Stir chocolate chips into chocolate batter for a muffin that's twice as nice.

Number Of Ingredients 12

1 1/4 cups all-purpose flour (see Cook's Note)
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup bittersweet chocolate chips
3/4 cup milk
1/2 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
  • Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.

1 cup chocolate chips
1 cup milk
2 eggs
1/2 teaspoon vanilla extract
1/3 cup vegetable oil

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt, along with the chocolate chips, reserving a few chocolate chips for topping the muffins (optional).
  • Into a large liquid measuring cup or bowl, add the milk, eggs, vanilla and oil. Whisk together with a fork.
  • Add the liquid ingredients and mix everything together just until no streaks of flour remain.
  • Divide the batter evenly between the 12 muffin cups and top with the remaining chocolate chips (optional).
  • Bake at 350 degrees Fahrenheit for about 23-25 minutes, or until a toothpick inserted into the centre of one of the muffins comes out clean.

1 cup sugar
1/2 cup margarine, softened
2 eggs
1/2 cup sour cream
1/2 cup milk
2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

Steps:

  • Melt unsweetened chocolate on medium high in microwave, stopping at 25 second intervals to stir.
  • Once smooth, set aside.
  • In large bowl with mixer, cream sugar and margarine.
  • Beat in eggs.
  • Add sour cream and milk.
  • In small bowl stir together flour, baking powder,baking soda and salt.
  • Pour flour mixture into margarine mixture.
  • Stir together with wooden spoon.
  • Stir in melted chocolate.
  • Stir in chocolate morsels.
  • Fill greased muffin cups 3/4 full.
  • Bake @375 degrees 20-25 minutes.

1 egg
1 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup brown sugar, packed
1/2 cup cocoa
1 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 375°F Place paper baking cup in each of 12 regular-size muffin cups. In medium bowl, mix buttermilk, butter and egg with spoon until blended. Stir in flours, brown sugar, cocoa, baking soda, vanilla and salt just until moistened. Stir in chocolate chips.
  • Divide batter evenly among muffin cups.
  • Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Serve warm or cool.
