GRILLED HOISIN MARINATED PORK WITH PINEAPPLE-GRILLED GREEN ONION RELISH
Steps:
- Combine hoisin, vinegar, soy, garlic and sesame oil in a small bowl. Place the tenderloin in a medium shallow baking dish, pour over the marinade and marinate in the refrigerator 3 to 4 hours or overnight, turning once. Preheat the grill. Remove the pork from the marinade, removing any excess. Season with salt and pepper and grill 10 to 12 minutes for medium doneness.
HOISIN-MARINATED PORK CHOPS
The chops need to marinate for at least 8 hours, so this is a great make-ahead dinner. Recipe is easily halved, but shredded chops make a great rice noodle salad ingredient.

- Combine soy sauce thru garlic in a large zip-top plastic bag; add pork chops. Seal and marinate in refrigerator 8 hours or overnight.
- Heat grill to medium high.
- Remove pork from bag; discard marinade. Place pork on grill rack coated with cooking spray; grill 3 minutes on each side or until cooked thru.
- Left overs can be kept int the fridge for up to 2 days, freeze for longer storage.

Another keeper from Bonnie Stern's HEARTSMART COOKING series. The pork is sauteed in the marinade with no extra fat. The sauce is delicious and we have enjoyed it with chicken breast and beef as well.

- Cut pork into 1/4-inch slices.
- (I also use sliced chicken breast or beef.) In a large bowl combine soy sauce, hoisin, rice wine, chili paste, ketchup, garlic, ginger, green onion and cilantro.
- Add pork and toss in marinade.
- Refrigerate for a few hours.
- Heat large non-stick skillet over medium heat.
- Cook pork with marinade for 7-10 minutes, turning occasionally.
- Serve with sauteed greens OR stir-fried vegetables.
STICKY-SWEET GRILLED PORK SHOULDER WITH HOISIN AND MOLASSES
Inspired by the classic Cantonese barbecued pork dish known as char siu and gloriously shellacked with a molasses glaze, the pork in this recipe should be fridge-cold when you roast it, so take it straight from the refrigerator to the grill. Time and temperature matter for this recipe, which is why a Big Green Egg is such an awesome cooking tool. But we also give you instructions on how to make this with an oven + conventional grill if you don't own a BGE.

- Pork:
- Purée garlic, ginger, hoisin sauce, fish sauce, honey, wine, chili oil, oyster sauce, and sesame oil in a blender until very smooth. Place 1 1/2 cups in a small bowl for glaze; cover and chill until ready to use. Pour remaining marinade into a 2-gal. resealable plastic bag.
- Place pork shoulder, fat side down, on a cutting board with a short end facing you. Holding a long sharp knife about 1"-1 1/2" above cutting board, make a shallow cut along the entire length of a long side of shoulder. Continue cutting deeper into meat, lifting and unfurling with your free hand, until it lies flat (it's better to end up with 2-3 even pieces than 1 uneven piece). Add to bag with marinade and seal, pressing out air. Work pork around inside bag to coat with marinade. Chill at least 8 hours and up to 1 day.
- Prepare a Big Green Egg for medium heat (with cover closed, thermometer should register 350°F). Remove pork from marinade, letting excess drip off. Lightly season all over with salt. Fit grill with convection plate and set pork on top. (If you don't have a convection plate, bank coals on one side and set pork over cooler area to avoid flare-ups.) Cover and roast pork until an instant-read thermometer inserted into the thickest part registers 140°F-145°F. (You can also do initial cooking in a 350°F oven.) Transfer to a cutting board and let rest at least 20 minutes.
- Glaze and assembly:
- Bring brown sugar, molasses, and reserved marinade to a simmer in a large saucepan; cook until reduced by one-third, 6-8 minutes (you should have about 1 1/3 cups). Keep warm.
- Prepare a Big Green Egg for medium-high heat (or use a conventional grill). Grill pork, basting and turning with 2 pairs of tongs every minute or so, until thickly coated with glaze, lightly charred in spots, and warmed through (an instant-read thermometer inserted into the thickest part should register 130°F-145°F; be careful not to overcook), 6-8 minutes. Transfer to a cutting board; slice against the grain ¼" thick. Serve with pickles, bread, cilantro, and onion.
- Do Ahead
- Pork can be roasted 2 days ahead. Let cool; cover and chill.
SPICY HOISIN MARINADE FOR CHICKEN
Plan ahead the chicken needs to marinate for a minimum or 6 hours. There is enough marinade for about 8-10 pieces of chicken or less, but it can be doubled. This is a wonderful marinade for chicken!

HOISIN BARBECUED PORK LOINS WITH APPLE
This recipe idea came after trying DanDrakes chicken recipe #108344. Pork is ideal for both the flavors of BBQ and Apple and I decided to mix the two. My wife and I like our BBQ on the sweet & savoury side rather than bitter or sour. This recipe is easy to do and I use it when I know I am short on time at the end of the day but want to serve up something substantial and yummy. This can either be eaten as an Entree with Jacket Potato and Grilled (boiled will do) seasonal vegetables or you can slap the Pork loins on a BBQ and use the sauce as a general BBQ sauce. Anyway I hope you like it as much as we do and I'd like to hear your comments. Enjoy!

- Mix all the ingredients except the Lemon Juice, Water and apple.
- Divide mixture in two, put one half aside.
- Put half of the mixture in a sealable bag with Pork Loins and let it marinate for 3 hours (You can do less but I like the flavor to really permeate the meat) but do have at least an hour.
- Broil (or BBQ) the pork loins using the marinade mixture from the bag to baste.
- Cook on low to medium heat about 8 mins either side so that the meat is properly cooked but the outside does not burn.
- The loins will turn brown because of the marinade and this is OK but dont let it burn or it could taste bitter.
- Peel your half apple and cut out the core so that you just have the flesh of the apple and dice it into small chunks.
- Take the half of the mixture you put aside and add the water, diced apple and lemon juice.
- Put the contents in a small pan and warm up on the stove top prior to serving.
- You can let it reduce and thicken or leave as is, according to taste.
- Just before serving you can drizzle some of the warmed sauce over the pork loins or serve in a gravy boat or sauce jug on the side.

- Mix honey, hoisin sauce, soy sauce, ginger, chili-garlic sauce, garlic, and sesame oil in a small bowl. Place pork chops in a resealable plastic bag.
