CHICKEN MARINARA

This is a different meat dish to serve with pasta. I usually serve it with bow-tie pasta or rigatoni. It can also be served with fettuccini or spaghetti. A crisp salad and some crusty bread and you have a great meal.

DUMP-AND-BAKE ITALIAN CHICKEN AND RICE

Dump-and-Bake Italian Chicken and Rice image

This Dump and Bake Italian Chicken and Rice is an easy and healthy dinner recipe that comes together in about 10 minutes! Just stir together the raw ingredients and pop it in the oven!

Provided by Blair Lonergan

Categories     Dinner

Time 50m

Number Of Ingredients 9

2 cups marinara (or tomato basil) sauce
1 (14.5 ounce) can diced tomatoes with basil, garlic and oregano (NOT drained)
1 cup uncooked long grain white rice
1 ½ lbs. skinless, boneless chicken breast or chicken tenderloins, diced into bite sized pieces
1 teaspoon Italian seasoning
½ teaspoon salt
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Stir marinara sauce, tomatoes (in their juice), and uncooked rice together in the prepared dish (or in a separate bowl).
  • In a small bowl, combine diced, uncooked chicken with Italian seasoning and salt.
  • Add seasoned chicken to the rice mixture and stir to completely combine. Transfer to prepared baking dish.
  • Cover tightly with foil or with a lid.
  • Bake for 35 minutes, remove the cover, and give the dish a good stir. At this point the chicken should be cooked through and the rice should be just about tender (but still slightly al dente). If the rice is too hard, cover the dish and return to the oven for 5-10 more minutes, or until it's ready.
  • Once the rice is just about tender, sprinkle mozzarella and Parmesan cheeses over top. Return dish to the oven, uncovered, for about 5 more minutes, or just until cheese is melted and rice is completely done.
  • Garnish with parsley before serving.

  • Add all other spices and tomatoes. Simmer for at least 15 minutes-cook pasta during the simmering time.
  • Serve over cooked pasta or in other dishes.

CRISPY ITALIAN CHICKEN BREAST WITH TOMATO SAUCE AND MOZZARELLA RECIPE (SIP BITE GO)

Crispy Italian Chicken Breast with Tomato Sauce and Mozzarella Recipe (Sip Bite Go) image

My version of crispy Italian chicken breast is seasoned with Italian herbs, Argo® Corn Starch, and flour. Once coated, the chicken is pan fried for a few minutes on each side. It's delicious served with a simple, but impressive marinara sauce made from crushed tomatoes (which I'll teach you how to make). To finish it off, the crispy fried chicken is broiled in the oven for a few minutes with marinara sauce and fresh mozzarella. Then topped with fragrant basil.

Provided by Jenna Passaro

Categories     Dinner     Main Course     Main Dish

Time 1h20m

Number Of Ingredients 20

28 ounces tomatoes (crushed)
1 tbsp garlic (diced)
1 medium yellow onion (diced)
2 tbsp olive oil
1/2 tsp oregano (dried)
1/2 tsp parsley (dried)
1/4 tsp red pepper flakes
1 bay leaf (optional)
salt and pepper to taste
1 tbsp fresh basil (chopped (optional))
1.5 lb chicken (breast, pounded 1/2" thin)
1 tsp oregano (dried)
1 tsp parsley (dried)
1/4 cup flour (all purpose)
1/4 cup Argo® Corn Starch
salt and pepper (to taste)
1 tbsp oil
1 tbsp butter
1/2 lb mozzarella (log cut in 1/2" discs)
1 tbsp fresh basil (optional)

Steps:

  • Make the garlic tomato sauce. In a deep saucepan on medium heat, combine the crushed tomatoes, garlic, onion, oil, oregano, parsley and red pepper flakes. Stir together. Once the sauce begins to boil, turn down to medium-low. Occasionally stir every few minutes while the sauce simmers for 30 minutes. Once it's done, turn off the heat and cover with a lid until the chicken is done. Remove bay leaf. Add fresh basil if desired.
  • Prepare the chicken. First, mix together oregano, parsley, flour, and corn starch, salt and pepper in a shallow bowl or plate. Coat both sides of the chicken with the mixture.
  • Heat a large pan on medium-high. Add oil and butter to the pan. Once butter melts, add chicken. Brown each side for 5-7 minutes, until golden brown. Note: do not flip the chicken until the side touching the pan is golden brown. Once each flat side is golden brown, use tongs to hold the chicken while searing the edges for a few seconds. Once the outside is golden brown and the internal temperature of the chicken is cooked (use a thermometer if you're not sure), turn off the heat. Set the oven broiler on high.
  • Transfer chicken to a baking sheet with parchment paper. Add sauce and mozzarella. Broil on high for 2-5 minutes, checking regularly until cheese melts. Keep an eye on the chicken and parchment paper so it doesn't burn. Top with fresh basil leaves. Serve over pasta or with your favorite side.

  • I made this Chicken Marinara recipe after thinking about ways I could put a spin on a more traditional chicken parmesan…and I think you’ll notice that it is indeed very similar. Here, I skip the process of breading, and frying up the chicken, which saves a lot of time and effort. But, I still use a combination of a great marinara sauce, some mozzarella cheese, and a good hot over that combines the flavors into a wonderful combo. I’ve made this somewhat “casserole” style in an oven proof frying pan, but you can easily do this in any baking dish. Enjoy! Recipe Overview and Keys to Success To make the best Chicken Breast Marinara just make sure to the following
  • Most important is to make sure you don’t try out the chicken breasts. I cook mine separately on the stove top and make sure to just barely cook them through - even slightly under is ok - as we’re going to cook them again Use a good marinara. If you buying jarred sauce, make sure it’s a good one. Better yet, make you’re own! And use a good amount of sauce. I like to use a lot, ensuring all the chicken is well covered. Set your oven nice and hot. You want about 450 degrees to ensure the cheese melts and browns quickly; and the chicken doesn’t over cook
  • 2 boneless skinless chicken breasts 1 lb shredded mozzeralla cheese 2 cups marinara sauce Fresh basil leaves Olive oil Salt and pepper
