CHEESY TOFU STRIPS - ITALIAN STYLE
Baked, breaded tofu topped with spaghetti sauce and cheese! What a great way to get kids to try tofu. We eat tofu regularly so I'm always on the lookout for new ways to prepare it. This recipe was published in the Toronto Star who attributes it to the Hamilton Spectator.

TOFU TACOS - THE BEST VEGAN TACO!

Steps:
- In a large bowl, combine oil, soy sauce, and spices. Form a fairly runny paste. If required, add a little bit more oil.
- Using your hands, crumble up the super firm tofu into small pieces. Make sure no major sized bits are left remaining. It's okay if the crumbles differ in size - they will crisp up differently and provide a great variety of texture.
- Add the crumbled tofu into the bowl with the seasoning paste. Combine well, making sure that all the tofu pieces are coated evenly.
- Lay all the tofu pieces on a covered baking sheet.
- Stirring occasionally, bake at around 355°F for 25-35 min, or until all of the tofu is nice and crispy. Some pieces will be darker than others, and that's perfectly fine - just make sure not to burn them.
- Finish the tofu with a sprinkle of nutritional yeast, if desired, for an extra cheesy note and B-vitamins!
- Heat up the salsa in a saucepan until it's hot all the way through and reaches a nice, thick consistency. If desired, this is where you add your black beans for the final minute or two of cooking.
- Mix your tofu with your salsa mixture. Salt and pepper to taste.
- Fill your tortillas with the tofu mixture. Add veggies, if desired. Serve and enjoy!

CHEESY VEGETARIAN TOFU ENCHILADAS RECIPE
Steps:
- Preheat the oven to 350F (180C). Slice the pressed/drained tofu into (about) 1" (2.5cm) cubes and place on a parchment or silpat lined sheet pan. Bake for 20 minutes until lightly golden. This will dry the tofu out. Set aside.Turn the oven heat up to 400F (204C).
- You'll need two baking pans or casseroles for this recipe, one large 13"x9" (33x22cm) and a smaller one (6"x4"/ 15x10cm) or two 8x8 (20x20cm) pans. Lightly grease the baking pans with pan spray and lightly coat the bottom of each pan with a bit of enchilada sauce - about 2-4 Tbs each. Tip the baking pans until the the bottom is covered in a thin layer of sauce. Set aside.
- In a medium saute pan add the oil and heat until it shimmers. Add the onion and bell pepper. Still on medium high heat, saute the pepper mixture for about 7-8 minutes giving the veggies time to char and soften a bit. Remove from heat.
- In the work bowl of a food processor, with the S blade attachment in place, add the tofu, tomato paste, cumin, chili powder, chipotle peppers, salt, water and lime juice. Pulse the mixture 3-4 times and scrape down the side of the bowl. Pulse 1-2 more times. The mixture should be in small to medium chunky bits.
- Transfer the filling to the pan with the peppers and add 1/4 C (59g) of enchilada sauce. Stir to mix. No need to reheat. Set aside.
- If using corn tortillas, wrap in foil and pop them in the oven for about 4-5 minutes, just to steam/soften. Or, heat the corn tortillas directly on the stove top on an open flame, about 10-15 seconds per side. Set in foil and cover after each tortilla is added. If using flour or a mixture of flour/corn or flour tortillas, there's no need to warm the tortillas. Place one tortilla on a work surface and spoon in about 3-4 Tbs of filling then top with about the same amount of cheese. Gently roll the tortilla and place seam side down in the pan. Repeat this process until all the enchiladas are made. If you have any leftover filling, spoon it along the edges of the assembled tortillas. Pour the enchilada sauce evenly over the tortillas, and use a spoon to make sure all the exposed tortillas are covered in the sauce (even if it's a thin layer - that's okay). Be sure to get the areas in between the enchiladas too! Sprinkle the remaining cheese over the top.
- Cover the pans with foil and bake at 400F for about 20-25 minutes or until bubbly and warmed through. Remove from oven and let set for five minutes before sharing. Serve (optional) with salsa, cilantro, pepita crema, sour cream, jalapeños, avocado slices and/or black olives.
- For leftovers, transfer the enchiladas to a covered container to store up to three days in the refrigerator. To reheat refrigerated enchiladas, preheat oven to 400F cover with foil and bake for about 20-25 minutes or until heated through.

