BACON-CHEESE APPETIZER PIE

I first made this for an open house three years ago and everybody liked it. It's easy to make and tastes delicious. Cheesecake is popular in these parts-it's fun to have it for an appetizer instead of dessert for a change. -Joanie Elbourn, Gardner, Massachusetts

Ingredients

Pastry for a single-crust pie
3 packages (8 ounces each) cream cheese, softened
4 large eggs, room temperature, lightly beaten
1/4 cup 2% milk
1 cup shredded Swiss cheese
1/2 cup sliced green onions
6 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
Assorted crackers

Steps:

Roll the pastry into a 13-1/2-in. circle. Fit into the bottom and up the sides of an ungreased 9-in. springform pan. Lightly prick the bottom. Bake at 450° for 8-10 minutes or until lightly browned. Cool slightly., In a large bowl, beat cream cheese until fluffy. Add eggs and milk; beat until smooth. Add cheese, onions, bacon, salt, pepper and cayenne; mix well. Pour into the crust., Bake at 350° until set and a knife inserted in the center comes out clean, 40-45 minutes. Cool 20 minutes. Remove sides of pan. Cut into thin slices; serve warm with crackers.

Ingredients

6 to 8 eggs, hard-cooked, finely minced
2 to 3 tablespoons mayonnaise
1/2 cup finely minced scallions
1 to 1 1/2 cups caviar
1 to 1 1/2 cups sour cream

Steps:

Blend the eggs and mayonnaise (using enough mayonnaise just to bind the eggs) in a small bowl. Line a well-buttered 8 or 9-inch pie pan with the egg mixture, pressing firmly over the bottom and up the sides to form the crust. Scatter the scallions over the crust, then spread with the caviar. Frost with the sour cream and refrigerate until ready to serve. Set the caviar pie on a cocktail table with crackers or freshly made melbas, which can be dipped or spread.;
