1 teaspoon vanilla
1 1/2 cups light brown sugar
3 eggs
2 1/4 cups sifted all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups mashed ripe bananas
1/4 cup milk
1 cup chopped walnuts
2 (3 ounce) packages cream cheese
3 cups unsifted confectioners' sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F In a large mixing bowl cream butter, vanilla and sugar until light and fluffy. Beat in eggs, one at a time.
  • Sift flour, baking powder, baking soda and salt together. Mix mashed bananas and milk together.
  • Blend dry ingredients into batter alternating with banana mixture. Stir in chopped nuts.
  • Pour batter into 2 greased and floured 8-inch round or square baking pans.
  • Bake for 30 to 40 minutes or until cake tester inserted in center comes out clean.
  • Cool 10 minutes, then turn out on racks until thoroughly cool. When ready to serve frost with Cream Cheese Frosting.
  • Cream Cheese Frosting: In mixing bowl, stir cheese until smooth. Gradually beat in sugar a little at a time. Add vanilla; beat until smooth. Spread mixture between layers and around sides.

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with the milk, beating well after each addition., Transfer to a greased 9-in. square baking pan. In a small bowl, combine the flour, sugar and cinnamon; cut in butter until mixture resembles coarse crumbs. Stir in nuts. 250g pack softened butter, plus extra for the tins
100ml strong black coffee (made with 2 tbsp coffee granules), cooled
280g self-raising flour
250g golden caster sugar
½ tsp baking powder
4 eggs
1 tsp vanilla extract
85g walnut, 2 tbsp roughly chopped, the rest finely chopped
100g icing sugar, sifted, plus a little extra for dusting
150ml double cream
100g mascarpone, at room temperature

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter 2 x 20cm springform cake tins and line with baking parchment. Set aside 2 tbsp of the coffee for the filling.
  • Beat the butter, flour, sugar, baking powder, eggs, vanilla and half the remaining coffee in a large bowl with an electric whisk until lump-free. Fold in the finely chopped walnuts, then divide between the tins and roughly spread. Scatter the roughly chopped walnuts over one of the cakes. Bake the cakes for 25-30 mins until golden and risen, and a skewer poked in comes out clean. Drizzle the plain cake with the remaining coffee. Cool the cakes in the tins.
  • Meanwhile, make the filling: beat together the icing sugar, cream and mascarpone, then fold in the reserved 2 tbsp coffee. Spread over the plain cake, then cover with the walnut-topped cake and dust with a little icing sugar.

Steps:

  • In a small bowl, cream butter and 6 tablespoons sugar. Beat in egg and vanilla. Stir in banana and sour cream. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture. Combine the walnuts, cinnamon and remaining sugar., Spoon half of batter into a greased 6-cup fluted tube pan. Sprinkle with nut mixture; top with remaining batter.   • Combine 1/3 cup brown sugar, nuts and cinnamon in a small bowl. Stir until blended.
  • Pour half of batter into a greased and floured Bundt or Tube pan (can use cinnamon-sugar mix instead of flour).
  • Sprinkle sugar, nut, cinnamon mixture over batter.
  • Pour remaining batter into pan.
  • Bake at 350 degrees for 55-60 minutes.

This is the most moist coffee cake I have ever eaten. It is delicious right out of the oven, but is even better the next day. I wish it wasn't made from pre-packaged products, but it tastes so good, I am willing to forgive. I have made this with half of the oil substituted with half a cup of applesauce with great success. That is how I make it now. Pecans can be substituted for the walnuts as well, it is a pretty forgiving recipe.

1 (18 ounce) yellow cake mix
2 (3 ounce) packages instant vanilla pudding
1 cup water
1 tablespoon water
1 cup vegetable oil
4 eggs
1 cup brown sugar
1 tablespoon cinnamon
1 cup walnuts, chopped

Steps:

  • Grease and flour a 9 x13 pan, and preheat your oven to 325 degrees F.
  • Mix the cake mix, pudding, water, vegetable oil and eggs, but do not over mix.
  • In another bowl, combine the brown sugar, cinnamon and nuts.
  • Spread about half of the cake mixture in your prepared pan, and sprinkle about 2/3 of the nut mixture over that.
  • Spread the remaining cake mix over the filling (mix is thick and will be a little difficult, but it doesn't need to be perfect), and sprinkle the remaining nut mix over the top.
  • Bake 45-55 minutes (depending on your oven). Cake is done when top springs back when touched, or cake tester inserted in the center comes out clean.
