1 (32 fluid ounce) container chicken broth
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup half-and-half cream
salt and pepper to taste
2 tablespoons basil pesto

Steps:

  • Pour chicken broth into a large saucepan, and bring to a boil. Boil until reduced by about 1/3.
  • Pour in both cans of the tomatoes, and return to a simmer. Pour in the half-and-half, and turn heat to low. Simmer for 15 minutes. Puree in batches in a blender, or use an immersion blender in the pan. Season with salt and pepper to taste. Ladle into bowls, and swirl in a spoonful of pesto before serving.

1 can (14-1/2 ounces) stewed tomatoes
4 ounces cream cheese, cubed
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup butter
3 cans (10-3/4 ounces each) condensed tomato soup, undiluted
2 cans (11-1/2 ounces each) V8 juice
1 cup half-and-half cream
1/2 teaspoon dried basil
SEASONED OYSTER CRACKERS:
3 cups oyster crackers
1/3 cup canola oil
1 tablespoon ranch salad dressing mix
1/2 teaspoon garlic powder
1/2 teaspoon dill weed
9 tablespoons shredded part-skim mozzarella cheese

Steps:

  • In a food processor, combine stewed tomatoes and cream cheese; cover and process until smooth. Set aside. , In a large saucepan, saute onion and garlic in butter. Whisk in tomato soup and V8 until blended. Gradually stir in the cream cheese mixture, cream and basil. Cook and stir until heated through (do not boil)., In a large bowl, combine the crackers, oil, dressing mix, garlic powder and dill; toss to coat. Ladle soup into bowls; sprinkle with crackers and mozzarella cheese.

Best done with fresh ripe tomatoes, but also very good with canned tomatoes. If you use fresh herbs, you will need more than dried (in proportion, 3 times more). I ate this soup for the first time when I visited an aunt. She made this just for me. Over the years, I made my own version to match the taste I remembered. Here it is. Bon appetit.

6 ripe tomatoes
2 cups milk
1 tablespoon all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon white sugar
¼ cup milk
¼ teaspoon baking soda
1 pinch dried basil
1 pinch dried oregano
1 pinch dried marjoram

Steps:

  • In a saucepan, heat the tomatoes and cut them in small pieces. (If you use the fresh ones, put the tomatoes into a boiling bath until the peel cracks. Peel them and proceed the same way)
  • Heat the 2 cups of milk in another saucepan.
  • Mix flour, salt, pepper, sugar and 1/4 cup milk in a small dish until smooth. Stir the flour mixture into the simmering milk until it thickens. DO NOT BOIL.
  • Stir the baking soda into the hot tomatoes. When the fizzing slows down, add slowly to the hot milk. Simmer a few minutes, adding basil, oregano, and marjoram to taste.
  • Note: If you want a creamy cream of tomato, you will have to put your tomatoes through a sieve or a food processor before you mix them with the milk.

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

2 carrots
2 sticks of celery
2 medium onions
2 cloves of garlic
olive oil
2 organic reduced-salt chicken or vegetable stock cubes
2 x 400 g tins of quality plum tomatoes
6 large ripe tomatoes
½ a bunch of fresh basil (15g)

Steps:

  • Peel and roughly slice the carrots, slice the celery, and peel and roughly chop the onions. Peel and slice the garlic.
  • Heat 2 tablespoons of oil in a large pan over a medium heat, add all the prepped ingredients, then cook with lid ajar for 10 to 15 minutes, or until softened.
  • Crumble the stock cubes into a jug, cover with1.5 litres of boiling water, and stir until dissolved.
  • Add the stock to the veg pan with tinned and fresh whole tomatoes, including the green stalks that may still be attached to some of them (these give an amazing flavour - trust me!).
  • Give it a good stir and bring to the boil, then reduce to a simmer for 10 minutes with the lid on. Meanwhile, pick your basil leaves.
  • Remove the pan from the heat. Season to taste with sea salt and black pepper, then stir through the basil leaves.
  • Using a stick blender or liquidizer, pulse the soup until smooth. Taste and check the seasoning, then serve.

