ITALIAN BARBECUED CHICKEN WITH POLENTA

Steps:
- Preheat oven to 400 degrees F.
- Season the chicken liberally with salt and pepper, poultry seasoning, and grill seasoning. Heat 2 tablespoons olive oil in a medium skillet and brown the chicken a few minutes on each side to put some of it's flavor and drippings into the pan then transfer to oven and roast 15 minutes more or until juices run clear. Meanwhile, add 1 more tablespoon olive oil to the pan and cook pancetta or bacon, if using, until crisp. Add onions, garlic and rosemary, cook 5 minutes then add the vinegar, sugar, Worcestershire, tomato sauce and 1/2 cup chicken stock, reduce heat to low and let sauce simmer 5 minutes more.
- Bring remaining 1 1/2 cups stock and milk to a boil, whisk in polenta and season with salt and pepper. Whisk polenta 2 to 3 minutes until it thickens, stir in butter and cheese, remove from heat.
- Remove chicken from oven and turn in barbecue sauce. Fill shallow bowls with polenta Top with chicken, spoon extra sauce over chicken and garnish with some torn basil leaves.
BBQ CHICKEN SKEWERS

- If you are using wooden skewers, it is important to soak them first. You can soak them overnight or at least 30 minutes before making the kebabs.
- In a small bowl mix together BBQ seasonings.
- Season chicken with BBQ seasonings. Let the mixture sit for 10 minutes.
- To a skewer, rotate adding in chicken, peppers, and onions, repeat until the skewers have been filled about 1/2 way (about 3-4 pieces of each).
- Preheat a grill to 400º Fahrenheit.
- Add skewers to the grill and cook for 10-15 minutes, brushing with olive oil several times during grilling. Turn the skewers occasionally and grill until temperature reaches 165ºF internally.
- Serve warm.

CHICKEN CHASSEUR (HUNTER-STYLE CHICKEN) WITH CREAMY POLENTA WITH GRUYERE AND PARMESAN
Steps:
- Heat a few tablespoons of oil in a Dutch oven over high heat. Sprinkle the chicken pieces on both sides with salt and pepper. Place the chicken in skin-side down and cook until golden brown. Turn the chicken over and brown the other side. Remove the chicken to a baking sheet or plate and set aside.
- Add the mushrooms, season with salt and pepper and saute until golden brown. Remove the mushrooms from the pan. Add a touch more canola oil and add the shallots and cook for 30 seconds. Add 1 tablespoon of the tomato paste and cook for 1 to 2 minutes. Add the white wine and cognac and reduce for 4 to 5 minutes. Add the stock and bring to a boil. Add the mushrooms and nestle the chicken into the sauce, skin-side up. Reduce the heat to a simmer, cover and cook until the chicken is cooked through, about 15 minutes.
- Once the chicken is cooked, remove it from the pan and put on a plate. Taste the sauce. Add 1 more tablespoon tomato paste and whisk to combine. Add the butter to enrich the sauce. Check the seasoning. Add the tarragon and stir to combine.
- Serve the sauce with the chicken and some of the Creamy Polenta with Gruyere and Parmesan. Garnish with a couple sprigs of chervil.
- Add the stock to a medium saucepan and bring to a boil over high heat. Add the polenta in a fine stream, whisking constantly with a wire whisk. Once all the polenta has been added, reduce the heat to low and cover the pan. Stir the mixture, using a wooden spoon, every 5 minutes and continue cooking until all the liquid has been absorbed and the mixture is very creamy, 10 to 15 minutes.
- Remove from the heat and stir in the heavy cream and cheeses until combined. Taste and season with salt and pepper.
CREAMED CHICKEN WITH CORN AND BACON OVER POLENTA
Steps:
- Cook bacon and chicken: Cook bacon in a large heavy skillet (preferably cast-iron) over moderate heat, stirring, until crisp. Transfer bacon with a slotted spoon to paper towels, then pour off all but about 1 1/2 tablespoons fat from skillet.
- Pat chicken dry and season with salt and pepper. Add to skillet with bacon fat and cook over moderately high heat, turning several times, until nicely crusted and just cooked through, 8 to 10 minutes. Transfer to a plate and cool. Tear chicken into bite-size pieces.
- Prepare corn and sauce while chicken is cooking: Gently simmer corn and milk in a heavy saucepan until corn is crisp-tender, about 5 minutes. Pour through a sieve into a bowl and reserve corn and milk separately.
- Melt butter in same saucepan over moderately low heat. Add flour and cook roux, stirring, 3 minutes. Gradually whisk in cream, then reserved warm milk, pepper, and salt. Bring to a boil, whisking, then simmer, whisking, 3 minutes. Stir in tomatoes, chicken, and corn. Keep warm, covered, over very low heat.
- Make polenta: Bring water with salt to a boil. Gradually whisk in polenta and cook over moderately high heat, whisking, 5 minutes. Stir in cheeses.
- Divide polenta among 6 shallow bowls. Stir basil into chicken mixture and spoon over polenta. Sprinkle with bacon.
INDOOR BBQ CHICKEN SKEWERS
When the weather keeps you from your outdoor grill, this is a recipe that will remind you of warmer days ahead! Straight from America's Test Kitchens, the recommended brand of store-bought barbecue sauce is Bull's-Eye, although you can certainly mix up your own favorite recipe. You'll need four 12" skewers.

