Sometimes we all don't have tomato juice on hand when we need it. This is a simple easy fix with a can of tomato paste you have in your pantry. I find it taste better than most canned juices out there at a fraction of the cost.

6 ounces tomato paste
24 ounces water
1/2 teaspoon salt

Steps:

  • Dump the paste in a pitcher. Get it all out with a spoon.
  • Fill empty can with water and dump it in the pitcher. Repeat until you have done this 4 times.
  • Use that same spoon with all the paste stuck to it to stir it up.
  • Add salt.
  • Stir again.
  • Put in the fridge and chill.
  • Hint. Cut the other end of the can off and you have a perfect cookie cutter for small cookies or biscuits. Next time you open a tomato sauce can (8 oz) it makes a normal size cutter.

You can drink this juice plain or use it in most any recipe like chili that calls for vegetable juice as an ingredient. -Kathleen Gill, Butte, Montana

Number Of Ingredients 11

13 pounds ripe tomatoes (about 40 medium)
2 celery ribs, coarsely chopped
3 medium onions, coarsely chopped
1 medium green pepper, coarsely chopped
1-1/2 cups chopped fresh parsley
1/2 cup sugar
1 tablespoon Worcestershire sauce
4 teaspoons salt
1/4 teaspoon hot pepper sauce
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper

Steps:

  • Quarter tomatoes; place in a 6-qt. Dutch oven. Add celery, onions, green pepper and parsley. Simmer, uncovered, until vegetables are tender, about 45 minutes, stirring occasionally. , Meanwhile, rinse five 1-quart plastic containers and lids with boiling water. Dry thoroughly. Cool tomato mixture slightly; put through a sieve or food mill. Return to pan. Add remaining ingredients; mix well. Bring to a boil. Remove from heat; cool. , Fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Freeze up to 12 months. Thaw frozen juice in refrigerator before serving.

This is almost as easy as opening a can of tomato soup. Yet this can be used to stretch your last can of soup or alone. My kids prefer no optional additions.

1 (6 ounce) can tomato paste
24 ounces milk (refill paste can 4x) or 24 ounces water (refill paste can 4x)
1 teaspoon salt (to taste)
1 teaspoon sugar
1/4 teaspoon garlic powder
1 teaspoon cheese
1 teaspoon bacon
1 teaspoon onion powder
1 teaspoon celery seed

Steps:

  • Put tomato paste in saucepan; add milk or water using empty tomato paste can and rinsing can thoroughly.
  • Add salt and sugar and optional additions if using; stir.
  • Cook on medium, stir and serve.

I found this recipe on cdkitchen.com when I needed a recipe for tomato juice, but no tomatoes on hand. I am thrilled that I ran across this, as my DH LOVES tomato juice, and I always have a case or two of tomato paste on hand. This costs about 50 cents to make. I dont like much salt in mine, but you may like it in yours.

1 teaspoon salt (or to taste, I use none)

  • Refrigerate.