3 tbsp olive oil
2 onions, chopped
2 celery sticks, chopped
300g carrot, chopped
500g potato, diced
4 bay leaves
5 tbsp tomato purée
2 tbsp sugar
2 tbsp red or white wine vinegar
4 x 400g cans chopped tomatoes
500g passata
3 vegetable stock cubes
400ml whole milk

Steps:

  • Put the oil, onions, celery, carrots, potatoes and bay leaves in a big casserole dish, or two saucepans. Fry gently until the onions are softened - about 10-15 mins. Fill the kettle and boil it.
  • Stir in the tomato purée, sugar, vinegar, chopped tomatoes and passata, then crumble in the stock cubes. Add 1 litre boiling water and bring to a simmer. Cover and simmer for 15 mins until the potato is tender, then remove the bay leaves. Purée with a stick blender (or ladle into a blender in batches) until very smooth. Season to taste and add a pinch more sugar if it needs it. The soup can now be cooled and chilled for up to 2 days, or frozen for up to 3 months.
  • To serve, reheat the soup, stirring in the milk - try not to let it boil. Serve in small bowls for the children with cheesy sausage rolls then later in bowls for the adults as Hot Bloody Mary soup (see 'Goes well with' recipes, below).

1 onion, coarsely chopped

1 1/2 cups Basic Chicken Stock, or water
1/2 cup heavy cream (optional)

Steps:

  • Melt butter in a medium stockpot over medium heat. Cook onion and garlic (if using), stirring constantly, until soft and translucent, about 3 minutes.
  • Add tomatoes, their juices, and stock. Season with salt and pepper and bring to a boil, then reduce heat and simmer 10 minutes.
  • Working in batches, transfer tomato mixture to a blender, food processor, or food mill. Puree tomato mixture (if using a blender, cover the lid with a kitchen towel while machine is running).
  • Return soup to a clean pot and set over low heat. Whisk in cream, if desired; season with salt and pepper. 1/2 cup diced onion
2 tbsp all-purpose flour
2 cups milk (preferably whole)
1/4 tsp baking soda
3 1/2 cups diced tomatoes (include the juice if using canned; if using fresh and you have a good blender, no need to peel them)
2 tsp granulated sugar
salt (to taste (I use about 2 tsp kosher salt, but it really depends if the butter and tomatoes had salt))

Steps:

  • Heat the butter in a large pot over medium heat. Add onion and cook until softened and translucent (not browned), about 6 minutes. Stir in flour, cook one minute, then gradually whisk in milk. Add baking soda, tomatoes and sugar. Simmer 10 minutes, then blend (either with an immersion blender, or in small batches in a regular blender - careful, hot liquids will explode out if you overfill!). Add salt by pinches, tasting as you go until soup tastes vibrant and well-seasoned.

2 tbsp olive oil
2 onions , chopped
2 carrots , chopped
2 garlic cloves , crushed
2 red peppers , chopped
1 large sweet potato , peeled and chopped
2 x 400g cans tomatoes
1 low-salt veg or chicken stock cube
1 tsp dried oregano
3 rosemary sprigs , leaves picked and chopped
70ml double cream

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
  • Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.

DO NOT SKIP the roasting of the tomatoes; a little more effort, but worth it! Recipe comes from Cook's Illustrated with a slight modification.

2 (28 ounce) cans whole tomatoes, drained, reserve 3 cups juice (not packed in puree)
1 1/2 tablespoons dark brown sugar
4 tablespoons unsalted butter
4 large shallots, minced
1 tablespoon tomato paste
1 pinch ground allspice
2 tablespoons unbleached all-purpose flour
1 3/4 cups chicken stock or 1 3/4 cups canned low sodium chicken broth
1/2 cup heavy cream
2 tablespoons brandy or 2 tablespoons dry sherry
table salt
cayenne pepper

Steps:

  • Preheat oven to 450 degrees; adjusting oven rack to upper-middle position.
  • Line cookie sheet with foil.
  • Spread tomatoes in single layer on foil, and sprinkle evenly with brown sugar.
  • Bake until all liquid has evaporated and tomatoes begin to color, about 30 minutes.
  • Let tomatoes cool slightly, then peel them off foil; transfer to small bowl and set aside.
  • Heat butter over medium heat in medium nonreactive saucepan until foaming; add shallots, tomato paste, and allspice.
  • Reduce heat to low, cover, and cook, stirring occasionally, until shallots are softened, 7 to 10 minutes.
  • Add flour and cook, stirring constantly, until thoroughly combined, about 30 seconds.
  • Whisking constantly, gradually adding chicken stock; stir in reserved tomato juice and roasted tomatoes.
  • Cover, increase heat to medium, and bring to boil; reduce heat to low and simmer, stirring occasionally, to blend flavors, about 10 minutes.
  • Remove from heat and using an immersible blender puree the tomatoes.
  • (If using a blender, strain mixture into medium bowl.Transfer tomatoes and solids in strainer to blender; add 1 cup strained liquid and puree until smooth. Return to pan and add remaining reserved liquid.).
  • Add cream, and heat over low heat until hot, about 3 minutes.
  • Remove from heat and stir in brandy or sherry; season to taste with salt and cayenne, and serve immediately.
  • To Make Ahead.
  • This soup can be prepared through step 11 cooled, covered, and refrigerated for up to 3 days or frozen for up to 2 months. Reheat over low heat before proceeding with step 12.

