BUTTERNUT SQUASH, BANANA AND CINNAMON

- Preheat the oven to 425 degrees and line a baking sheet with unbleached parchment paper.
- Cut the butternut squash in half lengthwise, scoop out and discard the stringy fibers and seeds.
- Place the squash cut side down on the baking sheet and put the baking sheet into the oven on the center rack.
- Roast for about 45 minutes until the squash is cooked all the way through and is easily pierced with a fork.
- Remove baking sheet from the oven and let cool for 5 minutes. Then peel the skin from the squash and discard. You can just peel it off with your hands, it'll come right off.
- Put the squash into a large mixing bowl with the bananas and cinnamon. Blend until smooth using your Sage Baby Puree & Blend immersion blender.
- Serve or store.
BANANA COCONUT CREAM POPSICLES
Steps:
- Divide the chocolate chips between 10 popsicle molds, about a teaspoon each.
- In a blender, puree the frozen bananas, coconut cream, vanilla and cinnamon until smooth and thick. Pour into the molds. Tap the molds firmly against the counter a few times to get rid of any air bubbles and to let the banana mixture settle around the chocolate chips.
- Insert popsicle sticks and freeze until solid, about 8 hours, or overnight. Run the molds under warm water to remove the popsicles, and store them in the freezer in an air-tight container.

Steps:
- Combine the chocolate and nuts.
- Chop well to make a finely chopped mixture.
- Peel the bananas and cut them in half. Push a popsicle stick into the center through the wider (cut) end of the banana halves.
- Roll the bananas in the chopped mixture. You will have to press the mixture into the bananas as well. Rolling alone won't get it to stick very well.
- Place on a parchment-lined cookie sheet and freeze for at least 2 hours. Overnight is better.
- Note: If you want to be fancy, melt some chocolate and dip the bananas in that. THEN roll them in the nuts.

I came up with this morning when I discovered I had two ripe bananas left on the counter. These are very tasty and with the warm weather coming this is a very satisfying and refreshing treat. I used organic bananas in this, they just taste better! I used a small popcicle maker for this. Each popcicle holds 1/4 cup of this mixture.

- Add the chai tea and bananas to a blender or food processor and process until completely smooth. Taste and add stevia or honey if desired (the sweetness of the banana is enough for me).
- Spoon the banana mixture into popsicle molds, making sure not to fill the molds over the "fill" line, since liquid expands as it freezes. (My molds are 2 1/2 oz/75 ml and I got exactly 7 popsicles.) Gently tap the mold a couple times on a hard surface to help any air bubbles escape, then insert the sticks.
- Transfer to the freezer and freeze completely, about 3 to 4 hours, depending on the size of your popsicles and how cold your freezer is. To easily unmold the popsicles, dip the plastic bottoms in warm water and they should slide right out.
- Once unmolded, wrap each popsicle individually in plastic wrap and store in the freezer.