Steps:
- Press water out of tofu: Wrap tofu in a clean kitchen towel and place between two cutting boards. Place a heavy object, such as a 28-ounce can of tomatoes or beans, on top. Let rest 20 minutes, allowing the weight to press out extra moisture in the tofu. Unwrap tofu and pat dry. In a large mixing bowl, crumble tofu with your hands. Then mix in remaining ingredients plus salt and pepper to taste.

Yield 24 stuffed mushrooms

Steps:
- Preheat the oven to 425 degrees F.
- If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
- Heat the butter in a large skillet over medium-high heat. Add the chopped mushroom stems and carrot and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and set aside to cool.
- Add the tofu, pepper jack cheese, Parmesan and parsley to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
- Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

- First, preheat the oven to 425F. Drain the liquid from the Tofu and “press” the extra liquid out by wrapping it in a clean dish towel, or by using a Tofu press. Try to get it as dry as possible!
- Cut the Tofu into even cubes. I like to cut the block in half lengthwise, then cut each rectangle into 16 even cubes. (Note: I like to lightly press the cubes with the dish towel if I have extra time/patience)
- Add the cubed Tofu to a large bowl, then use a spatula to gently toss it with the Tamari, until evenly coated. Add the Nutritional Yeast, then gently mix until coated. Add more Nutritional Yeast or extra seasonings to taste, if desired.
- Transfer the cubes to a baking sheet lined with a silicone mat, leaving space between the cubes. Bake on the top rack of the oven for 20 minutes, then carefully flip the cubes. Bake for another 20-30 minutes, depending on how crispy you like your tofu. The Tofu will also get slightly crispier as it cools.

- Remove tofu block from package, drain off any excess water and pat slightly with paper towels so it's not sopping wet. Hold the block of tofu in one hand and use your other hand to crumble it right into the skillet.
- Once all of the tofu is in the skillet, stir in the tamari. After the tamari is mixed in, add the black salt and turmeric. Stir to combine until fully incorporated. You will notice the color of the tofu changing to yellow as you mix. Once the black salt and turmeric are mixed in well, add the nutritional yeast. Stir until well combined.
- Continue to cook over medium-high to high heat, stirring frequently to prevent sticking, until most or all of the moisture has dissipated. Season with sea salt or kosher salt and freshly ground black pepper to taste, if desired.

- TO MAKE THE PASTA DOUGH: IN AN ELECTRIC MIXER FITTED WITH A DOUGH HOOK*, COMBINE THE FLOUR AND SALT. ADD THE EGGS, 1 AT A TIME, AND CONTINUE TO MIX. DRIZZLE IN 1 TABLESPOONS OF THE OLIVE OIL AND CONTINUE TO INCORPORATE ALL THE FLOUR UNTIL IT FORMS A BALL. SPRINKLE SOME FLOUR ON WORK SURFACE, KNEAD AND FOLD THE DOUGH UNTIL ELASTIC AND SMOOTH, THIS SHOULD TAKE ABOUT 10 MINUTES. BRUSH THE SURFACE WITH THE REMAINING OLIVE OIL AND WRAP THE DOUGH IN PLASTIC WRAP; LET REST FOR ABOUT 30 MINUTES TO ALLOW THE GLUTEN TO RELAX.
- *ALTERNATIVELY IF YOU DON’T HAVE AN ELECTRIC MIXER: COMBINE THE FLOUR AND SALT ON A FLAT WORK SURFACE; SHAPE INTO A MOUND AND MAKE A WELL IN THE CENTER. ADD THE EGGS AND 1 TABLESPOON OF THE OLIVE OIL TO THE WELL AND LIGHTLY BEAT WITH A FORK. GRADUALLY DRAW IN THE FLOUR FROM THE INSIDE WALL OF THE WELL IN A CIRCULAR MOTION. USE 1 HAND FOR MIXING AND THE OTHER TO PROTECT THE OUTER WALL. CONTINUE TO INCORPORATE ALL THE FLOUR UNTIL IT FORMS A BALL. CONTINUE AS DIRECTED ABOVE.
- CUT THE BALL OF DOUGH IN 1/2, COVER AND RESERVE THE PIECE YOU ARE NOT IMMEDIATELY USING TO PREVENT IT FROM DRYING OUT. DUST THE COUNTER AND DOUGH WITH A LITTLE FLOUR. PRESS THE DOUGH INTO A RECTANGLE AND ROLL IT THROUGH A PASTA MACHINE, 2 OR 3 TIMES, AT WIDEST SETTING. PULL AND STRETCH THE SHEET OF DOUGH WITH THE PALM OF YOUR HAND AS IT EMERGES FROM THE ROLLERS. REDUCE THE SETTING AND CRANK THE DOUGH THROUGH AGAIN, 2 OR 3 TIMES. CONTINUE TIGHTENING UNTIL THE MACHINE IS AT THE NARROWEST SETTING; THE DOUGH SHOULD BE PAPER-THIN, ABOUT 1/8-INCH THICK (YOU SHOULD BE ABLE TO SEE YOUR HAND THROUGH IT.). DUST THE SHEETS OF DOUGH WITH FLOUR AS NEEDED.