1/4 cup butter
28 oz (2 cans) of whole tomatoes
4 tbsp tomato paste
2 cups water
1-2 tsp sugar (optional)
1/2 cup heavy cream
kosher salt to taste

Steps:

  • Dice onion.
  • Heat butter in a large pan over a medium heat.
  • Once the pan is hot and the butter melted, add the onion and fry until translucent (2-3 minutes).
  • Add the canned tomatoes (with juice), tomato paste, water and optional sugar.
  • Use a wooden spoon to break up the whole tomatoes, and stir to combine all ingredients.
  • Reduce heat to low and simmer for around 10 minutes, until the liquid starts to reduce.
  • Remove from heat and blend to desired consistency with an immersion blender.

Another 'made from scratch' family favorite. The hardest part is cutting all of the tomatoes! I like to use Roma but any tomatoe you like will do. The half and half really adds great texture to the soup so don't cheat and add skim milk or other low fat milk. It will really take away from the great taste of the soup. The touch of cloves adds a special taste that will not be missed. A must have in this soup!

1 large onion, chopped
1 tablespoon minced garlic

2 kg firm ripe tomatoes, roughly chopped (or 4lb 4oz, Homegrown mixed are best)
3 garlic cloves, roughly chopped
fresh basil leaf, plus extra to serve (About a handful!)
1 tablespoon tomato puree
4 tablespoons olive oil, plus extra to serve
1 liter vegetable stock (or 1.75 pints, Or chicken stock)
salt & freshly ground black pepper
2 -3 tablespoons caster sugar, to taste
150 ml double cream (or 5 fl.ozs., plus extra to serve)
1 loaf ciabatta, thickly sliced, to serve

Steps:

  • Heat a large, heavy-based saucepan over a medium to high heat. When the pan is hot, add the tomatoes and fry for 4-5 minutes, or until they have started to break down.
  • Add the garlic, basil, tomato purée and two tablespoons of olive oil. Continue to cook for a further 1-2 minutes.
  • Pour in the vegetable stock, bring the mixture to the boil, then reduce the heat until the mixture is simmering. Simmer for 3-4 minutes.
  • Transfer the soup mixture to a food processor and blend to a purée.
  • Return the blended soup to the pan through a sieve and season, to taste, with salt, freshly ground black pepper and sugar.
  • Pour in the cream and return the mixture to a simmer. Continue to simmer for a further 1-2 minutes.
  • Meanwhile, brush the ciabatta slices with the remaining two tablespoons of olive oil.

2 yellow onions ((3 cups finely chopped) )
3 garlic cloves ((1 Tbsp minced))
56 oz crushed tomatoes ((two, 28-oz cans) with their juice, preferably San Marzano)
2 cups chicken stock
1/4 cup chopped fresh basil (plus more to serve)
1 Tbsp sugar (or added to taste)
1/2 tsp black pepper (or to taste)
1/2 cup heavy whipping cream (or to taste to combat acidity)
1/3 cup parmesan cheese (freshly grated, plus more to serve)

Steps:

  • Heat a nonreactive pot or enameled dutch oven over medium heat. Add butter then add chopped onions. Sauté 10-12 minutes, stirring occasionally, until softened and golden. Add minced garlic and sauté 1 minute until fragrant.
  • Add crushed tomatoes with their juice, chicken stock, chopped basil, sugar (or add sugar to taste), and black pepper. Stir together and bring to a boil then reduce heat, partially cover with lid and simmer for 10 minutes.
  • You can leave your soup with a chunky consistency, but if you like a blended/creamy soup, use an immersion blender to blend the soup in the pot to desired consistency or transfer to a blender in batches and blend until smooth (being careful not to over-fill the blender with hot liquid), then return blended soup to the pot over medium heat.

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
