PERFECT SUMMER BASIL BURGER

1 1/4 pounds ground beef (80-percent lean)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1/4 cup shredded mozzarella
4 English muffins, halved horizontally and toasted
1 tomato, sliced and lightly salted
Perfect Basil Sauce, recipe follows
2 tablespoons grated Parmesan
1 green onion, chopped
3 tablespoons roughly chopped fresh basil
1 large clove garlic, minced
1/2 cup prepared mayonnaise
3 tablespoons sour cream
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • Quarter the beef into even portions. Form into burgers, indenting the middle slightly with your thumb. Season with salt and pepper, and brush lightly with vegetable oil. Cook on a hot grill until charred on the outside and pink on the inside, about 4 minutes per side. Two minutes before removing the burgers, top the burgers with the mozzarella cheese.
  • Place the toasted muffins on a serving platter. Place the tomato slices on the bottom, and top each with cooked patties. Spread a tablespoon or two of the basil sauce on each bun top and sprinkle with a little Parmesan cheese. Serve extra basil sauce on the side for dipping.
  • Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.

2 large shallots, minced
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
6 button mushrooms (about 4 ounces), finely diced
2 cloves garlic, minced
2 tablespoons chopped fresh thyme
1/2 cup frozen petite green peas, thawed
Two 15-ounce cans lentils, rinsed and drained
1/3 cup plus 1/2 cup cornmeal
2 tablespoons egg-free mayonnaise, such as Vegenaise
1 tablespoon fresh lemon juice
1 cup refrigerated egg-free mayonnaise, such as Vegenaise
1/2 cup chopped fresh basil
Zest of 1 large lemon
Twenty-two 1/2-inch-thick-slices country-style bread
1 avocado, seeded, peeled and thinly sliced, optional
2 Roma tomatoes, thinly sliced
1 head butter lettuce, leaves separated

Steps:

  • For the burgers: Heat 1/4 cup of the oil over medium-high heat in a 12-inch nonstick skillet. Add the shallots, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook until soft, about 3 minutes. Add the mushrooms, garlic, thyme and the remaining 3/4 teaspoon of salt and 1/4 teaspoon pepper. Cook until the mushrooms are soft, 6 to 8 minutes. Set aside to cool slightly.
  • Blend the peas and 1 can lentils until smooth in a blender. Transfer the pureed peas and lentils to a medium bowl. Add the remaining 1 can lentils, 1/3 cup cornmeal, mayonnaise, lemon juice and the mushroom mixture. Form 1/3-cupfuls of the mixture into eleven 3/4-inch-thick slider patties.
  • Sprinkle 1/4 cup cornmeal on a baking sheet. Place the burgers on top of the cornmeal. Sprinkle the remaining 1/4 cup cornmeal on top of the burgers. Refrigerate for at least 30 minutes.
  • Heat the remaining 1/4 cup oil over medium heat in the skillet. Cook the burgers until golden brown, about 4 minutes on each side.
  • For the mayonnaise: Mix the mayonnaise, basil and lemon zest until smooth in a small bowl.
  • Working in batches, place the bread in the skillet and cook until lightly toasted, 1 to 2 minutes on each side. The bread can also be grilled or toasted in an oven.
  • Smear the mayonnaise on the bread and top with the lentil burgers. Serve with avocado if using, tomato, lettuce and top with the remaining the bread slices.

1/4 cup Zinfandel
1/4 cup lightly packed minced fresh basil

Vegetable oil, for brushing on the grill rack
8 large basil sprigs, moistened with water, for grilling
6 large seeded sandwich rolls, split

6 red leaf lettuce leaves
6 (1/4-inch-thick) large tomato slices
6 paper-thin red onion slices, separated into rings
6 basil sprigs, for serving
Pesto Mayonnaise
2/3 cup mayonnaise
2 tablespoons prepared basil pesto

Steps:

  • 1. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • 2. To make the mayonnaise, combine the ingredients in a small bowl and mix well. Cover and refrigerate until needed.
  • 3. To make the patties, combine the sirloin, Zinfandel, basil, onion, bread crumbs, sun-dried tomatoes, and garlic salt in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls.
  • 4. When the grill is ready, brush the grill rack with vegetable oil. Toss the moistened basil sprigs directly onto the fire. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly. During the last minute of cooking, top each patty with a cheese slice.
  • 5. To assemble the burgers, spread the mayonnaise over the cut sides of the rolls. On each roll bottom, place a lettuce leaf, a patty, a tomato slice, an onion slice, and a basil sprig. Add the roll tops and serve.

This recipe is a great twist on the classic recipe for hamburgers, and they smell great on the grill. These burgers could also be made on the stove or on a small indoor grill. I got this recipe out of the local newspaper. My boyfriend loves hamburgers so this caught my eye. This recipe is so easy and dinner is ready in about 10 minutes. We were very pleased with the flavor and juiciness the burgers had. I'd call it the burger's sophisticated older brother! For a quick, inexpensive meal using staple ingredients, this is a nice change from a regular hamburger.

50g pine nut
425g can borlotti beans , drained and rinsed
1 small red onion , finely chopped
2 tbsp sundried tomato paste
85g fresh breadcrumbs
1 tbsp fresh thyme leaves or 1 tsp dried
1 egg , beaten
sunflower oil , for frying
basil tzatziki (see separate recipe)
flatbreads, tortilla or pitta breads

Steps:

  • Place a frying pan over a medium heat and lightly toast the pine nuts for 2-3 mins or until golden. Remove from pan and set to one side.
  • Put the borlotti beans into a large bowl and mash well with a potato masher or fork. Add the pine nuts, onion, tomato paste, half the breadcrumbs, the thyme and egg. Season to taste, then gently mix together until the ingredients are thoroughly combined.
  • With slightly wet hands, shape the mixture into 4 burgers. Coat the outside of each burger with the remaining breadcrumbs. Cover and chill in the fridge for at least 30 mins.
  • To cook the burgers: heat a thin layer of sunflower oil in a large frying pan and fry for 3-4 mins each side until golden. Drain on kitchen paper, then serve in warmed flatbreads, tortillas or pittas and spoon over the Basil tzatziki.
