4 rosemary sprigs, leaves removed
4 garlic cloves , crushed
1 tbsp capers , finely chopped
3 anchovy fillets in oil, drained and finely chopped
2 tbsp olive oil
2 whole lemons
1 ½kg shoulder of lamb , on the bone
2 red onions , cut into wedges
small glass white wine

Steps:

  • Heat oven to 160C/140C fan/gas 3. Finely chop the rosemary, then mix with the garlic, capers, anchovies, olive oil and zest and juice of 1 lemon, reserving the used lemon halves. Make 3-4 slashes across the top of the shoulder, then rub the rosemary mixture all over the lamb.
  • Scatter the onion into the base of a large roasting tin, cut the remaining lemon in half, squeeze the juices into the tin, and place all the used lemon halves in the tin with the onions. Place the lamb on top and roast for 1 hr. Pour in the wine and roast for a further 3 hrs until the meat is really tender. Leave to rest for 15 mins then serve, pulled into chunks rather than carved, with any pan juices.

2 tablespoons minced garlic
3 anchovy fillets (more to taste)
1 1/2 cups white wine
1/2 cup stock

Steps:

  • Cut lamb shoulder into 2-inch cubes. Sprinkle with salt and pepper, and brown in a large skillet over medium-high heat; remove.
  • To the skillet, add shallot, garlic, and a few anchovy fillets; cook until fragrant. Add wine, stock or water and browned lamb. When the liquid boils, lower heat to a simmer, cover and cook until tender, 1 1/2 to 2 1/2 hours. Garnish: Parsley.

1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon paprika
¼ teaspoon cayenne pepper
4 (10 ounce) lamb shoulder chops
1 tablespoon olive oil
⅓ cup sherry vinegar
2 tablespoons white sugar
4 oil-packed anchovy fillets
1 ½ cups low-sodium chicken broth
2 teaspoons minced fresh rosemary
¼ teaspoon ground cinnamon
2 bunches breakfast radishes, rinsed and trimmed
5 fresh mint leaves, finely sliced
1 tablespoon cold butter

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Mix together salt, pepper, paprika, and cayenne pepper. Place lamb chops on a work surface; press seasoning onto both sides of lamb chops.
  • Heat oil in large oven-proof skillet over high heat. Brown lamb well on both sides, 3 or 4 minutes per side. Remove chops from pan; reduce heat to low. Add vinegar, sugar, and anchovies. Cook and stir, breaking up anchovies. Turn up heat to medium and continue stirring until mixture reduces to the consistency of syrup, about 3 minutes. Stir in chicken broth. Raise heat to high. Add rosemary and cinnamon; bring to a simmer. Transfer browned lamb chops to pan and place radishes among the chops. Cover.
  • Place skillet in preheated oven. Roast slowly for 1 1/2 hours; turn chops. Continue roasting until meat is just tender and is beginning to separate from the bone, about 1 1/2 additional hours. Turn chops again.
  • Raise oven temperature to 425 degrees F (220 degrees C). Remove cover from skillet. Roast until meat is falling off the bone and fork tender, 15 to 20 minutes. Remove skillet from oven.
  • Transfer lamb and radishes to serving platter. Place pan on stove over medium-high heat. Bring sauce to a simmer until it is slightly reduced and thickened, skimming off surface fat. Remove from heat. Add sliced mint and butter. Keep stirring until butter melts. Spoon sauce over lamb and radishes.

700g/1½lbs lean lamb - boneless leg, or neck fillet in chunks
2 tbsp seasoned flour
4 tbsp extra virgin olive oil
1 onion, peeled and roughly chopped
2 carrots peeled and in 2.5cm/1inch chunks
4 sticks celery, in 2.5cm/1in chunks
2 cloves garlic, peeled and crushed
300ml/ ½ pt beef stock
300ml/ ½ pt red wine
Salt and freshly ground black pepper
1 tbsp finely chopped flat leaf parsley
700g/1 ½ lbs potatoes
4 tbsp extra virgin olive oil
1 egg
225g/8oz leaf spinach
More extra virgin olive oil for drizzling

Steps:

  • Toss lamb chunks in seasoned flour, then shake off excess.
  • Heat 2 tbsp of olive oil in a pan and fry lamb chunks all over to brown. Do this in batches. Remove from pan with a slotted spoon and transfer to a flameproof casserole.
  • Add 2 tbsp more olive oil to the pan and fry onion to soften but not brown. Add to lamb. Next add carrots and celery and lightly brown. Add to lamb with garlic. Pour over stock and wine and bring to bubbling. Season with salt and freshly ground black pepper. Turn down to simmer, then cook over lowest heat for around 1 ¼ hours, or until lamb is tender. Sprinkle with parsley.
  • Meanwhile, cook potatoes in lightly salted boiling water until soft to the point of a knife. Mash with extra virgin olive oil and egg to fabulous creaminess. Season with freshly ground black pepper. Briefly toss spinach in a pan with a little salted water to wilt. Drain.
  • Serve lamb with mash and spinach on the side. Drizzle mash with more extra virgin olive oil.

4 lamb shanks, about 8 ounces each
Kosher salt and freshly ground black pepper
6 sprigs fresh thyme, plus 2 sprigs
2 sprigs fresh rosemary
1 lemon, zested in big strips
2 garlic cloves, halved
1/2 teaspoon whole cloves
2 cinnamon sticks, plus 2 sticks
1 teaspoon whole black peppercorns
2 bay leaves
1 tablespoon sugar
1 bottle full-bodied red wine, such as Cabernet Sauvignon
1/4 cup all-purpose flour
3 tablespoons olive oil
2 cups lamb or chicken stock
1 cup pearl onions, peeled
3 carrots, coarsely chopped
12 large green Spanish olives
12 dried apricots

Steps:

  • First off, you want to marinate the lamb shanks for a few hours to really penetrate the deep flavor; the wine also tenderizes the meat. Put the shanks in a large glass bowl and season with salt and pepper. Break up the thyme and rosemary with your hands to release the oils and toss them on top of the lamb. Add the lemon peel, garlic, cloves, cinnamon, peppercorns, bay leaves, and sugar. Pour in the bottle of wine, cover and refrigerate for 4 to 6 hours.
  • Line a few layers of paper towels on the counter. Pull the lamb shanks out of the wine marinade (reserving it for later), and lay them out on the paper towels, cover with more paper towels and pat the meat dry really well. Put the flour in a large shallow platter and season it with a fair amount of salt and pepper. Dredge the lamb shanks in the seasoned flour; tapping off the excess.
  • Preheat the oven to 350 degrees F.
  • Place a large Dutch oven or other heavy-bottomed pot over medium-high heat and add the oil. Sear the lamb shanks, turning carefully with tongs, so all sides are a brown caramel color. Drizzle with a little more oil if needed. Do this in batches if the shanks are big and look crowded in the pot. Strain marinade reserving the wine. Add the wine, remaining 2 sticks of cinnamon, remaining 2 sprigs of thyme and the stuff from the marinade. Cook until slightly reduced, about 5 minutes. Pour in the stock and add the onions, carrots, olives, and apricots; bring to a boil. Cover the pot. Place in the oven for 2 1/2 to 3 hours.
  • Transfer the lamb shanks to a large platter. Spoon the onions, olives, and apricots over them. Strain the braising juices and season with salt and pepper. Pour the sauce over the platter and serve with some crusty bread.

4 garlic cloves, whole
1 Spanish onion, coarsely chopped (medium)
1 large carrot, coarsely chopped
1 large stalk celery, coarsely chopped
3 anchovy fillets (optional)
1 cup dry red wine
3 cups low sodium chicken broth (or broth)
14 1/2 ounces plum tomatoes, drained and coarsely chopped
8 sprigs fresh thyme
honey, to taste
1/4 cup flat leaf parsley, finely chopped

Steps:

  • Preheat oven to 325 degrees F.
  • Heat the oil in a large dutch oven on high until it simmers. Pat lamb shanks dry with paper towels. Season meat with salt and pepper; brown on both sides, in batches, 4 minutes per side. Remote meat to a platter.
  • Reduce heat to low and cook garlic cloves until slightly soft, 10 minutes. Remove garlic to the plate with the meat. Increase heat to high, add the onion, carrot and celery to the pan and cook until soft and golden brown, 8 minutes. Add anchovies and cook for 1 minute. Add red wine and cook until almost completely reduced. Add chicken stock, tomatoes and thyme. Bring to a boil; season with salt and pepper. Return the meat, accumulated juices and the garlic cloves. Cover and transfer to the oven. Cook until meat is tender, 1-1/2 to 2 hours. Remove meat to a bowl; tent with foil.
  • Strain sauce through a mesh strainer and return liquid to the dutch oven. Cook over high heat until slightly reduced, 10 minutes. Season to taste with honey, salt, and pepper, and stir in the parsley.

