Sweet, tangy and just a little bit spicy, these baked beans are made completely from scratch and cook away for hours in the crockpot.---Their awesome flavor will knock your cookout guests socks off!

1 lb dry navy beans (or pinto beans)
6 cups water
2 tablespoons salt
1 tablespoon vegetable oil
1/2 lb uncooked bacon (diced)
2 cloves garlic (minced)
1 medium onion (diced)
1/4 cup tomato paste
1/4 cup dark molasses
1/4 cup coconut sugar (or brown sugar)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
Salt and pepper to taste

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
  • Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
  • Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

Pork and beans are cooked together in a slow cooker for mutually beneficial results (If you don't have a slow cooker, you can do it in a pot in the oven.) As the pork shoulder and barbecue sauce braise in the oven, the sauce soaks up the pork juices while the pork tenderizes. Then, beans are added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (For a more acidic sauce, add apple cider vinegar with the beans, or you can increase the sweetness with added sugar.) To serve, slice the pork or shred it into pulled pork.

Steps:

  • Season the pork all over with 1 tablespoon salt and and 3/4 teaspoon pepper. In a large Dutch oven or skillet, heat the olive oil over medium-high. Add the pork shoulder and sear until browned on all sides, 8 to 10 minutes.
  • Meanwhile, in your slow cooker, stir together the barbecue sauce, chipotle and brown sugar. Taste the mixture and adjust sweetness with brown sugar and spice with chipotle.
  • Add browned pork to the barbecue sauce and turn to coat in the sauce. Add the beans and garlic to the sauce around the pork. Cover and cook on low until the meat falls apart when prodded with a fork, 8 to 10 hours.
  • Transfer the pork to a cutting board. Skim excess fat from the top if desired, then season the beans to taste with salt and pepper. Slice the pork against the grain into 1/2-inch thick slices, or shred the pork with two forks. Serve the pork with the beans.

2 smoked ham hocks (about 1/2 pound each)

1 lb bacon, diced (cut length wise 2 times then across)
1 onion, chopped
4 -6 garlic cloves, minced
2 cups barbecue sauce
1/2 cup catsup
1/4 cup dark molasses
1/4 cup Dijon mustard
1/4 cup horseradish sauce (it has to be sauce and not straight horseradish!)
1/2 cup brown sugar

Steps:

  • Fry bacon and onion until almost burned (add garlic toward the end).
  • Drain fat.
  • Place in crock pot or casserole all remaining ingredients, except brown sugar. Mix.

These Slow Cooker BBQ Baked Beans with Kielbasa are a super easy way to get all the flavors you love about BBQ baked beans kicked up with kielbasa sausage and made simple with a slow cooker. It's a one pot side or meal, and everyone loves it.

Number Of Ingredients 9

1 16 ounce Package of Kielbasa
4 14 - 17 ounce cans Pork n Beans
1 small Onion, chopped
1 teaspoon of Garlic, minced
1 cup Brown Sugar
1 teaspoon Garlic Salt
1 Tablespoon of Dry Ground Mustard
3 Tablespoons of Black Strap Molasses
1/2 cup of Ketchup

Steps:

  • Place the lid on the Crock Pot, and turn the Crock Pot on High heat.
  • Open the Kielbasa, and slice in round pieces, and place the pieces in the bottom of the Crock Pot. Leave the Kielbasa in the bottom of the Crock Pot for about 45 minutes, then turn the pieces, and leave for another 15 minutes.
  • Add the pork 'n beans. Then add the chopped onion. Add minced garlic, brown sugar, garlic salt, ground mustard, molasses, and ketchup.
  • Stir all ingredients together, making sure to stir Kielbasa into the beans. Leave the Crock Pot on high and cook the beans until they're bubbling, about 4 or 5 hours. Stir well, and turn the Crock Pot to low or keep warm, and stir occasionally until time to serve!
