- Bake onion rings according to package directions. Meanwhile, in a large bowl, combine beef, garlic salt and pepper; mix lightly but thoroughly. Shape into six 3/4-in.-thick patties., In a large nonstick skillet, cook burgers over medium heat 5-7 minutes on each side or until a thermometer reads 160°, adding cheese during the last minute of cooking. Serve on buns with barbecue sauce, bacon, onion rings and toppings as desired.

BBQ BACON BURGER LOADED POTATOES

- Preheat oven to 450 F. Place potatoes on rimmed baking sheet and bake for 45 minutes, or until they give when squeezed with your hand, protected by an oven mitt or kitchen towel. When the potatoes are finished baking, set them aside to cool slightly.
- In a medium-sized pan, medium heat, add the ground beef, salt, and pepper and cook for 10-12 minutes, or until fully browned and crumbled.
- Remove the ground beef from the pan and add the butter. Once butter is melted add the kale and toss in the butter. Cover the pan and let the kale steam for about 5 minutes, until wilted. Season with a pinch of salt and set aside.
- In a medium-sized bowl, stir together the ingredients for the ranch dressing, then set aside.
- Cut potatoes down the middle and load with kale, ground beef, desired amount of BBQ sauce and ranch, and then top with bacon. Garnish with pickled jalapenos and green onions, if desired, and serve!

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

- Preheat the oven to 400 degrees F.
- Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
- Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
- Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
- Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
- Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.
MASHED POTATO BUN BACON BURGER RECIPE BY TASTY

- In a pot over high heat, add the potatoes and garlic and cover with cold water.
- Bring the potatoes to a boil, reduce the heat and simmer until fork tender, about 20 minutes.
- Drain the potatoes in a colander and return to the pot.
- Add the butter, milk, salt and pepper. Mash until smooth.
- Add in the parsley and mix until combined. Transfer the potatoes to a piping bag or ziplock bag.
- On a parchment paper-lined baking sheet, place the provolone slices.
- Pipe the mashed potatoes on top of the rounds starting from the outside to the center of the cheese.
- Freeze until solid, about 1 hour.
- Place the egg and panko in two bowls.
- Place the frozen potato round in the egg ensuring it's completely submerged.
- Place the potato round in the panko and flip to cover completely. If necessary repeat process putting potato back into the egg and once more in the panko.
- In a large pot, heat oil to 350°F (180°C).
- Place the potato in oil and fry until both sides are golden brown, about 2 minutes per side.
- Set the mashed potato rounds on a wire rack to drain.
- In a bowl, add the ground beef, season with salt, onion powder, and pepper. Mix until combined.
- Form patties with your hand about the size of your palm.
- Lay the bacon two strips overlapping and two strips perpendicular.
- Place the burger patty on the bacon and fold over the bacon strips, trimming if necessary.
- Heat a pan over medium heat and add the bacon patties and cook until cooked through.
- Assemble the burger by placing one potato "bun" on the bottom. Spread with ketchup or your favorite sauce.
- Build with lettuce, patty, red onion and top potato bun.

- Preheat an outdoor grill for medium-high heat.
- Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. - Scrub Idaho® Russet Potatoes until clean and dry them. Place on a baking sheet and bake for 1 hour, or until potatoes are cooked through. Remove from oven and place on a wire rack to cool slightly. Lower oven temperature to 375 degrees F.

- Combine ground round, ground chuck, salt and pepper in a large bowl.
- In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
- Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
- Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
- Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
- Cook burgers on grill over medium flame for about 7 minutes on each side.
- While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
- Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
- After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
- Baste again with sweet barbecue sauce before removing from grill.
- Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
- To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.
CHEESY POTATO BACON PACKETS FOR THE GRILL
I have been making these for years, it's a family favorite! all ingredients are wrapped in a foil pouch then grilled for about 30-40 minutes, add in some cooked cubed ham for a complete meal, you could even make the packets well in advance then refrigerate until ready to grill :) Make certain to use only large heavy-duty foil for this and spray the inside of the foil generously!

- Divide the sliced potatoes and onions equally between two pieces (about 18-inches each) heavy-duty foil, that has been sprayed liberally with cooking spray.
- Sprinkle with seasoning salt, pepper and garlic powder; tossing lightly with hands to coat with seasonings.
- In a bowl combine grated cheddar mozzarella and Parmesan cheese; divide and sprinkle over the potatoes and onions.
- Divide/top with bacon and butter cubes.
- Bring opposite ends of the foil together over filling and fold down several times.
- Fold unsealed ends toward filling and crimp tightly (making a sealed packet, you may poke a small hole on top of the packet to let steam escape).
- At this point to you may refrigerate for a few hours until ready to grill.
- Place on grill over medium heat for about 35-40 minutes or until potatoes are fork-tender.
- Remove from grill, carefully open the packets (be careful these packets have lots of steam inside, so open with care!) and sprinkle with more grated cheese.
- Delicious!
