COCONUT MANGO BREAD PUDDING WITH RUM SAUCE

4 large eggs, room temperature, beaten
1 can (13.66 ounces) coconut milk
1/3 cup packed brown sugar
1 teaspoon rum extract
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
4 cups torn French bread
1/3 cup chopped dried mangoes
1/4 cup unsweetened coconut flakes, toasted
Sauce:
1/4 cup butter
1/2 cup packed brown sugar
2 tablespoons water
1 large egg yolk, room temperature, beaten
1/2 teaspoon rum extract
Toasted unsweetened coconut flakes, optional

Steps:

  • In a large bowl, whisk the first 6 ingredients until blended. Gently stir in bread, mango and coconut flakes. Transfer to a greased 3-quart slow cooker. Cook, covered, on low until puffed and edges are dark golden, about 3 hours., In a small heavy saucepan, heat butter and brown sugar over medium-low heat until blended. Whisk in water and yolk. Cook and stir until mixture is slightly thickened and a thermometer reads 175°, about 10 minutes. Do not allow to boil. Immediately transfer to a bowl; stir in rum extract. Serve warm bread pudding with rum sauce. If desired, top with additional coconut.

2 cups whole milk
1/2 cup heavy cream
1/3 cup sugar
2 teaspoons vanilla extract
2 teaspoons ground cardamom
1 teaspoon ground ginger
3 large eggs
2 large mangoes, pitted, peeled, and cut into 1/2-inch cubes or 2 large two 10-ounce bags frozen mangoes, thawed
6 slices country bread, cut into 1/2-inch cubes (about 6 cups)
whipped cream or vanilla ice cream, for serving

Steps:

  • 1. Preheat the oven to 350 degrees F. Butter a 9-by-11-inch ceramic baking dish.
  • 2. In a medium saucepan combine the butter, milk, cream, sugar, vanilla, cardamom, and ginger and simmer over low heat, stirring occasionally, until the butter melts and the milk is hot. Remove from the heat and set aside to cool slightly for about 4 to 5 minutes.
  • 3. In a small bowl, whisk the eggs and then whisk them steadily into the milk mixture. Continue whisking until blended.
  • 4. Combine the mangoes and bread in a large bowl and mix well. Transfer to the baking dish and pour the milk mixture evenly over the top. Make sure all of the bread pieces are soaked with the mixture, and let sit for 5 minutes.
  • 5. Bake for 45 to 50 minutes, until bubbly and brown. Serve warm but not hot, with whipped cream or vanilla ice cream.

6 slices white bread, torn into small pieces
2 mangos - peeled, seeded and diced
¼ cup white sugar
3 eggs, lightly beaten
2 cups milk
1 ½ teaspoons vanilla extract
1 ½ teaspoons ground cardamom
2 tablespoons butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x11 inch baking dish.
  • Toss together the pieces of bread and mango, and place in the prepared baking dish. In a medium bowl, whisk together the sugar, eggs, milk, vanilla and cardamom. Pour over the bread. Dot with small pieces of butter.
  • Bake for 45 to 50 minutes in the preheated oven, or until slightly puffed and golden brown.

I got this recipe from a diabetic cooking cookbook a few weeks ago. I made it last weekend for me and my dad and it was much better than I thought it would be. My kids even liked it.

1 large ripe mango, about 12 ounces
2 cups French bread, cubed into 1 inch cubes
10 ounces evaporated skim milk
1/3 cup liquid egg substitute
1/4 cup Splenda granular (sugar substitute)
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/4 teaspoon ground allspice
1 tablespoon granulated sugar
1/2 tablespoon reduced-calorie margarine

Steps:

  • Preheat oven to 375°F
  • Working over a bowl to catch any juices, peel and pit mango.
  • Chop mango flesh.
  • In a shallow 1-quart casserole dish, toss together bread cubes and mango pieces.
  • In a saucepan, bring evaporated skim milk to a boil and remove pan from heat.
  • In a medium bowl, whisk together egg substitute, sugar substitute, vanilla extract, ground cinnamon, ground ginger, ground allspice, and any juice generated by cutting up the mango.
  • In a steady stream, whisk in hot milk.
  • Pour mixture over the bread cubes.
  • Let stand for 5 minutes until liquid is absorbed.
  • (Recipe may be made ahead up to this point, covered, and refrigerated.)
  • Sprinkle top of pudding with granulated sugar and dot with margarine.
  • Bake until set and top is crisp and golden brown, about 30 to 35 minutes.
  • Serve warm.

I have never been a huge fan of bread pudding, but for some reason this bread pudding takes the cake, no pun intended. It combines just the right elements of sweet, tart, creamy, and crispy. Everyone who tries it becomes a fan.

Number Of Ingredients 11

4 tablespoons salted butter
2 cups whole milk
1/2 cup heavy cream
1/3 cup sugar
2 teaspoons vanilla extract
2 teaspoons ground cardamom

1 cup butter, softened
1/8 cup butter, cut up
3 cups mangoes, cut up
3 egg yolks

Steps:

  • ***I use 3 cups of cut up frozen mangoes from Trader Joes, defrost them in the microwave, and dice them.***.
  • Preheat Oven at 350* Grease square baking pan.
  • Combine Flour, Baking Soda, Baking Powder, Salt and Ginger. Add 1 c butter, mango & egg yolks & whip well.
  • Pour batter into pan and bake for 35-40 minutes. 5 minutes before done -- cut up 1/8 butter and place evenly over the top for a buttery crust. Done when you poke a knife in the middle and it comes out clean.

2 c skim milk
4 Tbsp margarine, cut into pieces
1 egg
2 egg whites
5 tsp splenda
1 1/2 tsp ground cinnamon
1/8 tsp ground cloves
3 dash(es) ground mace (optional)
1/4 tsp salt
4 c cubed, day-old french or italian bread cut into 3/4" cubes.

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Heat milk and margarine to simmering in medium saucepan; remove from heat and stir until margarine is melted. Cool 10 minutes.
  • 3. Beat egg and egg whites in large bowl until foamy; mix in Splenda, spices and salt. Mix milk mixture into egg mixture; mix in bread.
  • 4. Spoon mixture into ungreased 1 1/2 quart casserole dish. Place casserole in roasting pan on over rack; add 1 inch hot water. Bake, uncovered until pudding is set and sharp knife inserted halfway between center and edge comes out clean, 40 to 45 minutes.

2 medium apples (300g)
2 tablespoons brown sugar
1 tablespoon water
2 1/2 cups nonfat milk (625ml)
1 vanilla bean (halved lengthways)
4 slices fruit bread (thick sliced)
3 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 160 degree celsius (140 degrees for fan forced).
  • Grease deep 1.5 litre (6 cup ovenproof dish).
  • Peel, core and quarter apples, cut each quarter into 3mm slices.
  • Dissolve brown sugar in the water in medium frying pan over low heat, add apples; simmer, uncovered, about 5 minutes or until tender, stirring occasionally.
  • Combine milk and vanilla bean in medium saucepan; bring to a boil.
  • Remove from heat; stand, covered, 5 minutes.
  • Discard vanilla bean.
  • Meanwhile (while milk stands) cut bread slices into quarters.
  • Arrange bread and apple in alternate layers (finishing with bread) in dish.
  • Whisk eggs, cinnamon and nutmeg in medium bowl.
  • Gradually whisk hot milk mixture into egg mixture.
  • Pour egg mixture carefully over bread and apple.
  • Place dish in a large baking dish; add enough boiling water to baking dish to come halfway up side of pudding dish.
  • Bake uncovered about 1 hour or until set.
  • Serve with low fat ice cream or cream, if desired.
