- CHICKEN BREASTS:.
- In a medium bowl, combine mozzarella cheese, 2 cups of the flour, parsley flakes, Parmesan cheese, and dressing mix.
- Whisk together milk and eggs in a shallow bowl until well blended.
- Place remaining cup of flour in another shallow bowl.
- Coat the chicken with flour and shake off the excess.
- Dip the chicken into the egg mixture and then into the cheese mixture.
- Coat the chicken evenly with the cheese mixture and press it into the chicken.
- Heat about 1/8 inch vegetable oil in a large skillet over medium heat.
- Add the chicken and cook for 5-6 minutes on each side or until cooked through.
- MARINARA SAUCE:.
- Heat oil in a large saucepan or a dutch oven over medium heat.
- Add chopped onion, garlic& bell pepper and saute' for 3 minutes stirring constantly to prevent it from burning.
- Add tomatoes, tomato sauce, rosemary, oregano, salt and pepper.
- Bring to a boil.
- Reduce the heat and simmer for 1 hour.
- To serve, put cooked pasta in a large pasta bowl or platter.
- Pour some of the marinara sauce over the top.
- Lay the chicken breasts on top and pour the remainder of the marinara sauce over all.

- Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
- Stir marinara sauce, tomatoes (in their juice), and uncooked rice together in the prepared dish (or in a separate bowl).
- In a small bowl, combine diced, uncooked chicken with Italian seasoning and salt.
- Add seasoned chicken to the rice mixture and stir to completely combine. Transfer to prepared baking dish.
- Cover tightly with foil or with a lid.
- Bake for 35 minutes, remove the cover, and give the dish a good stir. At this point the chicken should be cooked through and the rice should be just about tender (but still slightly al dente). If the rice is too hard, cover the dish and return to the oven for 5-10 more minutes, or until it's ready.
- Once the rice is just about tender, sprinkle mozzarella and Parmesan cheeses over top. Return dish to the oven, uncovered, for about 5 more minutes, or just until cheese is melted and rice is completely done.
- Garnish with parsley before serving.

- Preheat oven to 375 degrees F.
- To make the marinara sauce, heat a 1 quart sized pot over medium heat. Add 2 tablespoons of the olive oil, onion and garlic. Saute the vegetables for 2 to 3 minutes.
- Add the crushed tomatoes and 1 teaspoon of the Italian herb blend. Stir to combine.
- Turn the heat to low and simmer the sauce for 10 minutes.
- Stir in the cherry tomatoes and season to taste with salt and pepper. Set the marinara sauce aside.
- To assemble the baked chicken, in a 9 x 13 inch ceramic baking dish add the remaining 2 tablespoons of olive oil.
- Add the chicken breasts to the dish placing about an inch or so apart.
- Sprinkle the chicken with the remaining Italian herb blend, season with salt and pepper and a few shakes of red pepper flakes.
- Top the chicken with the marinara sauce making sure the chicken is covered.
- Place the slices of fresh mozzarella on top of the chicken.
- Bake uncovered for 30 minutes. Turn the oven up to 425 degrees F and bake for an additional 5 to 10 minutes or until the internal temperature of the chicken is 165 degrees F.
- Remove the chicken from the oven and top with the freshly shredded Parmesan and a sprinkling of parsley and basil. Serve.

- Trim chicken breast of any fat. Cut into slices across the grain of the meat about 3/8 inch thick, then cut again the other way to make more bit size pieces
- Shred onion with the large side of a shredder. You can also chop the onion instead-but simmer a bit longer.

- Preheat the oven to 350° and allow to come to temperature. Place a large skillet over medium-high heat. Have ready a 9x13" casserole dish.
- Pat the chicken dry with a paper towel, and drizzle with 1 tablespoon of oil. Sprinkle over 1 tablespoon of seasoning, and rub to adhere.
- Add 2 tablespoons of oil to the heated pan, and allow to come to temperature. Add the chicken and sear for 3- 4 minutes, just until golden-brown. Flip the chicken and sear for 2-3 minutes more. Transfer to a plate and set aside.

- Transfer to the oven and bake for 25-27 minutes, or until the chicken breasts are cooked through. Serve and enjoy.

- Make the garlic tomato sauce. In a deep saucepan on medium heat, combine the crushed tomatoes, garlic, onion, oil, oregano, parsley and red pepper flakes. Stir together. Once the sauce begins to boil, turn down to medium-low. Occasionally stir every few minutes while the sauce simmers for 30 minutes. Once it's done, turn off the heat and cover with a lid until the chicken is done. Remove bay leaf. Add fresh basil if desired.
- Prepare the chicken. First, mix together oregano, parsley, flour, and corn starch, salt and pepper in a shallow bowl or plate. Coat both sides of the chicken with the mixture.
- Heat a large pan on medium-high. Add oil and butter to the pan. Once butter melts, add chicken. Brown each side for 5-7 minutes, until golden brown. Note: do not flip the chicken until the side touching the pan is golden brown. Once each flat side is golden brown, use tongs to hold the chicken while searing the edges for a few seconds. Once the outside is golden brown and the internal temperature of the chicken is cooked (use a thermometer if you're not sure), turn off the heat. Set the oven broiler on high.
- Transfer chicken to a baking sheet with parchment paper. Add sauce and mozzarella. Broil on high for 2-5 minutes, checking regularly until cheese melts. Keep an eye on the chicken and parchment paper so it doesn't burn. Top with fresh basil leaves. Serve over pasta or with your favorite side.
