2 1/2 cups whole milk
2 egg yolks

1 teaspoon pure vanilla extract or 1 vanilla bean, split in half lengthwise and seeds scraped
1/2 recipe salted caramel sauce, recipe follows
3 bananas, sliced
1 cup fresh whipped cream
1 tablespoon sugar
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
4 -6 tablespoons ice cold water
3/4 cup unsalted butter, cut into small pieces (chilled or frozen)
1 cup sugar
1/4 cup water
3/4 cup heavy cream
3 1/2 tablespoons unsalted butter
gray salt, crushed or kosher salt

Steps:

  • For the pie:.
  • In a heavy-bottomed medium saucepan, mix together the sugar, salt, cornstarch, and flour. Over medium-low heat, slowly whisk in the milk.
  • In a separate mixing bowl, beat the egg yolks. Once the pastry cream starts to boil, transfer 1/2 cup of the pastry cream to the egg yolks and whisk to temper. Return the mixture to the saucepan. Continue whisking until the mixture coats the back of a spoon and is smooth and thick. Strain.
  • Remove from the heat and stir in the butter, and vanilla. Stir in 1 cup sliced bananas. Allow the mixture to cool.
  • Stir the custard to loosen, if necessary. Cover the bottom of the prepared crust with more sliced bananas and drizzle with 1/4 cup Salted Caramel Sauce. Top with half of the sliced bananas, then 1 cup custard, covering the bananas completely. Repeat layering with the remaining bananas and the remaining custard. Chill the banana cream pie until the filling is set, about 2 hours.
  • For the topping:
  • In a medium bowl, whip the cream until soft peaks form. Add the sugar, and vanilla and whip until stiff peaks form.
  • Top the chilled pie with the fresh whipped cream. Drizzle with additional Caramel Sauce, just before serving.
  • Perfect Pie Dough:.
  • Preheat the oven to 425 degrees F.
  • In a mixing bowl, mix together the flour, sugar, salt and vanilla; cut or work the butter into the flour mixture with your fingers or a cold pastry cutter until you have large pea sized chunks scattered throughout. Alternatively, pulse the dough in a food processor, or mix in a stand mixer with the paddle attachment on low speed.
  • Add the ice water slowly while stirring with a fork, or in the food processor or mixer, until just combined. Be careful not to overwork the dough. Wrap the dough in plastic wrap, flatten and refrigerate for at least 15 minutes.
  • Roll out one chilled pie dough to fit a 9-inch pie plate. Reserve the second pie dough disc for another use. Transfer dough to pie plate, pressing the dough lightly into the plate; trim the edges. Dock the dough with the prongs of a fork evenly over the bottom of the pie plate. Line the docked dough with aluminum foil and fill with pie weights or dried beans.
  • Bake the pie crust until the edges are brown and golden, about 15 minutes. Remove from the oven and remove the weights. Return crust to the oven to finish baking for another 5 minutes.
  • Yield: 1 (9-inch) pie crust.
  • Salted Caramel Sauce:.
  • In a heavy-bottomed saucepan, combine the sugar and water over medium-low heat until the sugar dissolves. Increase the heat and bring to a boil without stirring. If necessary, use a wet pastry brush to wash down any crystals on the side of the pan. Boil until the syrup is a deep amber color, about 5 to 6 minutes.
  • Remove from the heat and carefully whisk in the heavy cream. The mixture will bubble. Stir in the unsalted butter, and salt, to taste. Transfer the caramel to a dish and cool.
  • Yield: 1 1/2 cups sauce.
  • Cook's Note:
  • This recipe will last in the refrigerator for up to 2 weeks. Reheat before serving.

6 tablespoons melted unsalted butter
1/2 ripe banana
4 large egg yolks
4 tablespoons cornstarch
2 cups heavy cream, divided

  • Make crust: Heat oven to 350.
  • In a large bowl, cream the ingredients together with your hands until well mixed.
  • Press the mixture into a 9" pie plate and bake until brown, 12-15 minutes.

  • Make the filling: Put the chocolate and 1/4 cup ice cream in a microwave-safe bowl and microwave in 30-second intervals, stirring, until the mixture is almost melted; whisk until smooth. 1/3 cup Crisco shortening
2/3 cup granulated sugar
3 tablespoons peanut butter
1 egg, beaten
1/2 cup ground oats (may substitute graham cracker crumbs but oats are better)
1 cup flour
2 tablespoons butter
1/2 cup cornstarch (heaping measurement)
1 1/4 cups granulated sugar
1 pinch salt
4 cups cold milk
4 eggs, beaten

2 -3 bananas
Cool Whip, as needed
1/4 cup granulated sugar
1 tablespoon water

Steps:

  • PEANUT BUTTER CRUST:.
  • Beat shortening with sugar in a small bowl. Measure 1/8 cup of the beaten egg; you may discard the rest.
  • Add in peanut butter and blend together with an electric hand mixer.
  • Add the oats. (You may grind them in a food processor. These help to make the crust crunchier and less soggy.).
  • Preheat oven to 325 degrees before dropping onto a cookie sheet.
  • Make small balls and flatten each drop with the back of a metal spoon.
  • Bake for 12 minutes and remove to an oven-safe wire cooling rack. Turn off the oven. Return the cookies (on the cooling rack) to the oven for an additional 5 minutes.
  • Put baked cookies into a food processor and grind down to coarse crumbs. Melt butter in microwave. Mix with the crumbs in a small bowl.
  • Using your fingers, press the mixture into the bottom of a 9 or 10 inch pie plate.
  • PIE FILLING:.
  • Mix first three ingredients (corn starch, sugar, salt) in a large bowl.
  • Measure milk into a medium to large saucepan, and dissolve the dry mixture in it. Make sure NO lumps are left.
  • Turn on burner to medium heat and stir continuously. When bubbles begin to burst at the surface and mixture has thickened, stop cooking.
  • Add in butter and vanilla, stirring well.
  • Transfer half the mixture back to your mixing bowl. Combine with eggs and stir vigorously. Transfer this back to the saucepan with the rest of the pudding and combine.
  • Heat on medium to return the mixture to bubbling.
  • Slice bananas and layer half over the pie crust. Add half the pudding mixture, then the rest of the banana slices, then the rest of the pudding mixture.
  • Let cool. After about an hour, transfer to refrigerator.
  • Once the pie filling has set, top with Cool Whip.
  • CARAMEL DRIZZLE:.
  • Combine sugar and water in a very small saucepan.
  • Heat on high to boiling.
  • Keep the solution boiling the entire time and stir. When the mixture has become medium to dark brown, add the whipping cream.
  • Stir. Heat on high again to let the mixture become uniform. Let boil for at least 2 minutes.
  • Put in a plastic bag and seal. Snip the corner to create a small opening (about the size of the tip of a grain of rice).
  • Drizzle caramel over the Cool Whip atop your pie.

2 cups milk

Steps:

  • In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.

175g unsalted butter, melted, plus extra for the tin
250g digestive biscuits, crushed to a fine powder
1/2 tsp ground cinnamon
2 tbsp icing sugar
1 tbsp cocoa
1/2 tsp cinnamon
3 medium bananas, chopped
750g full-fat soft cheese
200g mascarpone
175g light brown soft sugar
2 tsp vanilla bean extract
3 eggs
2 1/2 tbsp plain flour
100g caramel
300ml double cream
2 tbsp caster sugar
2 tbsp caramel
cocoa, for dusting
large handful baked banana chips (optional)

Steps:

  • Butter and line the base and sides of a 23cm square loose-bottomed cake tin. Put the biscuit crumbs in a bowl with the butter, cinnamon and a small pinch of salt, and mix until it resembles wet sand. Tip into the base of the tin, then level off and press the mixture down using the back of a spoon to compact it. Put in the fridge while you make the filling.
  • Heat the oven to 120C/100C fan/gas 1. Mix the icing sugar, cocoa and cinnamon in a bowl, then stir in the banana to coat. Set aside.
  • To make the creamy filling, put the soft cheese, mascarpone, sugar, vanilla extract, eggs and flour in a bowl. Beat using an electric whisk until smooth, about 3-4 mins. Gently fold in the banana mixture.
  • Take the base out of the fridge and pour over the filling. Level off the top using the back of a spoon, then drizzle the 100g caramel on top.
  • Bake in the oven for 1 hr with a tray placed underneath the tin to catch any drips of butter. Turn the oven off and leave the door ajar, using a spoon or spatula to prop it open. Leave inside until the oven is completely cool. Remove from the oven, then transfer to the fridge to chill overnight.
  • When ready to serve, make the sweet cream topping. Beat the cream and sugar in a bowl until it forms soft peaks. Remove the cheesecake from the tin and spread the cream over the top, drizzle with the 2 tbsp caramel, dust with cocoa and scatter with the banana chips, if using. Cut into nine pieces or 16 bite-sized squares to serve.

¼ cup KRAFT Caramel Topping

Steps:

  • Arrange banana slices on bottom of crust.
  • Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Gently stir in 1 cup of the whipped topping; spoon into crust.
  • Refrigerate 4 hours or until set. Top with remaining 1 cup whipped topping just before serving. Drizzle with caramel topping. Store leftover pie in refrigerator.

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1/2 cup caramel ice cream topping, divided
1 ready-to-use graham cracker crumb crust (6 oz.)
1/2 cup pecan pieces
2 bananas, sliced

Steps:

  • Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Stir in 2 cups whipped topping with whisk; set aside.
  • Spread 1/4 cup caramel topping onto bottom of crust; top with layers of 1/4 cup pecans, bananas and cream cheese mixture. Cover with remaining whipped topping and pecans.
  • Refrigerate 2 hours. Drizzle with remaining caramel topping just before serving.

This pie is *SO* good and so easy to make, and to make it even more simple purchase a ready-made vanilla wafer crust, or a graham cracker crust, or just make your own. I always make two of these as I end up by eating almost one myself, it is THAT good!

4 ripe bananas, sliced (make certain the bananas are ripe and yellow, not black)
1 prepared vanilla wafer pie crusts or 1 graham cracker crust
1/3 cup caramel ice cream topping (or to taste, I used Smuckers for this)
1 1/2 cups whipping cream (unwhipped)
3 -4 tablespoons powdered sugar (or use granulated sugar)
1 1/2 teaspoons vanilla
1 cup chopped Skor candy bar (or 3 regular-size Skor chocolate bars, or use Skor baking bits)

Steps:

  • Layer the banana slices evenly over the bottom of the prepared crust.
  • Drizzle the caramel topping over the bananas.
  • Beat the whipping cream with sugar and vanilla until very stiff.
  • Spread over the banana slices, swirling to make a decorative pattern.
  • Sprinkle the chopped Skor pieces on top or around the edges of the whipping cream.
  • Chill for a minimum of 1 hour before serving.
  • Delicious!
