GROUND BEEF CHILI WITH BEANS
A delicious mix of ground beef, chorizo, beans, and vegetables in a hearty tomato base. I entered it in a chili cook-off and it won!

Steps:
- Pour tomatoes into a large stockpot over medium heat.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
- Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
- Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. Transfer onions to the stockpot with lime juice, salt, and black pepper. Stir black beans, pinto beans, and kidney beans into the pot.
- Heat the skillet over medium-high heat and lightly saute bell peppers, about 5 minutes. Add to the stockpot.
- Add corn to the stockpot and season with additional salt and pepper. Add hot sauce to taste and simmer for 30 minutes more. Sprinkle cilantro on top and serve.

- Heat a large pot over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir pinto beans, kidney beans, onion, chili powder, and Parmesan cheese with the beef; season with salt and pepper. Pour enough tomato juice into the pot to cover the mixture by 1 inch.
- Bring the mixture to a simmer and cook until the beans are heated through, about 10 minutes. Serve with crackers and pickle juice.

JERSEY GIRL CHILI WITH BEANS
I live in Texas, where folks take pride in their chili, but I'm from NJ and Chili is not a regional dish there, so my earliest influences of chili were from eating it at the fast food restaurant, Wendy's. Now, authentic Chili, according to Texas definition is Peppers and Meat simmered in some type of moisture with spices. There are no tomatoes or onions ... or BEANS in real Texas Chili. The reasoning behind this is that true Texas Cowboys of the past likely had no access to tomatoes or onions, but of course, they had access to meat, and to peppers. I sure love true Texas Chili, but I don't try to kid myself into thinking I can make it, cause I cant! The chili I make now is similar in style to the Wendy's chili, with beans and peppers, tomatoes and onions, but I give it a kick with fresh hot peppers from our garden! I began making chili when we still lived in NJ with a recipe from a can, but have since tweaked it to make it my own. We eat it over rice with cheddar cheese on top.

- fry meat until browned, add onions, garlic and peppers. cook for about 3 minutes then add spices and tomato sauce.
- transfer to crock pot, add canned beans and simmer for 3 hours.
- Remove whole chili peppers.Serve over rice with shredded cheddar cheese.
TEXAS CHILI WITH BEANS
Very spicy and tasty chili for those cold days. It will make hot days a lot hotter. Serve with tortillas or great over hamburger patties with fresh diced onion, cheese and oyster crackers. If you don't like it hot, don't add the jalapeno and serrano peppers.

Steps:
- Heat water to a boil, cover and cook beans for 10 minutes.
- remove from burner and let kettle sit for 1-2 hours.
- Add water if needed to cover beans, add beef stock.
- Cook on low.
- In a skillet, heat oil, add meat, peppers, garlic and onion.
- Cook until meat is brown.
- Do not drain.
- Add all skillet ingredients, spices add other ingredients to the beans.
- Simmer covered till beans are soft, stirring occasionally.
- Add more seasoning to your liking and water if necessary (I like alot of liquid).
- Cook time approximately 3 hours.