- Adjust oven rack to highest position (about 5 inches from broiler element) and heat broiler. Set wire rack over rimmed baking sheet.
- Combine sugar, paprika, cumin, cayenne, and salt in large bowl. Add chicken to toss and coat.
- Thread seasoned chicken onto four 12-inch metal skewers.
- Whisk 3/4 cup barbecue sauce and 2 tablespoons vinegar in small bowl.
- In second bowl, combine sour cream, cilantro, remaining barbecue sauce, and remaining vinegar; set aside for serving.
- Brush each kebab with barbecue sauce-vinegar mixture.
- Broil until lightly browned, 5-7 minutes.
- Flip kebabs, brush with remaining sauce, and continue to broil until chicken is lightly charred and cooked through. 5-7 minutes.

- Place chicken breasts between 2 sheets of heavy plastic on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/4-inch thickness. Remove top sheet of plastic. Cut each chicken breast into strips. Roll up and thread on a skewer.
- Combine parsley, Dijon mustard, Parmesan cheese, basil, and garlic in a small bowl. Spread mixture over skewered chicken.
- Place chicken skewers on a baking sheet and cover with plastic wrap. Refrigerate until flavors combine, at least 2 hours.

- Preheat grill to medium heat.
- Combine the chicken, bbq sauce, salt, and pepper, stirring until evenly mixed.
- Threading one end of the bacon onto the end of a skewer. Add a piece of chicken, and weave the bacon around the chicken and back through the skewer, creating a wave pattern between the chicken. Move the bacon and the chicken down the skewer, repeating until the other edge of the bacon is threaded through.
- Repeat on the rest of the skewers with the remaining chicken and bacon.
- Grease the surface of the grill by rubbing the grates with tongs and an oiled paper towel.

BBQ CHICKEN POLENTA WITH FRIED EGG

- In a small saucepan, combine chicken, barbecue sauce and cilantro; heat through over medium heat, stirring occasionally., In a large skillet, heat 1 tablespoon oil over medium-high heat. Add polenta; cook until lightly browned, 2-3 minutes on each side. Transfer to a serving plate; keep warm., In same pan, heat remaining oil over medium-high heat. Add garlic; cook and stir 1 minute. - For chicken:
- Whisk onions, mustard, lemon juice, and garlic in medium bowl to blend. Using fingertips and leaving 1 side still attached, loosen skin on each chicken thigh. Lift skin flap on each and fold back. Spoon half of mustard seasoning atop thighs, dividing equally; spread to cover meat. Fold skin flap over to enclose seasoning and secure skin with metal pin. Sprinkle thighs with salt and pepper on both sides. Turn thighs, skin side up, and spread remaining mustard seasoning over skin. Transfer to small baking sheet. DO AHEAD: Chicken can be prepared 6 hours ahead. Cover and refrigerate.
- Prepare barbecue (medium-high heat). Preheat oven to 250°F. Brush grill rack generously with olive oil grill chicken until golden brown and cooked through, turning chicken occasionally and moving to cooler spot on grill if browning too quickly, 40 to 50 minutes. Transfer grilled chicken to another baking sheet; keep warm in oven while preparing polenta.
- For polenta:
- Bring 5 cups water to boil in heavy large saucepan over high heat. Gradually whisk in polenta, then 1 1/2 teaspoons coarse salt and sugar. Reduce heat to medium-low; simmer until polenta is tender, thick, and creamy, whisking often and adjusting heat to maintain gentle simmer, 25 to 30 minutes. Add corn kernels and cook, stirring constantly, until corn is tender, about 5 minutes. Mix in mascarpone cheese. Season polenta to taste with salt and pepper.
- Spoon polenta onto each of 6 plates. Top with grilled chicken and serve.
GRILLED POLENTA SKEWERS WITH BUTTER BASTED MUSHROOMS
From the June/July issue of "Everyday With Rachel Ray." These can be super fast and easy if you use premade polenta 'logs,' or make your own polenta cubes. (I like to make polenta with veggie stock instead of water and add all kinds of herbes, onions, garlic, diced sun dried tomatoes, etc. for extra pizzazz. After done cooking in a sauce pan, spread about an inch thick in a baking pan. Then chill and cut into cubes for this dish.) You are sure to thrill your vegetarian guests, and even the meat eaters will love this as a side. NOTE: after making a few batches this weekend, I find that the premade polenta holds together better if you either skewer the entire round (like a lollipop) or skewer the wedges so they lie flat (i.e. not through the big flat sides).

- Preheat grill to high.
- In a bowl, mix together butter, blue cheese, shallot and thyme.
- Slice polenta log into1 1/2 inch thick rounds. Then cut each round into four wedges.
- Thread 4 polenta wedges alternately with 3 shiitake mushroom caps onto skewers.
- Brush with olive oil and place on grill.
- Baste with butter mixture and grill until polenta is crisp, about 7 minutes.
- Flip, baste some more, and grill another 7-8 minutes.
