This recipe and method make a distinctly tender, crisp crust. Unlike rolling, which can toughen pastry by developing the gluten in the dough, grating breaks - or shortens - the protein chains, which leads to extra tenderness. Pressing the grated pastry directly into the pie plate makes patisserie-thin crusts achievable, without much practice. It's key to thoroughly chill the dough before grating and to pull it up higher than the rim of the dish to allow for shrinkage. Swap this recipe in as the base of any sweet pie, adjusting the thickness accordingly. Deeper pies made in dishes without removable bases benefit from slightly thicker crusts, whereas fluted tart crusts are best whisper thin. Make double the dough and freeze half, so you have an excuse to make pie another day.

1/2 cup/60 grams confectioners' sugar, passed through a sieve
1/4 teaspoon kosher salt
9 tablespoons/130 grams cold unsalted butter, cut into cubes
2 large egg yolks

Steps:

  • Combine the flour, confectioners' sugar and salt in the bowl of a food processor. Add the cubed butter and blitz until the flour mixture has a sandy texture with some pea-size butter bits.
  • Add the egg yolks and blitz then pulse just until the pastry begins to come together.
  • Tip the pastry out onto a rectangle of plastic wrap. Using your hands, form it into a 6-inch log. Wrap in plastic wrap and chill, at least 3 hours or up to 3 days, or wrap and freeze for up to 3 months. If using frozen dough, allow to soften slightly in the fridge for an hour before using.
  • Using the large holes on a box grater, grate 3/4 of the chilled pastry directly into your pie dish or tart pan. Working quickly by hand, press the grated pastry into the dish, starting with the sides then covering the bottom, grating more of the chilled pastry into the dish as needed to cover evenly. Pay attention to the seam between the sides and the base, making sure it is the same thickness as the rest of the pastry: The crust should form an even layer that is about 1/4-inch thick. (Save any leftover pastry for another use.) Chill, at least 30 minutes or up to 2 days. (This can be done ahead.)
  • The crust can take various routes from here; refer to whichever pie or tart recipe you're using for guidance. If blind-baking this crust, it cooks best at 350 degrees.

  • Pour the flour into a mound on a countertop. Add salt and sugar; toss well. Work butter into flour with fingertips until it forms pea-sized lumps.   • Form dough into a mound, then use the heel of your hand to push the dough away from you, flattening out lumps. Repeat.

1/2 cup butter, well chilled
1/3 cup ice water (scant)

Steps:

  • Sift together the flour and the salt. Slice the cold butter rapidly and drop the slices into the flour. With a pastry blender or two sharp knives, cut in the butter until the mixture resembles coarse corn meal.
  • Sprinkle the ice water of the flour-butter mixture and stir it very quickly with a fork, until the dough gathers together. Form the dough into a ball, wrap it in wax paper or foil, and chill for about 2 hours.
  • A note here that Canadian wheat is 'harder' than wheat from the USA, and you may need to add a little more water to make it gather.

  • PREPARING A QUICHE OR TART SHELL.

Press the sides against the rim of the pan, pushing the extra dough down a bit to make and edge that is slightly thicker than the bottom. Trim the dough off with a sharp knife about 1/4 inch above the rim of the pan (it shrinks down a bit while baking).
  • Using a pastry crimper of the blunt end of a kitchen knife, crimp the ridge of the dough neatly just above the rim of the pan. Prick the bottom of the shell all over with a fork (VERY IMPORTANT!) and chill it for 1/2 hour.
  • PREBAKING A QUICHE OR TART SHELL.
  • Line the inside of the pastry shell with a piece of aluminum foil. and fill it with dried beans or rice (which can be kept in a jar and reused for this purpose forever). Bake the shell in a preheated 450 degree oven for about 8 minutes, then remove the beans and foil, prick again with a fork (VERY IMPORTANT!), and return to the hot oven for another 4 to 5 minutes, or until the bottom of the shell begins to colour. Allow the shell to cool slightly on a rack, then fill and finish baking according to recipe.

