots
1/2 cup medium-diced celery
1/2 cup medium-diced onions
1 cup ketchup
1/2 cup stone-ground mustard
1/2 cup Worcestershire sauce
1/3 cup light brown sugar
1/3 cup rice wine vinegar
2 tablespoons BBQ rub or Cajun spice

Steps:

  • Mix the BBQ Pulled Pork with the BBQ Sauce and heat in a small pan over medium heat, ensuring not to burn.
  • To prepare the patties, sprinkle the ground beef with 1 tablespoon salt and 1 tablespoon pepper. Mix well. Divide the beef into 4 burgers to create 5-inch-wide, even burgers. Do not over mix or squish, because this will cause the burgers to be tough.
  • To cook the burgers, ladle the bacon fat on a hot flat top grill or in a saute pan over medium-high heat. Once the bacon fat is hot, add the burgers and cook for 4 minutes on the first side, and then flip and repeat the cooking. This should yield a medium burger. For higher cook temperature, finish in a 400 degree F oven to desired temperature. Once cooked to desired temperature, top with the BBQ pork and a slice of cheese. Allow to melt for 1 minute.
  • During this time, spread the butter on the buns. Then place the buttered side on the flat top or in the pan to brown the butter; this will create "sealed" bread to build the burger on.
  • Begin assembling the burger. Take the buns off the grill and place 1/4 cup slaw on each cooked bottom bun, then a tomato slice, 2 red onions and the burger patty. Finish with the top bun. A skewer can be placed to hold the burger together.
  • To prepare the pork, preheat the oven to 275 degrees F. Then sprinkle the pork with the Cajun spice and place in a 6-inch-deep casserole or roasting dish. Next, add the stock, vinegar and vegetables. Cover with foil and place in the oven for 3 hours. Once cooked, remove the pork and allow to cool. Then pick or shred the meat.
  • In a bowl, whisk together the ketchup, mustard, Worcestershire sauce, sugar, vinegar and spice. Then, in a small saucepan over low heat, cook for 10 to 12 minutes to blend the flavors, stirring throughout. Once cooked, remove from the heat and hold. The BBQ sauce yields 2 cups.

  • The marinade is an important step in the preparation of a pulled pork. If the rub is responsible for the seasoning from the outside, then the marinade provides the special taste from the inside. In principle, you need acidity, sweetness, spice and some liquid to dilute. In our recipe, mix the apple juice and water together and heat slightly so that the water and salt dissolve well in it. Finally, add the Worcestershire sauce and stir. Pit the well-mixed marinade with the marinier syringe, piercing the syringe deep into the meat every two inches and squeezing in a good inch of the liquid. Repeat until the whole piece of meat has been processed. Then pat the meat dry.

  • Using clean hands, mix together the ground chuck, pulled pork, and bacon until everything is evenly distributed.
  • For the most uniform burgers, line a baking sheet with parchment paper. Add 5 ounces of the meat mixture to a ring mold and gently press it into the edges of the mold forming a uniformly thick burger patty. Gently pull the ring mold straight up and tap down any edges that come up with it. Replace the ring mold on the parchment next to the burger and form another until all the meat mixture has been pressed into patties. Don't despair if you have a little meat that doesn't make a full burger. That can be your test patty and cook's tax. Eat that bad boy!
  • Place the tray with the burgers in the refrigerator while you preheat the grill to MEDIUM HIGH heat. After cleaning the hot grill, gently place the burgers over direct heat and sprinkle with kosher salt. Keep a spray bottle of water handy for flare-ups. Do not move the burgers once you've placed them on the grill until the brown (cooked) area goes at least halfway up the burger and you can easily slide your spatula under them, about 4 minutes. If there are flames flaring up because of fat from the burger, give them a little spritz with water. That should help long enough to cook the burger to the point where it will turn more easily. Flip the burgers carefully and continue grilling over MEDIUM HIGH heat until there are grill marks on the underside of the burger. Transfer the burgers over to one side of the grill and shut off the burners immediately under the burgers, turning the remaining burners onto MEDIUM LOW heat. This means your burgers will finish over indirect heat. When the int

If you’re unsure about the seasoning, form a small patty from a tablespoon of the mixture and fry it so you can taste it. (That’s what I did!) Adjust the salt, pepper and nutmeg as needed.
  • Divide the mixture into eight portions and form into patties. I make them fairly think but quite large (4–5 inches) in diameter because they'll swell up during cooking.
  • Over medium high heat, melt half of the butter in a large skillet. Add four of the patties and brown them well on both sides. At this stage, you’re not cooking them through. BACKYARD BBQ PARTY GUIDE AND FOOD SUGGESTIONS

From thespruceeats.com
  • Planning Your Cookout. The BBQ is a great American tradition, where food is cooked outside, shared, and eaten in a most casual of fashions, whether a gathering in a backyard, a park, the beach—even a parking lot or a rooftop.
  • Steaks. Because of their hefty price tag, steaks are not at every BBQ party, but people sure do get excited when they see cuts of beef sizzling on the grill.
  • Burgers. When cooking burgers on the grill, the golden rule is to leave them alone. Don't flip them over and over, and definitely don't squash them with the spatula—when you press down on the meat, you're pressing out the juiciness.
  • Pork. Real BBQ is a regional thing. What flies in North Carolina (some form of pork) won't look even remotely familiar in Texas, where beef brisket is usually slow-cooking on the grill.
  • Hot Dogs and Sausages. Hot dogs are always a favorite at BBQ parties, but after the first few cookouts of the season, they can get a bit tiresome. For a change of pace, pop bratwurst on the grill, set up a condiment station, and a basket of buns, and call your work over.
  • Chicken. Chicken is usually a safe bet when it comes to feeding a crowd, but too often grilled chicken gets overcooked (for fear of serving it uncooked) and dry.
  • Kebabs. Kebabs provide a great way to feed a crowd with minimal fuss (especially if you have some small hands around that will help thread the skewers).
  • Fish. Something about live fire and fresh fish is magical. While a whole side of salmon on the grill is a visually stunning delight and easy to cook (just put it skin-down, cover the grill, and remove when cooked—there is absolutely no need to flip it!)
  • Shellfish. You may not think of grilling shellfish, but this cooking method is actually ideal for this type of seafood. Their shells protect their sweet insides from the heat, the fire adds flavor, and cooking them outside minimizes the mess.
  • Coleslaw. A ubiquitous side dish on any barbecue buffet table, coleslaw is classically made with hearty green cabbage and a creamy dressing. When eaten alongside grilled meats, it seems as if it were made for summertime cookouts.

The 2 for $5 deal includes other choices like Chicken sandwich (spicy or original) and Big Fish (spicy or original). It seems like a reasonable fast food deal where each sandwich is only $2.50.
