This is a popular Southeastern USA breakfast casserole that may be refrigerated overnight before baking the next morning.

6 eggs, beaten
6 slices ham, cubed
6 slices bread, cubed
2 cups milk
1 cup cheese (use grated lowfat for health)
salt and pepper (to taste)
1 teaspoon onion, minced
1/2 teaspoon dry mustard

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9" x 13" baking pan or dish.
  • Mix ingredients well.
  • Pour into greased baking pan or dish.
  • Bake for 45 minute.

8 eggs
1 tablespoon water
½ teaspoon salt
½ teaspoon pepper
2 tablespoons butter, softened, divided
6 (8 inch) whole wheat tortillas
2 cups shredded Cheddar cheese
1 (8 ounce) package Smithfield® Cubed Ham

Steps:

  • Scramble eggs with water, salt, and pepper in a medium bowl until well blended. Heat 1 tablespoon butter in a medium nonstick skillet over medium heat. Cook eggs, stirring frequently, until scrambled to desired consistency.
  • Spread 1 teaspoon of butter over 1 tortilla and place butter-side down in a medium nonstick skillet over medium heat. Sprinkle 1/3 cup cheese over entire tortilla. Add 1/2 cup scrambled egg and 1/3 cup Smithfield® cubed ham to one side. Cook 3 minutes or until the cheese is melted. Fold the plain cheese side over the filled side and flip the quesadilla. Cook an additional 2 minutes or until golden and toasted. Cut into 2 or 3 pieces.
  • Repeat with remaining ingredients to make 5 more quesadillas.

Tortilla chips and eggs are baked with pepper jack cheese, mild green chiles and fresh cilantro for an eye-opening breakfast casserole.

Cooking spray
4 cups lightly crushed tortilla chips
1/4 cup milk
1 teaspoon ancho chile powder
8 large eggs
Kosher salt and freshly ground black pepper
One 4-ounce can mild chopped green chiles
2 tablespoons chopped fresh cilantro, plus whole leaves, for garnish
1 cup shredded pepper jack cheese (about 4 ounces)
Sour cream, salsa verde and/or pickled jalapenos, for serving

Steps:

  • Preheat the oven to 375 degrees F. Lightly coat a rectangular 2-quart baking dish with cooking spray. Spread half of the chips in the bottom of the prepared baking dish.
  • Whisk together the milk, ancho chile powder, eggs and a pinch each of salt and pepper in a large bowl until well combined. Stir in the green chiles, cilantro and 1/2 cup of the pepper jack; pour into the baking dish. Bake until the casserole is set around the edges but a little loose in the center, 20 to 25 minutes.
  • Sprinkle the remaining chips over the casserole. Sprinkle with the remaining 1/2 cup pepper jack and continue to bake until the cheese is melted and the casserole is set in the center, about 10 minutes more. Let stand 10 minutes. Top with whole cilantro leaves, salsa verde and/or pickled jalapenos. Serve with sour cream.

2 cups cubed fully cooked ham
1/2 cup chopped green onions
10 flour tortillas (8 inches)
2 cups shredded cheddar cheese, divided
1 tablespoon all-purpose flour
2 cups half-and-half cream
6 large eggs, lightly beaten
1/4 teaspoon salt

Steps:

  • In a large bowl, combine ham and onions; place about 1/4 cup down the center of each tortilla. Top with 2 tablespoons cheese. Roll up and place seam side down in a greased 13x9-in. baking dish. , In another large bowl, combine the flour, cream, eggs and, if desired, salt until smooth. Pour over tortillas. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 25 minutes. Uncover; bake for 10 minutes. 1/4 medium red bell pepper, chopped
2 Tbsp shredded cheese
2 large eggs
1/2 fresh jalapeno, seeded and chopped (if desired)

Steps:

  • 1. Spray baking sheet with cooking spray, lay two tortillas down, top with peppers, ham an cheese, top with second tortilla, carefully crack egg over top.