- Pan-Fried Sesame Garlic Tofu. To pan-fry tofu until it’s crispy, you’ll need firm tofu. Not only that, but you’ll also need to press it. Tofu is usually full of excess moisture, and if you don’t get rid of that, the dish will wind up mushy and gross.
- Honey Sriracha Tofu. Since this dish calls for honey, it’s not 100% vegan. If you want it to be, just swap the honey for agave or brown sugar. Though you could leave it out, I find Sriracha can be overwhelming after a few bites.
- Tofu Stir-Fry with Vegetables in a Soy Sesame Sauce. Since tofu is so often cooked as part of a stir-fry, pressing it is vital. If you leave any excess moisture in the block, everything will steam instead of fry, and you won’t get a nice crispy finish.
- Crispy Tofu Without Deep-Frying. When you eat crispy tofu in a restaurant, more often than not, it’s been deep-fried for maximum texture. If you don’t have a deep fryer or don’t want the added calories, try lightly frying in a non-stick pan instead.
- Crispy Air Fried Tofu. Want something even healthier? How about crispy tofu made with minimal oil right in the air fryer? Air fryers work by rushing hot air around food through convection heat.
- General Tso’s Tofu. I’m sure that General Tso’s is something we’ve all had, and it’s a big favorite in my house. I usually have it with battered, crispy chicken when I feel like something naughty.
- Sweet and Sour Tofu. Sweet and sour is one of those dishes that you can easily serve to a family or crowd. Kids and grown-ups alike love it, and it’s easier than you think to recreate at home.
- Asian Garlic Tofu. Hoisin sauce is like Asian BBQ, and by that, I mean you can put it on anything, and it will taste amazing. It’s deeply flavorful and rich, not to mention excellent with everything from chicken and tofu to beef and pork.
- Easy Tofu Tacos. I’ve talked a lot about pressing excess mixture out of tofu, so it holds its shape. But did you know you can crumble it too? When you crumble it and cook with the right spices, it tastes just like ground beef tacos.
- Teriyaki Tofu. This recipe is all about the sauce. Start by cooking the tofu until crispy, then remove it from the pan and set it aside. Next, cook the ginger for a minute or so before adding the onions.

- Press the tofu between two clean tea towels (or two double sheets of kitchen paper), to remove any excess liquid, then place in a food processor. Add the bread and fresh basil, along with a good pinch of salt and pepper, and blitz until finely chopped.
- Remove the blades from the food processor (important to make sure you don't cut yourself!), then use clean hands to shape the mixture into meatballs. The exact number you can make depends on how large you make them - I made 18. Place the meatballs on a lined and greased baking tray, and bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until firm and golden brown.
