- Combine pork strips, cumin, and garlic pepper blend in a large resealable plastic bag. Shake until pork is coated.
- Heat vegetable oil in a large skillet over medium heat. Add pork; cook and stir until browned, 4 to 5 minutes. Add onion, red bell pepper, and green bell pepper; cook until fragrant, about 2 minutes. Stir in barbeque sauce; simmer until flavors combine, about 2 minutes.
- Serve pork mixture over flour tortillas.

- Heat the oil in a large skillet over high heat.
- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
- Stir in the lime juice, and saute for about 2 more minutes.
- To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
- I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

- In resealable food-storage plastic bag, place cumin and garlic-pepper blend. Seal bag; shake to blend. Add pork; seal bag and shake to coat.

- Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the pork chops in a container with the oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes up to 2 hours before cooking.
- Heat a cast-iron skillet over medium-high heat until hot. Toss the peppers and onions in a bowl with the oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot skillet and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
- Prepare an outdoor grill for medium-high heat.
- Lightly brush the grill grates with oil and grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board, let rest for 10 minutes and then thinly slice.
- Serve with the warm tortillas peppers and onions, guacamole, sliced pickled jalapenos, lime wedges, shredded pepper jack cheese, salsa, chopped scallions, sour cream.

SLOW-COOKER BARBECUED PULLED-PORK FAJITAS

- Place pork in 3- to 4-quart slow cooker. Place onion on top. Mix barbecue sauce, salsa, chili powder and cumin in small bowl; pour over pork and onion.
- Cover and cook on Low heat setting 8 to 10 hours.
- Remove pork from cooker; place on cutting board. Shred pork, using 2 forks. Return pork to cooker and mix well. Stir in stir-fry vegetables and salt. Increase heat setting to High. Cover and cook 30 minutes or until mixture is hot and vegetables are tender.
- Using slotted spoon to remove pork mixture from cooker, fill each tortilla with 1/2 cup pork mixture. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Serve with cheese, guacamole and sour cream.

- Heat grill to medium-hot heat.
- Place meat and onions in separate shallow dishes. Mix seasoning mix, water and oil until blended. Spoon half over ingredients in each dish; turn to evenly coat all ingredients. Refrigerate 15 min.
- Heat grill to medium heat. Remove meat and onions from seasoning mixtures; discard seasoning mixtures. Grill meat 20 to 22 min. or until done (145°F), turning after 10 min. Meanwhile, grill onions 4 to 6 min or until crisp-tender, turning occasionally. Let meat stand 3 min. Cut meat into thin slices; chop onions.