4 3/4-inch-thick shoulder lamb chops (3 to 4 lbs)
5 large garlic cloves, smashed
2 Tbsps mixed chopped fresh herbs (such as oregano, marjoram and thyme) plus 4 whole sprigs thyme
Salt and pepper
1/4 cup flour, for dusting
3 Tbsps olive oil
4 large onions, sliced thick
4 large tomatoes, sliced thick
1 cup dry white wine
2 bay leaves
1 bunch parsley, stems removed and reserved separately, leaves finely chopped
3 large boiling potatoes, peeled and sliced thick

Steps:

  • Preheat oven to 275F.
  • Rub both sides of lamb shoulder chops with 1 to 2 garlic cloves, as needed. Rub with chopped herbs and season with salt and pepper. Dust both sides of chops with flour. In a large (10-inch) cast iron skillet, heat oil over high heat. When nearly smoking, add 2 lamb chops and sear, 4 minutes each side, until well-browned. Remove and repeat with remaining chops. Discard fat that has accumulated in pan.
  • In skillet layer onions, half of tomato slices and lamb chops. Top with remaining tomato slices and pour wine and 1/2 cup water over. Bring to a boil over medium-high heat. Add remaining 4 garlic cloves, bay leaves, thyme sprigs and parsley stems. Cover pan loosely with aluminum foil and roast for 3 hours.
  • Cover top with potato slices, pushing them into liquid so they are completely submerged. Cover pan, return to oven and cook 30 minutes or until potatoes are tender. Using a large spoon, remove excess liquid and any fat from stew to a small saucepan. Bring liquid to a boil over high heat and boil rapidly until thickened, 10 to 15 minutes. Before serving, broil lamb under a preheated broiler, 5 minutes or until potatoes are well-browned. Sprinkle with chopped parsley and serve with sauce.

25 g drippings
1 1/2 kg lamb, cubed
2 sprigs rosemary
4 sage leaves
3 garlic cloves, finely chopped
2 teaspoons plain flour
7 tablespoons white wine vinegar
2/3 cup white wine
4 anchovy fillets, salted

Steps:

  • Heat the drippings in a large casserole pan over a medium heat. When it is smoking hot, add the lamb and brown all over.
  • Add the herbs and garlic to the casserole and season with salt and pepper. Stir to coat everything in the fat.
  • Sprinkle the flour over the meat and cook over a high heat for a minute or two, being careful not to burn the garlic.
  • Add the vinegar and wine, and allow the liquid to bubble up, scraping up the bits from the bottom of the casserole.
  • Reduce the heat and simmer the lamb for about 40 minutes until the meat is tender.
  • Just before serving take a ladle of juices from the pan, and mash the anchovy fillets into it before pouring back over the lamb.

This is Nigel Slater's magical recipe for lamb shanks. Anchovies are the secret ingredient that utterly transforms the meat and its sauce.

2 x lamb shanks
freshly ground black pepper
1 tbsp olive oil
2 onions, roughly chopped
1 clove garlic, sliced
4 anchovy fillets, chopped
2 sprigs rosemary
2 bay leaves
250ml/8fl oz chicken or beef stock
250ml/8fl oz red wine
handful of fresh parsley, chopped

Steps:

  • Preheat the oven to 160C/300F/Gas 4.
  • Season the lamb shanks with the pepper. Brown them in a casserole with a little olive oil.
  • When the shanks are slightly browned add the roughly chopped onions and garlic. Chop up two of the anchovy fillets and add to the casserole. Tear in the rosemary and bay leaves. Then add the stock and the wine and bring to a simmer.
  • When simmering, put the lid on and bake in the oven for two hours, with a little turn of the shanks halfway through.
  • Remove the shanks to a serving dish and leave to rest in a warm oven.
  • Meanwhile tend to the sauce by adding two more chopped anchovies and a handful of chopped parsley. Bring the sauce to the boil, check the seasoning on then pour over the resting lamb shanks and serve.

Combine the softened butter, anchovy paste, lemon juice, garlic, parsley and black pepper in a small bowl. Set that aside while searing the lamb chops. Season the lamb chops with salt and black pepper. Heat the olive oil in a heavy skillet such as cast iron over medium-high heat. Place the lamb chops in the skillet and sear for 3-4 minutes.
