- Prepare the Chimichurri Rojo, and then pour 2/3 cup of it into a resealable plastic bag and combine with the skirt steaks. (Reserve the rest of the sauce to use as a condiment.) Refrigerate overnight.
- To cook the steaks, prepare a medium-hot grill.
- Remove steaks from the marinade, and grill to desired doneness. (Because they are thin and have been marinated overnight, they will cook very quickly.
- Divide each steak into two, and place each in the center of a warm plate. Season with salt and pepper, sprinkle chopped olives and minced parsley over each steak. Serve with the reserved Chimichurri Rojo on the side.

- Pour 1/2 cup of the chimichurri into a large resealable plastic bag. Add the skirt steaks and marinate overnight in the refrigerator. (Reserve the rest of the chimichurri for serving).
- Prepare a hot fire in a grill. (Prepare the onions while the grill heats.)
- Remove the steaks from the marinade and, turning once, grill to desired doneness. (Because they are thin and have been marinating overnight, they will cook very fast.)
- Cut each steak in two, arrange them in the center of four warm plates, and season with salt and pepper. Top with the onions and garnish with the olives and parsley. Serve with the reserved chimichurri on the side.
- Recommended wine: A Nebbiolo d'Alba or a Cabernet Sauvignon from Mendoza, Argentina.

GRILLED RIB EYE STEAKS WITH DIPPING SAUCE

- Trim steaks of fat. Combine marinade ingredients in a large container. Add the beef, cover, and refrigerate 1 to 2 hours. Remove meat from refrigerator 30 minutes before grilling to enhance flavors.
- Meanwhile, combine all the dipping sauce ingredients in a small bowl and set aside.
- Preheat grill. Grill steak, turning occasionally, 5 to 10 minutes for medium-rare. Transfer meat to a cutting board and set aside 10 minutes before slicing crosswise into thin slices. Transfer meat and juices to a serving platter and serve with the dipping sauce and Sticky Rice.
CHICKEN OR STEAK WITH BALSAMIC BBQ SAUCE

- For the BBQ sauce:
- Combine all the ingredients in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes.
- For the chicken or steak:
- Place a grill pan over medium heat or preheat a gas or charcoal grill. Season the meat with salt and pepper. Lightly coat with some of the BBQ sauce using a pastry brush. Place the meat on the grill. Place the remaining BBQ sauce, still in the small saucepan, over low heat or on the edge of a gas or charcoal grill and allow to gently simmer while the meat cooks.
- Cook the chicken about 8 minutes per side. Cook the steaks starting at about 4 minutes per side until a meat thermometer reads the desired temperature, 120 degrees F for medium rare, 135 degrees F for medium (about 6 minutes per side), 155 degrees F for well done (about 9 minutes per side). Continually brush the meat with BBQ sauce every few minutes. Remove the meat from the grill and let rest for at least 5 minutes. Serve with the heated BBQ sauce alongside.
- Alternately, the chicken can be baked in the oven. Preheat the oven to 375 degrees F. Place the chicken skin side up in a baking dish and bake for 25 minutes. Remove the baking dish from the oven and spoon the BBQ sauce all over the top of the chicken. Return the baking dish to the oven and bake for another 15 minutes.

- Marinade the steak. Combine the ingredients for the marinade in a small bowl. Pour the marinade over the sirloin steak in a large gallon zip-top bag, reserving 2 Tablespoons of the marinade for later use. Allow the steaks to marinate on the counter for 30 minutes while they come to room temperature.
- Preheat the grill. While the steaks are marinating, fire up the grill. Preheat the grill and assemble your rotisserie attachment. If you aren't using a rotisserie, prepare your grill for 2-zone cooking with a high heat side and a low heat side.
- Prep the steak. Remove the steak from the marinade and shake off any excess. Thread the steaks onto the rotisserie spit. If you are using kebabs, dice the steak into cubes and thread onto the skewers.
- Grill the Brazilian steak. Place the steak on the rotisserie or high heat side of your grill. Cook, turning frequently, until the internal temperature reaches 120 degrees F (about 8-10 minutes on the grill, 30-45 on the rotisserie).
