BASIL-MINT WINE COOLER
Steps:
- Combine wine and herbs. Working in batches, pour mixture into the bottle of a carbonator, filling it not more than 1/2 full (this will give the mixture room to foam). Charge with CO2 until very fizzy.
- Very slowly, as if opening a bottle of soda, release the bottle from the carbonator. Serve immediately, or cover tightly and chill. Serve over ice or straight up.

Steps:
- With a vegetable peeler remove zest from lime in strips. In a saucepan simmer water, zest, mint, and sugar, stirring occasionally, 5 minutes. Remove pan from heat and let mixture stand 15 minutes. Pour mixture through a sieve into a bowl, pressing hard on solids, and discard solids. Cool syrup to room temperature.
- Halve and seed cantaloupe. Working in 2 batches, scoop flesh into a blender and purée with syrup until smooth, transferring to a large bowl as pur ed. Stir in wine. Chill soup, covered, until cold, at least 2 hours, and up to 1 day. Skim any foam from top. Serve soup garnished with mint.
WHITE WINE COOLER MARINADE
Wine, sprite, lime juice, fresh herbs, garlic and a bit of olive oil come together in less than five minutes, and make a very nice marinade for chicken. Would probably do well on pork too, though I have only done it with chicken.

- Mix all ingredients together in a large bag or glass bowl, mix or shake until fully mixed.
- Marinade chicken overnight, or at least six hours. Remove chicken, discard marinade.
- Grill to perfection!
- Enjoy!
- This works for bone-in chicken as well.

CUCUMBER MINT AND BASIL SODA
bon Appetite had this and several other summer soda recipes. I make most of my own fizzy drinks from fruit in my yard. I like this veggie alternative. I will be trying this with stevia instead.

Steps:
- Bring water and sugar to a boil to make simple syrup.
- Keep 1.5 cups in a small saucepan and remove pan from heat.
- Add cucumber slices (reserving 12 for garnish), 24 mint leaves, and basil.
- Cover and let steep for 30 minutes.
- Strain cucumber-herb syrup into a jar, pressing on solids in strainer.
- Fill a 12-oz. glass with ice cubes. Add 2 tablespoons syrup and top with soda water (about 1/2 cup). Stir to combine. Garnish with cucumber slice and sprig of mint. Repeat to make 11 more sodas.