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch square pan and line with parchment, leaving some overhanging.
  • In a food processor, pulse together flour, sugar and salt. Pulse in butter until crumbs form and the dough starts to come together. Press mixture into the prepared pan in an even layer. Bake until firm on top and lightly golden at the edges, 20 to 25 minutes. Transfer to a rack. You can bake the crust up to 6 hours ahead, or use it while it's still hot.
  • While the crust bakes, using the same food processor (no need to wash it out first), pulse together eggs, sugar, butter, coconut milk, vinegar or lemon juice, lemon zest (if using), vanilla and salt until well combined. Pulse in the coconut. Use a spatula to fold in the chocolate chips, if using.
  • When the crust is baked, pour in the filling (crust can still be hot). Lower oven temperature to 325 degrees and bake until the filling is set when you jiggle it and the top is browned, 30 to 40 minutes.
  • Transfer to a wire rack to cool completely, then chill for at least 2 hours. Cut into bars and serve.

1 1/3 cups pastry flour (plus 4 tsp) or 1 1/3 cups bleached all purpose flour
1/4 teaspoon salt
1/8 teaspoon baking powder
2 1/2-3 1/2 tablespoons ice water
1 1/2 teaspoons cider vinegar

Steps:

  • Divide the butter into two parts, about two thirds to one third.
  • Cut the butter into small cubes, about 1/2 inch.
  • Cover butter with plastic wrap.
  • Refrigerate the larger amount and freeze the smaller for a minimum of 30 minutes.
  • Place the flour, salt, and baking powder in a reclosable gallon-size freezer bag and freeze for a minimum of 30 minutes.
  • Place the flour mixture in a food processor with the metal blade and process for a few seconds to combine.
  • Set the bag aside.
  • Add the larger amount of butter cubes to the flour and process for about 20 seconds or until the mixture resembles coarse meal.
  • Add the remaining frozen butter cubes and pulse until all of the frozen butter is the size of peas.
  • Add the lowest amount of the ice water and the vinegar and pulse 6 times.
  • Pinch a small amount of the mixture together between your fingers.
  • If it does not hold together, add half the remaining water and pulse 3 times.
  • Try pinching the mixture again.
  • If necessary, add the remaining water, pulsing 3 times to incorporate it.
  • The mixture will be in particles and will not hold together without being pinched.
  • Dump the mixture back into the bag and work it from the outside of the bag gently until it comes together into a ball.
  • Refrigerate if the butter starts to melt (the heat from your hands will melt the butter) Wrap dough ball with plastic wrap and refrigerate for at least one hour before rolling (preferably overnight).
  • Don't skip this step, the gluten must relax for proper rolling!
  • You can refrigerate the dough up to 2 days, freeze up to 3 months (thaw in the refrigerator overnight).
  • Allow the dough to sit at room temperature for 10 minutes then roll the dough to about 1/8" thickness on a cool, lightly floured surface.
  • Work the dough from the center out, turning over occasionally.
  • Add the minimum amount of flour as too much will produce a tough dough.
  • Once again if the dough gets too warm allow it to rest in the fridge till cool.
  • Fold the rolled out crust in quarters and gently place into pan, unfold and tuck gently into pan, trim excess (leave about 1 inch overhang to form edge).

  • Cut the fat (butter/shortening) into the flour until you get a fine breadcrumb structure. Use either a special tool, or a stand mixer, see for more tips further down.
  • You should end up with a crumbly structure, smaller and larger balls of fat in the dough. You should not be able to form it into a ball yet, instead it should crumble apart immediately.
  • Quickly mix liquid through to shape a firm ball. It should have a slight tendency to crumble. If it's too dry add some extra water. If it's too wet add extra flour, but try to limit this, you want fat pockets everywhere. If it's really really wet, it's better to start over again.
